1 tablespoon olive oil
½ cup minced onion
3 cloves garlic, minced
2 teaspoons chili powder
½ teaspoon cumin
½ teaspoon oregano
4 cups water
1 (10.75 ounce) can condensed tomato soup
1 (28 ounce) can diced tomatoes
1 cup salsa
4 cups shredded cooked turkey
1 tablespoon dried parsley
3 chicken bouillon cubes
1 (14 ounce) can black beans, rinsed, drained
2 cups frozen corn
½ cup sour cream
¼ cup chopped fresh cilantro
6 cups corn tortilla chips
¾ cup chopped green onion
1 cup shredded Cheddar-Monterey Jack cheese blend
½ cup chopped fresh cilantro
½ cup sour cream

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add minced onions and cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin and oregano and cook, stirring, for 1 minute.
  • Stir in water, tomato soup, diced tomatoes, salsa, shredded turkey, parsley and bouillon cubes. Bring to a boil, then reduce heat, and simmer 5 minutes or until bouillon cubes dissolve. Add black beans, corn, sour cream and cilantro. Simmer for 20 to 30 minutes.
  • Serve soup with crushed tortilla chips, chopped green onion, shredded cheese and additional cilantro and sour cream.

Two 15-ounce cans fire-roasted tomatoes
Two 15-ounce cans southwestern-style corn, drained and rinsed
Two 10-ounce cans red enchilada sauce
Two 4.5-ounce cans chopped green chiles
One 15-ounce can black beans, drained and rinsed
Kosher salt and freshly ground black pepper
One 17.6-ounce package potato gnocchi
1 cup cubed Spanish chorizo
8 ounces processed queso blanco cheese, such as Velveeta, cubed
Fresh cilantro leaves, for garnish

Steps:

  • Combine the fire-roasted tomatoes, corn, enchilada sauce, chopped green chiles with liquid and black beans in a large pot over high heat, adding salt and pepper as needed. Bring to a boil, reduce the heat and simmer for 10 minutes to bring all the flavors together.
  • Add the gnocchi, chorizo and queso blanco and cook until the gnocchi has softened and the cheese has melted, 2 to 3 minutes. Serve immediately garnished with cilantro.

This is a fantastic soup! It's easy and it's a one pan meal. I like to switch types of beans, kidney, black, pinto, even black eyed. You can make it hotter, or use less pepper sauce for milder. 1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained

Steps:

  • In 5-quart Dutch oven, melt butter over medium-high heat; season chicken with salt and pepper. Cook chicken in melted butter 6 to 8 minutes, stirring once, until chicken is browned on outside. Using slotted spoon, transfer to bowl; cover and keep warm.
  • Add onion and garlic to butter and drippings in Dutch oven; cook over medium-high heat 30 to 60 seconds, stirring frequently, until softened.

1 15-ounce can no-salt-added pinto beans (do not drain)
1 1/2 cups cooked brown rice, thawed if frozen
1/2 cup fresh cilantro, roughly chopped
8 corn tortillas
1/2 cup shredded low-fat cheddar cheese (about 2 ounces)

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the onion and cook, stirring occasionally, until slightly softened, about 5 minutes. Add the garlic, cumin, 1/4 teaspoon salt and a few grinds of pepper; cook until lightly toasted, about 1 minute. Add the tomatoes, black beans, pinto beans and 6 cups water. Bring to a boil, then reduce the heat to medium and stir. Simmer until slightly thickened, about 15 minutes.
  • Remove 1/2 cup of the bean mixture to a bowl using a slotted spoon; mash with a fork, then return to the pot along with the rice and 1/4 cup cilantro. Cook until the soup thickens, about 5 more minutes. Season with salt and pepper. Warm the tortillas in a dry skillet or wrap in damp paper towels and microwave; wrap in foil to keep warm.
  • Top each serving of soup with the cheese and the remaining 1/4 cup cilantro. Serve with the warm tortillas.

1 large poblano chile pepper, stemmed and seeded, thinly sliced
1 onion, thinly sliced
Kosher salt and freshly ground pepper
1 teaspoon chili powder
4 cups low-sodium chicken broth
1 10-ounce can diced tomatoes with green chiles
1 15-ounce can hominy, drained and rinsed
4 cups shredded rotisserie chicken (about 12 ounces)
1 1/2 cups crushed tortilla chips
2 scallions, thinly sliced

Steps:

  • Cut the corn kernels off the cobs and transfer to a small bowl. Run the back of your knife down the cobs to scrape any corn milk into the bowl (it will help thicken the soup). Set aside.
  • Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the poblano, onion, 1/4 teaspoon salt and a few grinds of pepper; cook, stirring, until the vegetables are browned in spots, about 6 minutes. Add the corn kernels and their milk. Stir in the chili powder and cook until toasted, about 1 minute. Stir in the chicken broth, 3 cups water, the tomatoes, hominy, chicken, 1/4 teaspoon salt and a few grinds of pepper. Cover and bring to a boil, then lower the heat and simmer, uncovered, until the broth is slightly reduced and the vegetables are tender, about 5 minutes. Season with salt and pepper.

Steps:

  • Saute onions, green bell peppers, and garlic in a small amount of vegetable oil. Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth. Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes. Place cream cheese in a separate bowl. 1 onion, diced
1 large butternut squash, peeled, seeded and diced
1 red bell pepper, seeded and diced
2 cloves garlic, minced
1 jalapeno, seeded and finely chopped
4 cups chicken broth
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup crema
1/2 cup crumbled cotija cheese
1/2 cup finely chopped fresh cilantro
1/2 cup pomegranate seeds

Steps:

  • Add the olive oil to a large pot over medium-high heat. Add the onions and cook until beginning to soften, about 5 minutes. Add the squash and peppers and cook, stirring occasionally, until just beginning to brown slightly, 5 to 7 minutes. Add the garlic and jalapeno and cook for 1 more minute. Add the broth, cumin, chili powder, salt and pepper. Bring to a simmer and simmer until the squash is soft, about 15 minutes. Puree using an immersion blender.
  • To serve immediately: Serve up in bowls and top with about 1 tablespoon each of the crema, cotija, cilantro and pomegranate seeds.
  • If freezing, let cool completely, then pour into 3 to 4 quart bags and freeze. To serve: thaw a bag of the soup in the refrigerator, then heat in a pan or in the microwave. Top with the crema, cotija, cilantro and pomegranate seeds.

2 potatoes, peeled and cubed
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 tablespoons margarine
4 ounces chopped ham
1 tablespoon chopped green chile peppers
¼ teaspoon ground white pepper
⅛ teaspoon cayenne pepper
1 (14.5 ounce) can chicken broth
1 egg yolk, beaten
¼ cup heavy whipping cream
½ cup shredded Cheddar cheese

Steps:

  • Cook potatoes in boiling water until tender, about 15 minutes. Drain and reserve.
  • In a skillet, saute onion, green and red pepper in butter for 10 minutes, or until softened. Stir in the ham, green chilies, white pepper and cayenne. Cook for 1 minute longer. Reserve.
  • In a blender, combine the potatoes and chicken broth and blend until smooth. Add to the sauteed vegetable mixture.
  • Heat soup just to boiling. Beat the egg yolk with the heavy cream in a small bowl. Stir in 1/2 cup hot soup, stir yolk mixture back into sauce pan. Gently heat soup, but do not boil. Garnish with shredded cheddar cheese.

Steps:

  • In large pot over medium-high heat, cook ground chicken, garlic, and onion until the turkey is browned and the onion is soft. Drain the fat from the pan and return to heat.
  • Slowly add in milk, cream of chicken soup, corn, tomato, chiles, parsley and red pepper. Bring to a boil, then reduce heat and let it simmer for about 5 minutes.

I'm neither Texan nor Mexican and I can't claim this to be a real Tex-Mex dish, but it definitely has that taste to it. I had black bean soup in mind when I was experimenting and came up with this. Enjoy!

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
2 celery ribs, finely chopped
1/4 red bell pepper, chopped
2 cups chicken broth
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red beans, drained and rinsed
1/2 teaspoon cumin
salt, to taste
1 1/2 tablespoons cornstarch, plus 1 1/2 tablespoons cold water
6 teaspoons herdez chipotle salsa (to taste)

Steps:

  • In a soup pot, cook onion, celery, and red bell pepper until softened. Add garlic for last minute so it doesn't burn.
  • Add chicken broth and bring to a simmer. Simmer for 10 minutes.
  • Add cumin and half of the beans and heat through. At this point you may wish to mash or puree the mixture in the pot a bit.
  • Add the rest of the beans and heat through.
  • Dissolve the cornstarch in the water and add to the pot. Heat until slightly thickened.
  • Add Herdez Chipotle Salsa. You may want to start with two teaspoons and add more according to how spicy you like your food. I like 6 teaspoons.
  • Salt to taste.
  • You may want to serve this soup with cheddar cheese and sour cream on top. Enjoy!

1/2 cup diced onion
1/2 cup diced green bell pepper
1 tablespoon minced garlic
vegetable oil
1 lb chicken breast, boiled and shredded
1 ounce taco seasoning mix
8 ounces jarred salsa
14 ounces canned kernel corn
14 ounces hominy
16 ounces ranch style beans
8 ounces canned tomato paste
28 ounces canned chicken broth
8 ounces cream cheese
tortilla chips
grated monterey jack cheese

Steps:

  • Saute onions, green bell peppers,and garlic in a small amount of vegetable oil.
  • Add chicken, taco seasoning mix, salsa, vegetables, beans, tomato paste, and chicken broth.
  • Adjust liquid to your liking. Bring to a slow simmer and simmer for 20 minutes.
  • Place cream cheese in separate bowl.
  • Using a measuring cup, take some of the hot liquid from the soup and pour over cream cheese to melt and then add back to the soup.
  • Simmer on low for another 10 minutes. Serve with tortilla chips and grated monterey jack cheese.
  • Variations: Serve over rice the second day. Add jalapeno for extra spice. Garnish with avocado, tortilla strips and onion. Use any beans.

SPICY TEX-MEX CHILI SOUP



Spicy Tex-Mex Chili Soup image

Make this as spicy as you like by adjusting the dried chili pepper flakes and jalapeno amounts, my family likes extreme heat so I use 2 jalapeno peppers --- for even more flavor add in a small bottle of taco sauce and cumin powder if desired --- all amounts may be adjusted to taste --- I strongly suggest to make this soup a day or 2 days in advance the flavors will intensify, refrigerate then warm on top of the stove, all that is needed with this soup is a loaf of crusty bread :)

1/2 lb ground beef
1/2 lb Italian sausage, casings removed (use milk or spicy)
1 medium onion, chopped
2 tablespoons fresh minced garlic
1 -2 teaspoon dried chili pepper flakes (or to taste)
1 -2 jalapeno pepper, seeded and finely chopped
1 (1 1/4 ounce) package taco seasoning mix (you can use 2 packages if desired)
2 tablespoons chili powder (can use more to taste)
1 (14 ounce) can black beans, rinsed and drained
1 (14 ounce) can kidney beans, undrained
2 (14 ounce) cans Mexican-style tomatoes, undrained
1 (8 ounce) can tomato sauce
1 (7 ounce) can diced green chilies
2 cups beef broth
seasoning salt (to taste) or white salt & fresh ground pepper (to taste)
shredded cheddar cheese (use any amount desired)
sour cream

Steps:

  • In a Dutch oven or heavy pot cook the ground beef, sausage meat and onion until no longer pink; drain fat.
  • Add in garlic, chili pepper flakes and jalapeno pepper/s; cook stirring until meat is browned (this may take about 10 minutes).
  • Mix in the taco seasoning mix and chili powder and stir for 1 minute.
  • Add in all remaining ingredients except the salt and black pepper; stir to combine.
  • Simmer uncovered over low heat stirring occasionally for about 1-1/2 hours (the longer you simmer this soup uncovered the richer and better it will be).
  • Season with salt and black pepper to taste.
  • Ladle into bowls and sprinkle with shredded cheddar cheese then a dollup of sour cream if desired.
  • Delicious!
