- Mix together: To a mixing bowl add turkey, garlic powder, onion powder, ketchup, mustard, Worcestershire sauce, salt and pepper, egg and breadcrumbs. Using a fork, mix together-try not to mix it too much.
- Shape into 4 patties about ½ inch thick- they will be really moist.
- Use your thumb to make a depression in the center of each patty. If grilling, place the patties on a parchment lined plate and freeze for 20 minutes.

ACTUALLY DELICIOUS TURKEY BURGERS
This is a simple and delicious recipe. After making them the first time my husband said 'no more' to beef burgers. These are really good - any cooking method may be used, and they freeze very well. The recipe can also be used for meatballs or meat loaves.

- In a small bowl, combine the ketchup, soy sauce, brown sugar, pineapple, ginger, garlic and sesame oil; set aside., In a large bowl, combine the egg white, bread crumbs, onions, crushed pineapple and 3 tablespoons ketchup mixture. - Heat gas or charcoal grill. In large bowl, mix all ingredients except buns and lettuce until well blended. Shape mixture into 8 patties, 1/2 inch thick.
- Lightly oil grill rack. Place patties on grill over medium heat. Cover grill; cook 10 to 12 minutes, turning once, until meat thermometer inserted in center of patties reads 165° F.

MARTHA'S SECRET TURKEY BURGER

- Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
- Heat 1 tablespoon oil in a skillet over medium-high heat; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
- Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees F, 5 to 6 minutes more.
- Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining teaspoon oil; season with salt and pepper. Brush cut sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili sauce mixture, remaining relish and kale.

I wanted to do something different for Thanksgiving dinner and found this recipe in Patti LaBelle's Lite Cuisine cookbook. This is good and was a nice change from the usual!

- Preheat the oven to 325°F Coat a 2-quart baking dish with fat free cooking spray.
- Cook the noodles according to package instructions, leaving out any salt or butter. Drain and set aside.
- Meanwhile, melt the margarine in a large saucepan over medium heat. Add the celery, mushrooms, red bell pepper and green onions. Cook until just tender, about 4 minutes. Add the turkey and cook, breaking up the meat with a spoon until the turkey is no longer pink, about 5 minutes. Drain off the excess liquid.
- Stir in the soup, teriyaki sauce, poultry seasoning, salt, black pepper and red pepper flakes. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes, stirring often.
- Stir in the sour cream and noodles. Pour the mixture into the prepared baking dish and sprinkle with the paprika. Cover with foil, and bake until heated through, about 15 minutes.
- Patti's Pointers: Be sure and use light teriyaki sauce; the regular kind has goo-gobs of sodium. With all the other goodies in this dish, I promise you won't miss the taste. And if you're trying to shake the salt habit, use only 1 tbsp of the teriyaki sauce. Before digging in, you can season with your favorite salt substitute, if needed.

TURKEY BURGERS
Turkey burgers are much leaner than hamburgers, but they can be dry and dull. Moisten them by adding ketchup and a bit of grated onion to the ground turkey - or mayonnaise and a bit of mustard. The idea is to emphasize condiments, and keep the turkey moist.

- Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
- Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) When you can feel the heat while holding your hand just above griddle or pan, cook the patties for five minutes on each side. Serve on buns, with the condiments of your choice.
