This dip/salsa is fresh, delicious and nutritious. Everyone loves it, except my SIL who has an strange bean phobia. It's one of my most requested recipes.

Steps:
- Place all ingredients in a large bowl and mix well.
- Cover and place in refrigerator to marinate for a minimum of 2 hours.
- It's best made the day before, but my DH has been know to eat a big bowl full right away.

Steps:
- Chop up all the peppers,onion and cilantro.
- Put the oil, black pepper, splenda & apple cider vinegar in a saucepan. Bring to a boil and simmer until the splenda dissolves. Cool.
- Mix together all the other ingredients and pour cooled oil over.
- Refrigerate overnight.
- Serve with tostito scoops.

Steps:
- Drain and rinse black-eyed peas. Combine in a large bowl with corn, chopped peppers, onions, and tomatoes.
- Mix chipotle pepper, water, vinegar, Tabasco, sugar, garlic, salt and pepper. Pour over salad and stir gently to coat. Refrigerate for several hours to overnight before serving.
- Serve as a dip with tortilla chips or as a salad.

Steps:
- Chop up all the peppers, onion, and jalepeno (this is where having a chopper is nice, especially since I usually make triple batches for parties)
- Put the oil, pepper, sugar, and vinegar in a saucepan. Bring to boil to dissolve and then let cool.
- Mix all the ingredients together and let sit in fridge overnight.

Steps:
- Shake the sauce ingredients in a shaker to blend. Combine all other ingredients in large bowl and pour sauce over mixture. Serve with tortilla scoops. Optional: Add garlic and cilantro to mix.
