This is very tasty and old-fashioned. Serve with mashed potatoes and gravy. Divide into two recipes.

1 ½ pounds ground beef
¾ cup fresh bread crumbs
½ cup chili sauce
1 egg
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 cup fresh sliced mushrooms
2 tablespoons minced onion
1 tablespoon butter
1 cup beef broth
2 tablespoons water
1 tablespoon cornstarch

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.
  • Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving.
  • While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened.

From Recipe Goldmine, this is my scaled down, simplified version of Dick Clark's meatloaf. It is the only meatloaf recipe I use now. My boyfriend and I can't decide if it is the Rosemary gravy or the Southern Glaze that makes this meatloaf so special! It's delicious! Tastes even better on sandwiches the next day!

1 1/4 lbs ground chuck
1 cup diced onion
3/4 cup diced celery
1 tablespoon minced garlic
1 tablespoon Worcestershire sauce
1/2 cup Italian seasoned breadcrumbs
3/4 cup milk
2 eggs
3 slices bacon
2 tablespoons brown sugar
3/4 cup ketchup
1 teaspoon prepared mustard
1 tablespoon white vinegar
1 (10 ounce) can beef gravy
1 teaspoon minced garlic
2 teaspoons dried rosemary

Steps:

  • Oven@ 400 Combine meatloaf ingredients in a large mixing bowl.
  • Shape meatloaf mixture into a loaf.
  • Place in a baking dish which has been sprayed with non-stick spray.
  • Drape the bacon slices over the meatloaf length-wise.
  • Bake for 30 minutes.
  • Reduce oven temperature to 350.
  • Bake for an additional 40 minutes.
  • *I use a meat thermometer. The meat should reach at least 160 degrees.*
  • Combine Southern Glaze ingredients.
  • Remove the meatloaf from the oven.
  • Using a pastry or a bbq brush, brush the glaze over and around the sides of the meatloaf.
  • Return meatloaf to the oven for an additional 5 minutes.
  • In a small sauce pan, combine Rosemary Gravy ingredients.
  • Heat on medium heat until hot.

Meatloaf... it's a comfort food for sure. I haven't really had a "recipe" per say. I just made it. My son and youngest daughter request meatloaf at least every other week, especially through the fall & winter months. They call it "meat with red gravy." It can be made in the oven or crock pot. Either way, it always comes out so...

3 lb ground round
1 lb bulk turkey sausage, mild
1 c gluten free whole grain oats, (pulse in blender until texture of bread crumbs)
1/4 c parmesan cheese
1/4 c bread crumbs, ( i use my homemade gluten free. you can use regular)
2 large eggs, beat
2 Tbsp italian seasoning
3 clove garlic, minced
1/2 c ketchup, plus some for top of meatloaf
sea salt to taste
fresh cracked pepper to taste
TOMATO GRAVY (RED GRAVY)
1-28 oz can tomato sauce (my grandmother always made hers with tomato soup, delicious!)
1 1/2 c water

Steps:

  • 1. Preheat oven to 375 degrees F. In a large bowl, add ground round and mild Italian turkey sausage, mix together well.
  • 2. In a blender, pulse GF whole grain oats until they are fine, texture like bread crumbs.
  • 3. Combine oats, bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper together. Add to meat mixture and mix well until all is blended evenly.
  • 4. Add minced garlic, ketchup, and beaten eggs to meat mixture. mix well. Form meat into an oblong loaf and place in a casserole dish.
  • 5. Mix together Italian tomato sauce and water, pour around meatloaf in casserole dish. Squeeze additional ketchup over top of meatloaf in a criss-cross pattern if you like. (My husband insists!)
  • 6. Bake covered in preheated oven at 375 degrees F for one hour. Remove cover and finish baking for 30-45 minutes or until loaf is cooked all the way through.
  • 7. Remove from oven and let sit for 15 minutes, remove meat from dish and slice in one inch pieces. Serve with mashed potatoes and use the "red gravy" atop your potatoes and meat.

I am always looking for that "perfect" meatloaf recipe, but this is the one I end up going back to. It is a variation on the recipe Campbell's soup used to have on its' label. It tastes good, and is my family's favorite - so far, anyway!

1/2 cup(s) cream of mushroom soup
1 pound(s) ground beef
1/4 - 1/2 pound(s) ground pork
1/2 cup(s) fine bread crumbs
1/4 cup(s) minced onion
1/2 cup(s) minced green and/or red pepper (bell)
1 tablespoon(s) worcestershire sauce
1 - egg, beaten
- sat and pepper, to taste
- several slices (raw) bacon, optional but goood!

Steps:

  • Pre-heat oven to 350 degrees.
  • Mix all ingredients, except bacon, well. Pack firmly into an 8x4 inch baking pan, or free-form on baking sheet. If using bacon, place strips on top evenly to cover meatloaf.
  • Bake at 350 degrees for 1 and 1/4 hours, - may take less time; check after 1 hour for doneness. Spoon off fat. Reserve 2 tablespoons of drippings.
  • In small pot, heat remainder of can of soup, 1/4 cup water, and reserved drippings. Heat to boiling, stirring well to mix. Serve with meatloaf and mashed potatoes!

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Remove the pan from the heat and let the onion mixture cool to room temperature.
  • In a large bowl, stir together the panko and milk. Add the ground beef, eggs, parsley, Worcestershire sauce, thyme, salt, pepper, and the onion mixture and use your hands to combine. Do not overmix!
  • Shape the beef mixture into a 10 x 5-inch loaf on the prepared baking sheet. Brush the top and sides with ketchup.
  • Bake the meatloaf until the top is browned and the internal temperature reaches 160°F (70°C), about 50 minutes.
  • Slice and serve.

1 (10 3/4 ounce) can cream of mushroom soup (or more)
1 lb ground beef
1/2 cup fine plain breadcrumbs
1 small finely minced onion
1 beaten egg
1/2 cup water

Steps:

  • Preheat oven to 350°F.
  • Mix 1/2 can of soup with ground meat, egg, bread crumbs and onion.
  • Shape into loaf, place into Pam sprayed pan to prevent sticking.
  • Bake for 1 to 1 and 1/2 hours until done.
  • Gravy: Drippings from meat into sauce pan (be sure to scrape all the bits from bottom of pan) with remaining soup and water (here is where you would add that extra can of soup to make even more gravy).
  • Use bouillon if needed.
  • Salt and pepper to taste.
  • Stir over medium heat to boiling point. Remove from heat and serve with meat.
