2 cups flour
2 cups sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup shortening
1 cup water or 1 cup strongly brewed coffee
1/4 cup cocoa
1/2 cup buttermilk (or 1/2 C milk with 2 tsp lemon juice)
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup butter or 1/2 cup margarine
2 tablespoons cocoa
1/4 cup milk
3 1/2 cups powdered sugar or 3 1/2 cups icing sugar
1 teaspoon vanilla

Steps:

  • In a large mixing bowl, combine the flour and the sugar.
  • In heavy saucepan, combine butter, shortening, coffee or water and cocoa.
  • Stir and heat to boiling.
  • Pour boiling mixture over the flour and sugar in te bowl.
  • Add the buttermilk, eggs baking soda and vanilla.
  • Mix well, using a wooden spoon or high speed on an electric mixer.
  • Pour into a well buttered 17 1/2 by 11 inch jelly roll pan.
  • Bake at 400F for 20 minutes or until brownies are done in the center.
  • While brownies bake, prepare the frosting.
  • In a saucepan, combine the butter, cocoa and milk.
  • Heat to boiling, stirring constantly.
  • Remove from heat and mix in the powdered sugar and vanilla, beat until frosting is smooth.
  • Pour warm frosting over brownies as soon as you take them out of the oven.
  • Cool.
  • Cut into 48 bars.

1/2 cup butter
1/2 cup shortening
1 cup water
1/4 cup unsweetened cocoa
1 dash salt
1/2 cup buttermilk
1 teaspoon baking soda
2 eggs, beaten
4 teaspoons vanilla
1/2 cup butter
6 tablespoons milk
1/4 cup unsweetened cocoa
3 1/2 cups confectioners' sugar
1 teaspoon vanilla

Steps:

  • Brownie: Preheat oven to 400°; grease an 11" x 17" jelly roll pan.
  • Mix sugar and flour in a bowl; in a saucepan bring to boil the butter, shortening, water, cocoa and salt; pour cocoa mixture over flour mixture and stir until combined.
  • Beat in buttermilk, baking soda, eggs and vanilla; pour into baking pan and bake for 15 minutes, until center is barely set; DO NOT OVERBAKE; the center of the brownie will be slightly puffed but, if not overbaked, will fall when cool.
  • Frosting: Prepare the frosting while the brownie bakes; in same saucepan, bring to boil the butter, milk and cocoa; remove from heat and stir in confectioners' sugar and vanilla; stir until smooth.
  • Pour and spread over the brownie immediately after removing it from the oven; cool and refrigerate.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.

2 Tbsp cocoa
1/4 c milk
3 1/2 c powdered sugar
1 tsp vanilla

Steps:

  • 1. Combine the butter, shortening, water and cocoa in a microwave safe dish and microwave on HIGH for 2 minutes. Pour mixture over flour and sugar. Stir to blend. Add buttermilk**, eggs, baking soda and vanilla. Mix well.
  • 2. Pour into well-buttered 17 1/2 x 11 inch jelly roll pan. Bake at 400° for 20 minutes or until brownies test done. While brownies bake prepare frosting.
  • 3. For the frosting combine the butter, cocoa and milk in a microwave safe dish and microwave at HIGH for 2 minutes stirring once. Add powdered sugar and vanilla. Stir to blend. Pour warm frosting over hot brownies. Let cool then cut into bars.
  • 4. **If you don't have buttermilk use 1/2 cup of milk plus 2 teaspoons of vinegar or lemon juice to sour the milk. Stir and let set for a couple of minutes.

  • Beat buttermilk, eggs, baking soda, and vanilla extract together in a bowl; add to margarine mixture and stir until batter is combined. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the brownies comes out clean, about 20 minutes. Cool completely.
  • Heat 1/2 cup margarine, milk, and 3 tablespoons cocoa powder together in a small saucepan over low heat until margarine melts and mixture is combined; remove from heat. Beat confectioners' sugar into margarine mixture until frosting is smooth and creamy. Spread frosting over cooled brownies and cut into squares.

This is a different version of the Texas Hot Cocoa Cake. The main difference is heating some of the ingredients in the microwave instead on the stove. Also, it is baked in a larger pan. It could be baked in a 9"x13" pan and cooked 35-40 minutes if desired.
