My mother's a descendent of Germans from Russia; the community makes a killer 'home brew'. This is a version made by our family friend, Terry Schutz, that is simple, easy, and delicious (and very potent; be careful!). Posting it here so I never lose it again!

Number Of Ingredients 4

1/2 gallon apple juice
1/2 gallon apple cider
1/4 cup brown sugar (or to taste)
750 ml Everclear alcohol (or to taste)

Steps:

  • Heat the apple juice and apple cider together with the brown sugar until the sugar is dissolved. Add Everclear; sample to ensure it is not too strong for your tastes.
  • I have trouble getting these ingredients so I use 3 liters of apple juice and boil it and the sugar with a few cinnamon sticks, some cloves, and a small chunk of ginger. When it starts to smell like cider, remove from heat, then mix 1/2 liter of Everclear. Pour the mixture into bottles, and chill. DELICIOUS!

2 heads romaine lettuce, cut into bite-size pieces
1 large mild onion, sliced in thin rings
4 -5 slices bacon, fried crispy and crumbled
2 -3 garlic cloves, minced
1 teaspoon anchovy paste
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup lemon juice
1/3 cup olive oil
1 tablespoon Worcestershire sauce
1/2 cup parmesan cheese, grated
3 -4 slices bread, cut in cubes
4 tablespoons olive oil
1/4 teaspoon garlic salt

Steps:

  • Prepare lettuce and onions.
  • For dressing, put garlic, salt, pepper, and anchovy paste together and mix well.
  • Add lemon juice, Worcestershire sauce, and olive oil, mixing well.
  • Stir in parmesan cheese.
  • Let mellow in fridge to blend flavour at least a half hour.
  • To make croutons, in a non-stick skillet, brown bread cubes in olive oil and garlic salt until cubes crisp, stirring constantly, add pepper to taste. Let cool.
  • To assemble, toss salad greens, onions with dressing, sprinkle with bacon crumbles and top with croutons. Serve immediately.

LAIRD'S APPLEJACK POUND CAKE

While looking for drink recipes and searching Laird's applejack website, I stumbled upon this. Rich, light and yummy! A little involved, but end product sure was worth it. Used one of those silicone tube pans and it popped right out!

1 lb butter
3 cups sugar
8 eggs, separated
3 cups sifted flour
2 teaspoons vanilla
1/3 cup Applejack
1/2 cup chopped pecans

Steps:

  • Cream butter & 2 cups sugar 'til light and fluffy.
  • Add yolks one at a time, mixing well each time. Add flour alternately with vanilla and applejack in thirds, beating until smooth after each addition.
  • In another bowl, beat egg whites until stiff but not dry.
  • Beat remaining sugar into egg whites gradually. Gently fold egg yolk mixture into whites.
  • Sprinkle nuts on bottom of well buttered 10" tube pan.
  • Carefully turn batter into pan.
  • Bake in 350 oven for approximately 1&1/2 hours.
  • Cool completely and remove from pan.
