Tex-Mex Steak Fajitas with Peppers and Onions image

Skirt steak ? a favorite for fajitas ? gets seasoned with a Tex-Mex inspired spice rub and grilled until juicy. It?s paired with charred peppers and onions for a hearty fajita filling.

2 teaspoons light brown sugar
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon chipotle chile powder
1/2 teaspoon garlic powder
Kosher salt
1 1/2 pounds skirt steak
1 tablespoon olive oil
1 lime, juiced
2 red bell peppers, cut into 1-inch strips
2 yellow bell peppers, cut into 1-inch strips
2 large red onions, thickly sliced
3 tablespoons olive oil
2 limes, juiced
Kosher salt
Neutral oil, for oiling the grill grates
Warm tortillas, for serving
Suggested toppings: guacamole, sliced pickled jalapenos, lime wedges, mango salsa, chopped scallions, shredded Cheddar

Steps:

  • For the Tex-Mex chili rub: Mix together the paprika, brown sugar, chili powder, cumin, chipotle chile powder, garlic powder and 1 teaspoon salt in a small bowl. Toss the skirt steak in a container with the olive oil and lime juice, then rub with the spice mixture. Refrigerate, covered, for at least 30 minutes and up to 2 hours before cooking.
  • For the peppers and onions: Heat a cast-iron pan over medium-high heat until hot. Toss the peppers and onions in a bowl with the olive oil, lime juice and 1 teaspoon salt. Add the pepper-onion mixture to the hot pan and cook, stirring occasionally, until the vegetables are tender and the edges are charred, 8 to 10 minutes. Set aside.
  • Prepare a grill for medium-high heat and brush the grill grates with oil.
  • Grill the skirt steak until marked, 4 to 5 minutes per side for the thicker pieces for medium rare, or 2 to 3 minutes per side for the thinner pieces for medium rare. Transfer to a cutting board and thinly slice.
  • Serve with the warm tortillas and toppings.

Steps:

  • Pour all 8 packets of sazon seasoning into a gallon-sized resealable plastic bag. Add beer, seal, and shake until sazon seasoning is dissolved. Add flank steak and refrigerate 8 hours or overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove steak from the bag and discard marinade.

Steps:

  • Preheat the oven to 425˚ F. Make the quinoa: Cook the quinoa as the label directs; fluff with a fork and stir in the cilantro and lime zest. Season with salt.

1 1/4 cups canned unsalted beef broth
3 dried ancho chilies*
4 large garlic cloves
1 1/2 teaspoons ground cumin
1 pound beef flank steak, well trimmed
2 cups sliced onion
2 fresh Anaheim (California) chilies*, quartered, thinly sliced
1 red bell pepper, quartered, thinly sliced
1 2/3 cups purchased fresh salsa
6 to 8 cups thinly sliced iceberg lettuce
2 cups fresh corn kernels or frozen, thawed
1 large tomato, chopped
1/2 cup fresh cilantro leaves
1 cup grated part-skim reduced-fat mozzarella cheese
1/4 cup crumbled baked (no oil) tortilla chips
Ancho and Anaheim chilis are available at Latin American markets and many supermarkets.

Steps:

  • Bring 1 cup broth and dried chilis to boil in heavy small saucepan. Cover and let stand 20 minutes. Stem and seed chilies. Rinse. Strain cooking liquid. Transfer chilis, garlic and cumin to blender. Blend until smooth. Remove 1/3 cup puree and reserve. Spread remaining puree over both sides of beef. Season with salt. Place in shallow baking dish. Cover and refrigerate overnight.
  • Simmer remaining 1/4 cup broth, onion, fresh chilis and bell pepper in heavy medium skillet until tender, about 5 minutes. Transfer to bowl and cool. (Can be prepared 1 day ahead. Cover vegetables and chill.)
  • Preheat broiler. Transfer beef to baking sheet. Broil 5 minutes, turn and broil 3 minutes. Let beef stand 10 minutes. Cut into thin slices. Add any accumulated juices and 1/3 cup salsa to reserved puree.
  • For each plate, layer in order: lettuce, salsa, bell pepper mixture, corn, beef, chopped tomato, fresh cilantro, cheese and reserved puree. Garnish with tortilla chips and serve.

1T. Worcestershire sauce

1 large head romaine lettuce, cut into bite-size pieces
1/4 c. julienne red onion
1/2 c. julienne jicama
2 medium, diced vine ripened salad tomatoes
1 c. roasted corn (I use Trader Joes)
1 lb. thinly sliced flank steak
Tortilla strips

Steps:

  • Chipotle Rub In a food processor or blender, combine all ingredients and blend to a smooth paste. Spread the chopotle rub evenly over flank steak and let stand a room temperature for 30 minutes. Preheat the grill to meidium high and oil the grill. Place the steak over direct heat of the grill for 2 minutes per side. Move to indirect heat and close the lid of the grill. Continue for 8 to 10 minutes more or until desired doneness is achieved. Salad Dressing In a blender, combine all ingredients and blend until smooth. Salad In a large bowl, combine the lettuce, onion, jicama, tomatoes, and corn. Arrange the salad on chilled salad plates and place slices fo the beef and tortilla strips over the top. Serve with dressing.

1 cup(s) beef stock-low sodium (preferably homemade)
1 - poblano, sliced
1 small sweet onion, sliced
2 clove(s) garlic, minced
3 small tomatoes, roughly chopped
1 - jalapeno, seeded and sliced
1-2 teaspoon(s) chili powder
1 teaspoon(s) smoke paprika
1/2 teaspoon(s) mexican oregano
1/4 teaspoon(s) cumin
- **your favorite mexican melting cheese
- **salt & pepper to taste

Steps:

  • In a non stick skillet place poblano pepper slices, onion slices, sliced jalapeno, with about a tablespoon of olive and simmer for about 10 min till veggies start to soften a little. Then add minced garlic and chopped tomatoes . Add chili powder, smoked paprika, cumin, Mexican oregano, and a dash of salt if your a salt eater. Simmer for about 10 min. more. Then add 1 c. dry instant rice and 1 c. of beef stock. Stir together well and simmer about 5-10 min. longer with lid on till rice is tender.
  • Meanwhile, thinly slice beef and place on flat cooking surface, I use an electric. griddle. Sprinkle with southwest rub, garlic gran., onion gran. and black pepper, mix around with tongs. Cook over med. high heat for about 10 min till done.
  • Serve beef over rice and veggies and top with grated cheese.
  • These are the TWO sodium free and the Pinto bean low sodium seasoning I have found.

1 1/2 pounds new potatoes, peeled and cut into chunks
3 cups low-fat milk
Kosher salt and freshly ground pepper
Vegetable oil, for frying
1 3/4 cups self-rising flour
2 tablespoons chili powder
3/4 cup low-fat buttermilk
1 large egg
4 cube steaks (1/4 inch thick; about 6 ounces each)
2 cups frozen peas and carrots
Chopped fresh chives, for topping

Steps:

  • Preheat the oven to 250˚ F. Combine the potatoes, milk, 1/2 teaspoon salt and a few grinds of pepper in a medium saucepan and bring to a boil. Reduce the heat and simmer until the potatoes are fork-tender, about 10 minutes. Remove to a bowl with a slotted spoon; reserve the milk.
  • Meanwhile, heat 3/4 inch vegetable oil in a large cast-iron skillet over medium-high heat until a deep-fry thermometer registers 375˚ F. Whisk 1 1/2 cups flour with 1 tablespoon chili powder in a shallow bowl. Whisk the buttermilk, egg, remaining 1 tablespoon chili powder and a pinch of salt in a separate bowl. Season the steaks with salt and pepper. Coat the steaks in the flour, dip in the buttermilk, then coat in the flour again.
  • Working in batches, fry the steaks, turning once, until crisp and golden, 5 minutes; transfer to a rack set on a baking sheet. Season with salt and keep warm in the oven. Reserve the cooking oil.
  • Put the peas and carrots in a microwave-safe bowl and add 2 tablespoons water; cover and microwave until hot, 4 minutes. Mix 3 tablespoons of the reserved cooking oil and the remaining 1/4 cup flour in a bowl with a fork. Return the milk to a boil, whisk in the flour mixture and cook, whisking, until thickened, 1 to 2 minutes. Season with salt and pepper. Reduce the heat to low and add the potatoes; warm through, 1 minute. Serve the steak with the potatoes and peas and carrots. Top with more gravy and chopped chives.

Steps:

  • Heat grill to medium-high heat.
  • Mix first 4 ingredients.
  • Grill steaks 4 min. on each side or until medium doneness (160°F), brushing generously with steak sauce mixture.
  • Cut each steak in half to serve.
