This is my version of a Texas classic. This burger is moist, flavorful and stays together well when grilling!

Number Of Ingredients 7

1 1/2 lbs 80% lean ground beef
12 slices bacon, uncooked
1 -1 1/2 tablespoon grill seasoning (I use McCormicks Mesquite)
1 teaspoon garlic powder
1 tablespoon minced dried onion
1/4 cup Worcestershire sauce
salt and pepper

Steps:

  • Begin by chopping the raw bacon finely with a sharp knife. I slice it in half, then in strips, then dice it. The key is to make it small. I do not recommend a food processor because it heats the bacon up too much and can become gummy.
  • Gently mix all ingredients in a large bowl and add the bacon. Form into 6-8 patties and put in the freezer for 30 minutes before grilling. This is not a necessary step, but I think the meat holds together nicely when the patties go on cold.
  • Grill patties approximately 5 minutes on each side. Allow them to rest 5 minutes before serving.
  • Top with cheese if you wish and any of your favorite toppings.

This classic family recipe takes on a BBQ twist, and it tastes amazing.

1½ lbs ground beef
salt and pepper (to taste)
1 onion (diced)
½ red bell pepper (diced)
½ green bell pepper (diced)
1 can corn (drained)
2 can Bold Manwich sauce
2 cups shredded Monterey Jack cheese
1 (32 oz) bag tator tots

Steps:

  • Brown ground beef, salt & pepper, onion, red pepper, & green pepper together until the hamburger is cooked through. Drain grease well. Add in the drained corn and Manwich sauce and mix until combined. Heat through.
  • Pour into a lightly greased 9 x 13 inch pan.
  • Sprinkle 1 cup of grated cheese over the top of the hamburger mixture.
  • Place tater tots over all and then cover with the remaining 1 cup of cheese.
  • Bake for 25 minutes in oven heated to 400 degrees.

A Bobby Flay recipe, published in Food & Wine magazine's January 2008 issue. I've eaten a burger at MESA Grill and it was one of the best. This recipe features a cabbage slaw topping.

3/4 cup mayonnaise
1/2 small onion, finely shredded
3 tablespoons cider vinegar
2 tablespoons sugar
2 teaspoons celery seeds
8 cups shredded green cabbage
1 carrot, finely shredded
salt & fresh ground pepper
2 lbs ground chuck
vegetable oil, for rubbing
salt & freshly ground black pepper
4 hamburger buns, split
sliced pickle

Steps:

  • Make the coleslaw: In a large bowl, whisk the mayonnaise with the onion, vinegar, sugar and celery seeds. Add the shredded cabbage and carrot, season with salt and pepper and toss well. Let stand until slightly softened, about 25 minutes.
  • Make the burgers: Light a grill. Form the beef into 4 patties; rub with oil and season with salt and pepper. Sear over high heat, turning once, for 5 minutes for medium-rate Brush with 1/2 cup of the barbecue sauce and grill until glazed, about one minute per side.
  • Grill the buns and brush them with the remaining barbecue sauce. Top with burgers, picks and coleslaw and serve.

1 c shredded cooked brisket
2 can(s) (10-3/4 oz.each) cheddar cheese soup,undiluted
1 c whipped cream cheese
1 c sour cream
1 c sliced jalapenos,divided
1 red onion,chopped
1 pkg (30 oz.) frozen shredded hash brown potatoes,thawed
2 c (8 oz.) shredded cheddar cheese
1-1/2 lb ground beef
1 c favorite barbecue sauce
1/4 c packed brown sugar
3 tsp steak seasoning
1 tsp garlic powder
1/4 tsp seasoned pepper
1 tsp dried oregano
4 slice processed american cheese

Steps:

  • 1. Preheat oven to 350 degrees F.Add shredded brisket to a greased 3-qt.baking dish.
  • 2. In a large bowl,combine soup,cream cheese,sour cream,1/2 cup sliced jalapenos and chopped red onion:mix well.Stir in hash brown potatoes and cheddar cheese;transfer to a prepared baking dish.
  • 3. In a large skillet,cook beef over medium heat until no longer pink;drain.Stir in the barbecue sauce,brown sugar and seasonings;spread over potato mixture.Top with remaining jalapenos and cheese slices.
  • 4. Bake,uncovered,at 350 degrees for 40-45 minutes or until bubbly.
