Seen something similar in a magazine yrs ago...so thought I'd give it a try. The kids sure love this one!

Number Of Ingredients 6

1 c graham crackers, crushed
12 cupcakes, any flavor
2 c frosting, any flavor
2 fruit by the foot (found by fruit roll ups)
12 teddy grahms
12 drink umbrellas

Steps:

  • 1. I used chocolate cake and marshmallow frosting. But any flavor combination would work.
  • 2. Place crumbs in a bowl, frost cupcakes, dip frosted cupcake into crumbs. Cut fruit by the foot into 1 1/2" pieces, put a spot of frosting onto the back and stick to top of cupcake, put a spot of frosting onto back of teddy graham and place on fruit towel, stick an umbrella off to the side and Instant Cuteness!
  • 3. I would also add blue frosting for water next I make these I think...

We are ready for summer and what better way to welcome in the beach weather on the way! Everyone will love these teddy bear beach cupcakes, both delicious and fun to make!

White Cupcakes (we used Betty Crocker white cake mix)
Whipped Vanilla Frosting (we used Betty Crocker frosting )
Blue Food Coloring
Rainbow Candy or Fruit by the Foot
Teddy Bear Shaped Grahams
Crushed Graham Crackers (use extra teddy grahams)
Ring and Fish Shaped Gummies
Paper Drink Umbrellas

Steps:

  • Preheat your oven and prepare the cupcakes according to recipe directions. We used Betty Crocker's white cupcake mix. Add muffin liners to your 12 cupcake/muffin tins. Divide the batter evenly among 12 muffin tins. Bake until the tops spring back or a toothpick inserted comes out clean. Be sure to check baking times on the box.While the cupcakes are cooling on a wire rack, set aside your decorations (teddy grahams, gummy floaties, fish shaped gummies, beach towel candy, paper umbrellas, and "sand". Crush extra teddy grahams into a ziplog bag to resemble sand. We usually use a rolling pin and apply pressure back and forth to make crushed grahams. Once the cupcakes are cooled, mix your frosting in a bowl or directly in the container several drops of blue food coloring to resemble beach water. Frost all of the cupcakes with either a frosting spatula, butter knife or piping bag. Lightly sprinkle blue sugar onto 6 of the frosted cupcakes.On the other 6 cupcakes, dip just half of the cupcake at an angle into the "sand". Sprinkle extra crushed grahams on top for extra thickness.Place 6 teddy bear grahams into 6 round gummy floaties and 6 teddy bear grahams onto the rainbow candy beach towel (using a toothpick, add a small amount of frosting to the back of the teddy bear so the bear stays on the beach towel). Place each of these teddy bear grahams on each cupcake for a total of 12, 6 "floating in the water" and 6 "sun bathing on their towel."Place paper umbrellas in the teddy graham sand and mini fish gummies in the water. We added extra friends onto each cupcake because why not enjoy the beach with a friend or 2!

1 box Betty Crocker™ Super Moist™ yellow cake mix
3/4 cup water
1/2 cup creamy peanut butter
3 eggs
1 container Betty Crocker™ Whipped chocolate frosting
1/3 cup miniature semisweet chocolate chips
1/3 cup honey-flavor dry-roasted peanuts, chopped
48 teddy bear-shaped graham snacks
24 birthday candles

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat cake mix, water, peanut butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
  • Bake 15 to 21 minutes or until toothpick inserted in center comes out clean and tops spring back when touched lightly in center. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely, about 30 minutes.
  • Reserve 1/4 cup of the frosting. Spread remaining frosting over tops of cupcakes. Sprinkle each cupcake with 1/2 teaspoon each chocolate chips and peanuts; press gently into frosting.
  • Spread about 1/2 teaspoon reserved frosting on flat sides of 2 graham snacks. Place candle between frosted sides of graham snacks; press gently together. Repeat with remaining snacks, frosting and candles. Place on cupcakes, pressing candles slightly into cupcakes to hold in place. Store loosely covered.
