Victorian Watercress Tea Sandwiches for High Tea and Picnics image

During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have included a soup idea at the end of the recipe, to be made with the excess stalks! So a soup and sandwich recipe then!

2 bunches watercress
softened butter
16 thin slices bread
sea salt and black pepper

Steps:

  • Snip the stalks from the watercress and place the leafy ends on kitchen paper to absorb any water. Butter the bread generously, arrange the watercress over 4 slices and season. Top with the remaining bread, cut into triangles or fingers and serve.
  • NB. (Don't discard the watercress stalks; they can be made into a soup. Soften a chopped onion in a pan with butter, add 250ml whole milk and bring to the boil. Add the stalks, cook for 1 minute then liquidise until smooth and foamy.).

4 1/2 ounces cream cheese
3/4 teaspoon English mustard
salt & freshly ground black pepper
8 slices whole meal bread
8 slices cooked ham
1 bunch watercress

Steps:

  • Mix together the cream cheese and the mustard and season with salt and pepper. Add extra mustard for a more fiery flavour; however, it's probably best to have a mild mustard flavour for afternoon tea.
  • Spread the cream cheese mixture on the 8 slices of bread and place the ham on top of Divide the watercress into small sprigs and place on top.
  • Finish with the remaining slices of bread, trim off the crusts and cut each into 3 fingers. Serve on a pretty plate with some extra sprigs of watercress.

Number Of Ingredients 7

1/2 cup chopped watercress leaves
2 logs soft, fresh goat cheese (such as Montrachet), at room temperature
Kosher salt
16 thin slices sourdough or whole wheat sandwich bread, crusts removed
5 tablespoons unsalted butter, at room temperature
3/4 cup toasted walnuts, finely chopped
Watercress sprigs (to garnish platter)

Steps:

  • 1. In a medium bowl, fold chopped watercress leaves into goat cheese. Season to taste with salt. Spread mixture evenly over eight slices of bread. Top with remaining eight slices. Butter edges of sandwiches. Cut diagonally in half to make sixteen triangles.
  • 2. Place walnuts on a plate. Dip buttered edges of sandwiches into nuts. Arrange sandwiches on a platter. Garnish with watercress sprigs.
  • Sandwiches can be made up to four hours ahead. Cover with plastic wrap and chill.

8 ounces cream cheese, room temperature
10 1/2 ounces goat cheese, room temperature
1 1/2 teaspoons garlic, minced
1/2 teaspoon fresh thyme, minced
2 tablespoons fresh parsley, minced
5 tablespoons half-and-half or 5 tablespoons heavy cream
3/4 teaspoon kosher salt
1/2 teaspoon pepper, freshly ground
2 loaves seven-grain bread, thinly sliced
1 English cucumber, not peeled

Steps:

  • For the spread, place the cream cheese, goat cheese, garlic, thyme, parsley, 5 tablespoons milk, salt, and pepper in bowl of an electric mixer fitted with paddle attachment.
  • Beat on medium speed until well mixed. Add an additional tablespoon of milk if the spread is very thick.
  • To make sandwiches, spread each slice of bread with the goat cheese spread.
  • Slice the cucumber in thin rounds and arrange on half the bread slices.
  • Top with remaining bread, press slightly.
  • Trim off the crusts, and cut into halves, thirds, or triangles.

5 tablespoons (about) unsalted butter, room temperature
3/4 cup finely chopped toasted pecans Watercress sprigs (for garnish)

Steps:

  • Mix cheese and chopped watercress in medium bowl. Season with salt. Spread mixture evenly over 8 bread slices. Top with remaining bread. Butter edges of sandwiches.
