Sours aren't just for whiskey; tequila lightens things up. For extra froth, use egg white when you shake the drink.

Number Of Ingredients 6

2 ounces reposado tequila
1 ounce fresh-squeezed lemon juice
1 scant teaspoon simple syrup
Dash of Angostura orange bitters
1 teaspoon egg white (optional)
Half-wheel of orange, for garnish

Steps:

  • Fill a shaker with ice, and add all ingredients except half-wheel of orange. Shake vigorously. Strain into an old-fashioned glass over ice. Garnish with the orange.

2-3 ounces tequila
2 tablespoons lemon juice
1/2-1 teaspoon superfine sugar
3 or 4 ice cubes
1 orange or lemon slice or peel
Maraschino cherry

Steps:

  • Combine all ingredients except the fruit slice or peel and cherry in a cocktail shaker and shake vigorously. Strain into a sour or Delmonico glass, and garnish with the fruit and cherry. A 6-ounce wine glass may be used if you do not have the traditional sour glass.

PINEAPPLE-SAGE TEQUILA SOUR

Number Of Ingredients 5

1/2 cup sugar
4 chunks pineapple
2 large sage leaves
2 ounces reposado tequila
1/2 ounce fresh lemon juice

Steps:

  • Make the simple syrup: Bring 1/2 cup water and the sugar to a simmer in a saucepan over medium heat. Cook, stirring, until the sugar dissolves. Let cool. (You should have about 2/3 cup syrup, enough for 10 cocktails.)
  • For each drink: Muddle the pineapple, sage and 1/2 ounce of the simple syrup in a shaker with the handle of a wooden spoon. Add the tequila and lemon juice, fill with ice and shake well. Strain into a chilled coupe glass.
