From a collection of old Welsh cake recipes purchased in Wales in 1992. This is one of my favourite apple cakes. It's great served with custard.

10 ounces self raising flour
5 ounces butter
5 ounces brown sugar
1 lb cooking apple
milk, to mix

Steps:

  • Peel and core the apples and cut into tiny dice.
  • Preheat oven to 350°F.
  • Rub the fat into the flour, add the sugar.
  • Add the apples and mix together with a little milk to bind to a fairly stiff dough.
  • Spread into well greased shallow tin and bake at 350 F for about 30 minutes.

This recipe was given to my grandmother many, many years ago by an old Welsh lady. They are a family favorite in all generations. They are different from the other recipes listed here as they do NOT have milk--eggs are the only liquid.

4 cups flour
1 cup margarine or 1 cup butter
1 cup sugar
4 eggs
1 cup raisins or 1 cup currants
4 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla

Steps:

  • Beat margarine & sugar together.
  • Add eggs & beat till smooth.
  • Add dry ingredients & stir till just nicely mixed.
  • Roll out on floured surface to 1/4 to 1/2-inch thick.
  • Cut into rounds using a small glass or round cookie cutter (we've always used a small glass).
  • Cook in frying pan till nicely browned on one side; flip & brown the other side. (approx. 3-4 minute per side).
  • Remove to baking rack to cool.
  • Store in an airtight container or ziplock bag.

1/2 lb plain white household flour
1/2 teaspoon baking powder
1 1/2 teaspoons ground allspice or 1 1/2 teaspoons cardamom
1/4 lb melted honey
1 tablespoon melted honey or 1 tablespoon red currant jelly
1/4 lb butter
1/4 lb caster sugar
2 large eggs
2 tablespoons milk

Steps:

  • Sieve the flour, baking powderand spice into a bowl.
  • Lightly grease a tin pie plate measuring about 8-1/2-inches across the top.
  • Cream the butter with 3 oz sugar until creamy and light.
  • Add the egg yolks then the 1/4 lb honey, gradually.
  • Gently mix in the flour, then the milk.
  • Spread the mixture in the prepared tin, mounding it slightly in the center.
  • Bake at 400 F (200 C) gas mark 6 for about half an hour.
  • Let the cake rest in its tin for 2 minutes before turning it out on to a wire rack.
  • Let it cool for 10 minutes then slide it onto a baking tray and brush the top with 1 tablespoon warmed honey - or red currant jelly if you prefer.
  • Whisk the egg whites and the remaining 1 oz sugar to make a glossy meringue mixture. Swirl this over the top of the cake and bake at 325 F (160 C) gas mark 3 for about 20 minutes.
  • Serve the cake when it is cold.

10 ounces flour
1 teaspoon treacle
4 ounces lard
1 pinch mixed spice
1 pinch ginger
3 ounces sugar
4 ounces dried fruit
1 egg
1 cup milk
1/2 teaspoon bicarbonate of soda
1 pinch salt

Steps:

  • Cream the sugar and fat.
  • Mix in the egg and add the remainder of the ingredients, having desolved the bicarbonate in the milk.
  • Bake in a greased tin for about 3/4 hour in a moderately hot oven.
  • Gas control, Gas MArk 5 (375F).
  • Alternate:
  • 3 teacupsful of flour; 1 teacupful of butter; 1 teacupful of sugar; 2 teaspoonful of baking powder; 2 eggs; milk to mix; a little dried fruit.
  • Rub the butter into the flour, add sugar, baking powder and well beaten eggs and milk if necessary - it must be kept fairly stiff.
  • This mixture is enough to fill two sandwich tins.
  • Bake for 30-40 minutes.
  • Cut in half, spread with butter and eat hot.
  • Oven control, Gas Mark 5 (375F).
  • Croeso Cymreig.
