1/2 cup confectioners' sugar
1 1/2 cups all-purpose flour
3/4 cup unsalted butter, softened and sliced
1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
fresh strawberries, kiwi slices, blueberries, raspberries
1 (6 ounce) can frozen limeade concentrate, thawed
1 tablespoon cornstarch
1 tablespoon fresh lime juice
1/4 cup granulated sugar
whipped cream, for garnish (I make my own)

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust: In a food processor, combine the confectioners' sugar, flour, and butter, and process until the mixture forms a ball. With your fingers, press the dough into a 12-inch tart pan with a removable bottom, taking care to push the crust into the indentations in the sides. Pat until the crust is even. Bake for 10 to 12 minutes, until very lightly browned. Set aside to cool.( you may do this as individuals as well).
  • For the filling and topping: Beat the cream cheese, sugar, and vanilla together until smooth. Spread over the cooled crust. Cut the strawberries into 1/4-inch slices and arrange around the edge of the crust. For the next circle, use kiwi slices. Add another circle of strawberries, filling in any spaces with blueberries. Cluster the raspberries in the center of the tart.
  • For the glaze: Combine the limeade, cornstarch, lime juice, and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes. Let cool. With a pastry brush, glaze the entire tart. You will not use all of the glaze.
  • Keep the tart in the refrigerator. Remove about 15 minutes before serving. Slice into 8 wedges and serve with a dollop of whipped cream if desired.

Tassajara Peach Kuchen image

A spectacular dessert adapted from my old Tassajara Cookbook from the 1970s. If you bake in a pie plate, make sure to use a DEEP one. In the summer, I love to take this along when a pie is requested; the custardy top makes it look extra-special and it's delicious, too. Supposedly, you can substitute 2 packages frozen peaches for the fresh peaches, but I've never done this.

1/2 cup butter
2 cups flour
1/4 teaspoon baking powder
2 tablespoons sugar
1/2 teaspoon salt
1 cup heavy cream or 1 cup sour cream
1 cup brown sugar
6 peaches, sliced
2 egg yolks, beaten
1 teaspoon cinnamon

Steps:

  • Cut the butter into the dry ingredients (flour through salt) with a fork or pastry cutter until it looks like coarse meal.
  • Press firmly into a baking pan (I use a 10-inch deep-dish pie dish).
  • Arrange the peaches on the surface to cover.
  • Sprinkle the fruit with a mixture of the cinnamon and brown sugar.
  • Bake 15 minutes at 400°.
  • Pour the egg yolks beaten with the cream over the top.
  • Lower heat to 375° and bake 40 minutes longer.

Another dessert adapted from my old Tassajara Cookbook. I especially like to make this with berries of various types, but can also be made with apples, peaches, pears or whatever.

1/2 teaspoon mace
1 teaspoon vanilla extract
1/2 cup shortening
1 cup white sugar
1 cup sifted white flour
1/2 cup cornstarch
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/4 cup milk
2 large beaten eggs
2 tablespoons honey or 2 tablespoons sugar
1 cup sour cream
1 teaspoon vanilla extract
fruit, in season chopped or sliced

Steps:

  • Blend mace and vanilla with shortening.
  • Cream in sugar.
  • Sift together flour through baking powder.
  • Beat eggs and milk together.
  • Add dry and milk mixtures to shortening.
  • Grease and flour a 9-inch round cake pan or 8-inch square baking pan.
  • Add batter.
  • Bake at 350°F approximately 45 minutes until center is dry when tested with a toothpick.
  • Cool in pan 20 minutes.
  • Turn onto wire rack.
  • Turn right side up.
  • Mix honey or sugar with sour cream and vanilla.
  • Mix in fruit pieces.
  • Use as topping on torte.
