1-1/2 pounds ground beef
1 medium green pepper, chopped, optional
1 medium onion, chopped
1/2 pound sliced fresh mushrooms
1 can (15 ounces) pizza sauce
1 teaspoon dried basil
3 cups shredded part-skim mozzarella cheese
1 package (32 ounces) frozen Tater Tots
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, cook the beef, green pepper if desired, onion and mushrooms over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Add pizza sauce and basil. , Transfer to a greased 3-qt. or 13x9-in. baking dish. Top with mozzarella cheese and potatoes. Bake, uncovered, at 400° until potatoes are lightly browned, 30-35 minutes., Sprinkle with cheddar cheese; bake until cheese is melted, 5 minutes.

1 lb. lean ground beef
1/4 cup chopped onion
1 (10 3/4-oz.) can condensed cream of mushroom soup
1 (8-oz.) can pizza sauce
2 oz. sliced pepperoni
1/2 cup chopped green bell pepper
4 oz. (1 cup) shredded mozzarella cheese
1 (16-oz.) pkg. frozen potato nuggets (about 3 1/2 cups)

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In large skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Reduce heat to medium; stir in soup. Cook until mixture comes to a boil, stirring occasionally.
  • Spoon beef mixture into sprayed baking dish. Spoon pizza sauce evenly over top. Arrange pepperoni and bell pepper over sauce. Sprinkle with cheese. Arrange potato nuggets over cheese. Cover with foil.
  • Bake at 375°F. for 30 minutes. Remove foil; bake an additional 15 to 20 minutes or until thoroughly heated.

This tasty casserole is comfort food. The original recipe used a can of mushroom soup instead of the white sauce, but I seldom have canned soup in my pantry, so I improvised. The kids like it plain, but my husband and I like to sprinkle the finished product with crushed red pepper. I'd like to try this with ground turkey, but I just haven't yet.

1 lb ground beef
1/4 cup chopped onion
2 tablespoons butter
2 tablespoons flour
1 pinch garlic powder
1 cup whole milk
1/4 cup parmesan cheese
8 ounces pizza sauce
2 ounces sliced pepperoni
4 ounces shredded mozzarella cheese
16 ounces frozen tater tots

Steps:

  • Heat oven to 375°F Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. In large skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
  • Melt butter, stir in flour and garlic powder. When bubbly gradually stir in milk to make a smooth white sauce. Heat until thickened. Add Parmesan cheese and salt to taste. Stir ground beef into white sauce.
  • Spoon beef mixture into sprayed baking dish. Spoon pizza sauce evenly over top. Arrange pepperoni over sauce. Sprinkle with cheese. Arrange potato nuggets over cheese. Cover with foil.
  • Bake 30 minutes. Remove foil; bake uncovered 15 to 20 minutes longer or until thoroughly heated.
