- 1. For the sauce, brown hamburger and onion in a large skillet chopping hamburger up into small pieces as it cooks. Drain off any grease.
- 2. Add the remaining ingredients and simmer for about 30 minutes uncovered. Stir often because it will stick.
- 3. Grill hot dogs and place sauce and onion (chopped onion is optional) on the hot dog in the bun. You can freeze the remaining sauce for future hot dogs.
TEXAS HOT SAUCE
This is a really good salsa/sauce that will put bottled versions to shame. My best-friend's SIL in Arlington, TX made this for a party once and I had to get the recipe. It makes alot - so it's good for a gathering - or as we use to say in TX - for a "throw-down"!

Steps:
- Heat oil, vinegar, salt and accent (first 4 ingredients) just enough to dissolve salt and accent- do not boil.
- (If it boils-- you'll have to start over) Chop remaining ingredients separately.
- I have found that it doesn't work well if you dump everything in processor at once.
- In large bowl, pour vinegar/salt mixture over salsa and mix well.
- Best if let set overnight for flavors to blend.
- Enjoy with chips, eggs, whatever you like salsa with.

Steps:
- Make the sauce: in a saucepan, melt butter over medium heat; add in onion; stir/saute onion until soft but not brown.
- Add in ground beef and spices; mix well; add enough water to just cover mixture.
- Simmer mixture over low heat, stirring occasionally until meat is cooked and sauce is thickened, about 30 minutes.
- To serve-place hot dogs in buns and top with Texas Hot Sauce, mustard, and onion; serve immediately.

RUDY'S AT THE LOOP TEXAS HOT SAUCE
This is a copykat recipe I found on another internet site. I am not a hot dog fan but with Hoffman's German Franks and this hot sauce, I actually like them. I had tried making a copy of Rudy's sauce on my own, but this recipe tastes exactly the same as the one found at Rudy's on the shore of Lake Ontario just off the Oswego college campus.

- Simmer onion and meat in a sauce pan until meat is in fine pieces.
- Drain, transfer mixture to a food processor and pulse until finely ground.
- Return meat mixture to pan, add remaining ingredients and simmer an additional 2 hours.
- I always make a double batch and freeze some. This always goes in the camper with us.

- Heat oil in skillet over medium high heat until shimmering. Add the beef and onion and cook until beef is no longer pink, about 5 minutes. Stir in tomato paste, chili powder, brown sugar and allspice, and cook until paste begins to darken about 2 minutes. Add chili sauce and water and bring to a boil. Reduce heat to medium-low and simmer until mixture is thickened. About 7 minutes. Transfer half of mixture to food processor and process until coarsely ground; return to skillet. Stir in hot sauce, Worcestershire and mustard. Serve.
