SHEET-PAN TARRAGON CHICKEN WITH SHERRY VINEGAR ONIONS



Sheet-Pan Tarragon Chicken With Sherry Vinegar Onions image

Roasting chicken with tarragon is a classic combination, but here it's given a twist. Instead of a whole bird, bone-in thighs are marinated in tarragon and garlic, then quickly roasted over a bed of sliced onions. As the chicken cooks, the fat renders, coating the onions, while the fragrant steam rising from the onions flavors the bird. It's a succulent, easy and very flavorful dinner. If you'd rather use all white meat, substitute bone-in chicken breast halves, and start checking them after 20 minutes.

1/2 cup finely chopped tarragon (leaves and tender stems), plus 4 whole sprigs
2 garlic cloves, finely grated or minced
2 tablespoons extra-virgin olive oil, more for drizzling
1 1/2 teaspoons kosher salt, more as needed
1/2 teaspoon ground black pepper, more as needed
3 pounds bone-in chicken thighs (skin on)
2 large onions, peeled and sliced (about 4 cups)
4 thyme sprigs
Sherry vinegar, to taste

Steps:

  • In a large bowl, stir together tarragon, garlic, oil, salt and pepper. Add chicken thighs and toss to coat. Cover with plastic wrap and chill for at least 6 hours, and up to overnight.
  • Heat oven to 425 degrees. Spread onions out on a rimmed baking sheet, drizzle with oil and sprinkle with salt and pepper and toss well. Clear spaces on the baking pan, then place chicken pieces in the cleared spaces so the onions surround the chicken. Strew thyme and tarragon sprigs over onions and chicken.
  • Roast, tossing the onions after 15 minutes, until chicken is cooked through and the onions tender, 25 to 35 minutes. If the chicken skin or onions are not as brown as you'd like, run pan under the broiler for 1 to 2 minutes at the end of cooking.
  • Place chicken on a platter. Drizzle onions with sherry vinegar and more salt and pepper if needed. Spoon onions around the chicken and serve.

1 teaspoon cornstarch
1 cup chicken broth
1/2 cup cider vinegar
2 teaspoons honey
3 lbs chicken (bone in, trimmed)
salt and pepper
2 teaspoons vegetable oil
1 shallot, minced
4 garlic cloves, crushed and peeled
1 tablespoon unsalted butter
1 tablespoon tarragon, chopped

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 450 degrees. Dissolve cornstarch in chicken broth. Whisk in vinegar, honey and set aside.
  • Pat chicken dry with paper towels and season with salt and pepper. Heat oil in 12" skillet over medium-high heat until just smoking. Cook chicken skin side down until well browned, about 6-8 minutes. Transfer to plate, skin side up.
  • Pour off all but 1 T fat from skillet and return to medium-high heat. Add shallot and garlic and cook until fragrant, about 30 seconds. Whisk broth mixture and add to skillet, scraping up any browned bits. Bring to a boil and return chicken to skillet skin side up, along with accumulated juices. Move skillet to oven and cook until breasts register 160 degrees and drumsticks/thighs register 175 degrees, about 10-15 minutes.
  • Transfer chicken to serving platter, tent loosely with foil and let rest while preparing sauce. Return skillet to medium-high heat (skillet handle will be hot) bring to boil and cook until sauce is slightly thickened 5-7 minutes. off heat, whisk butter, tarragon and any accumulated juices from platter into sauce. Season with salt and pepper to taste. Spoon sauce over chicken and serve.

CHICKEN IN A TARRAGON VINEGAR SAUCE

I first had this at my aunt and uncle's house last summer. I'm not sure where they got it from, but it is the most amazing recipie. I've never been a big fan of tarragon, but this chicken is incredibly moist and delicious. I wasn't even that hungry and I finished off my entire plate. The key is to use fresh tarragon. This is a great light dish and can easily be doubled. Also, a little big of regular onion can be subsituted if you don't have shallots. I recommend serving this with roasted red-skinned potatoes and fresh green beans.

Olive oil
Kosher salt and freshly ground pepper
1 large orange cut into thin slices
1 bunch tarragon
1 bunch parsley
Sherry Vinegar-Tarragon Vinaigrette, recipe follows
1/4 cup aged sherry vinegar
1 small shallot, chopped
2 teaspoons Dijon mustard
3 tablespoons chopped fresh tarragon
Salt and freshly ground pepper
1/2 cup Spanish olive oil

Steps:

  • Heat grill to medium-high heat. Brush the fish on both sides with olive oil and season with salt and pepper. Fill the cavities of both fish with orange slices, tarragon and parsley and place on the grill. Grill the fish for 6 to 7 minutes on each side. Remove from the grill, place on a platter and drizzle immediately with the Sherry Vinegar-Tarragon Vinaigrette.
  • Combine vinegar, shallot, mustard, tarragon, and salt and pepper in a blender and blend until smooth. With the motor running, slowly add the oil until emulsified. Adjust seasoning.

1/2 cup white wine vinegar
1 1/8 teaspoons dried tarragon leaves

Steps:

  • Place the tarragon in a clean glass jar.
  • Heat the vinegar to just under the boil.
  • Pour over the tarragon.
  • Leave to cool without covering the jar.
  • If the jar cover is metal, place some clear plastic wrap over the jar before screwing on the cap (to protect the cap from corrosion).
  • Leave the jar of vinegar in a dark, dry place for two weeks.
  • Strain the tarragon vinegar through a coffee filter into a clean 4-ounce glass bottle that comes with a plastic lid.
  • Cap and use for recipes calling for tarragon vinegar.

4 spring onions
3 ounces Spanish onion
5 ounces cherry tomatoes
1/2 cup sherry vinegar, plus 1/2 cup
1 1/2 ounces shallots, finely chopped
6 sprigs tarragon
4 ounces butter, diced
8 (3-ounce) sea bass fillets
4 large scallops
Salt and pepper
40 baby asparagus
4 whole chives

Steps:

  • Preheat oven to 350 degrees F.
  • Slice the onions and cut the cherry tomatoes in half. Mix together in a bowl, then add 1/2 cup sherry vinegar and leave to marinate for 30 minutes.
  • Place the shallots into a small saucepan and add the remaining 1/2 cup sherry vinegar. Pick off the tarragon leaves, set aside, and add the stalks to the pan. Bring the vinegar mixture to a boil and allow to reduce by 2/3. Remove pan from heat and start to whisk in the diced butter. Keep the pan warm but do not allow it to get hot as this will cause the butter to separate and will split the sauce. When all the butter has been whisked in, pass the sauce through a sieve into a clean pan and keep warm.
  • Remove the onion and cherry tomatoes from the marinade and place in a saucepan. Sweat the mixture over the medium heat until the tomatoes start to break down. Add approximately 1/2 of the remaining marinade and cook slowly over moderate heat for 30 minutes.
  • While the tomatoes and onions are cooking, take the sea bass fillets and the scallops and season them with salt and pepper. Sear the sea bass fillets in a very hot non-stick frying pan, skin-side down first. When golden brown, remove from the frying pan, place onto a baking tray and cook in the oven for 3 to 4 minutes. Do exactly the same with the scallops.
  • Blanch the baby asparagus and chives separately, in boiling, salted water. Remove from the water and tie the asparagus into bundles of 10 using a blanched chive.
  • To assemble, put 1 piece of sea bass on each plate and top with the confit of tomatoes. Place the second piece of sea bass on top and lean the asparagus bundle against the sea bass. Take the tarragon leaves that were set aside and roughly chop them. Add the tarragon to the warm sauce and spoon sauce around plate. Add a scallop to the side of each plate and serve.

2 quarts water
1 teaspoon household bleach
24 sprigs fresh tarragon*
24 fresh chive shoots
6 cups white wine vinegar

Steps:

  • *Cook's Note: You will need half of the herbs when you start the recipe and half in 2 weeks. It is best to purchase the second half of the herbs when they are needed.
  • If using pint jars for storage, you will need 3 jars. If using small wine bottles, each holds approximately 13 ounces; therefore, you will need 4 bottles.
  • Put the water and bleach in a large container. Dunk 12 sprigs of tarragon and 12 chive shoots in the solution, and then rinse in cold water. Pat dry.
  • Heat the vinegar in a large saucepan over medium-high heat, and heat until vinegar reaches 190 degrees F. Place the herbs in a container large enough to hold the vinegar. Pour the vinegar over the herbs, and after the vinegar has cooled, place the lid on the container. Set in a cool dark place for 2 weeks.
  • After 2 weeks, sanitize the second half of the herbs as previously, rinse, pat dry, and set aside.
  • Sterilize the containers and lids that you will store the vinegar in by immersing them in a large pot of boiling water and boiling for 10 minutes. If using corks, purchase pre-sterilized corks, and then dip them in and out of boiling water 3 to 4 times.
  • Discard the old herbs. Strain the vinegar through a sanitized colander or funnel lined with cheesecloth. Divide the fresh herbs among the containers and pour the vinegar over them. Seal and refrigerate. The vinegar may be stored at room temperature for 5 to 6 weeks or in the refrigerator for up to 6 months.

1 (3 1/2 lb) whole chickens (jointed into 8 pieces, or 4 bone-in chicken breast portions)
2/3 cup sherry wine vinegar
2 tablespoons fresh tarragon leaves

6 garlic cloves, peeled and left whole
1 3/4 cups dry sherry
1 tablespoon low-fat yogurt

  • Heat the oil in a large non-stick frying pan and season the chicken joints with a little salt and plenty of pepper.
  • Fry the chicken, on a medium heat, in two batches, as this will mean you can get them to brown nicely, then place on a plate.
  • The chicken should be golden brown coloured, but not cooked through.
  • Put the shallots into the frying pan and cook for a couple of minutes. When they are soft and lightly golden brown add the garlic and cook for approximately 3-4 minutes until it has softened slightly.
  • Turn the heat down, return the chicken pieces to the pan, sprinkle over the tarragon leaves and pour in the vinegar and sherry.
  • Stir lightly so that all the flavours blend, and then turn the heat right down and simmer very gently for about 25 minutes.
  • Turn over the chicken pieces, so that they cook evenly, and allow to simmer for another 20 minutes.
  • Meanwhile, place a serving dish big enough for all the chicken and sauce in a low oven 275°F to warm through.
  • Take the cooked chicken, garlic and onions out of the frying pan, leaving the sauce behind and place on the warmed plate.
  • Finish off the dish by stirring the yoghurt into the remaining sauce in the pan. Check the seasoning before pouring over the chicken.
  • Sprinkle any spare tarragon leaves on top as a garnish before serving with baked potatoes, rice, couscous or pasta.

  • Place the vinegar in a nonreactive saucepan over low heat until warm. Place the raspberries and tarragon in a sterilized, wide-mouthed jar. Pour in the warm vinegar. Seal tight. Let stand in a warm place for two weeks.
  • Strain the vinegar, pressing the raspberries firmly. Place in a nonreactive saucepan with the honey and bring to a boil. Lower the heat and simmer for 10 minutes. Pour into a sterilized bottle and seal with a new cork. Keep refrigerated.

  • Pour off a little vinegar from the top of the bottle and push in the herbs and the lemon peel.

This aioli is a riff on a tartar sauce that I made for the fish and chips episode of my show Throwdown. I may not have won that particular battle, but I did come out of it with some good ideas. Fries taste delicious doused with malt vinegar, no question, but they can quickly become soggy. This aioli, fragrant with anise-flavored tarragon, blends the great taste of malt vinegar into a creamy dip for fries with even more flavor than the original combo, and none of the sogginess.

1/2 cup mayonnaise
1 1/2 tablespoons malt vinegar
2 tablespoons finely chopped fresh tarragon leaves

3/4 cup mayonnaise
3 tablespoons chopped fresh tarragon
1 tablespoon malt vinegar or cider vinegar
1 cup self-rising flour
1 1/2 teaspoons Old Bay seasoning
1 1/4 cups lager beer
Vegetable oil (for frying)
1 1/2 pounds halibut fillets, cut crosswise into 1/2- to 3/4-inch-thick slices
3 (8- to 10-ounce) red-skinned potatoes or russet potatoes, unpeeled, cut into 1/8- to 1/4-inch-thick rounds

Steps:

  • Whisk mayonnaise, tarragon, and vinegar in small bowl to blend. Season to taste with salt and pepper.
  • Whisk flour and Old Bay seasoning in medium bowl to blend. Add beer and whisk just until blended. Pour enough oil into heavy large skillet to reach depth of 1 inch; heat oil to 350°F. Sprinkle fish with salt and pepper. Working in batches, dip fish into beer batter to coat lightly, allowing excess batter to drip back into bowl. Add fish to hot oil and fry until deep golden and just cooked through, about 3 minutes per side. Transfer fish to paper towels to drain. Working in batches, add potato slices to oil and cook until golden and tender, turning occasionally, about 4 minutes. Transfer to paper towels to drain. Sprinkle generously with salt.
  • Divide fish and chips among 4 plates. Spoon tarragon-malt vinegar mayonnaise alongside and serve.

CHICKEN WITH TARRAGON & SHERRY VINEGAR image

2 medium onions, peeled, thinly sliced
1 chicken (3-4 pounds), cut into 8 serving pieces (we just used chicken thighs)
Sea salt and freshly ground black pepper to taste
3 tablespoons extra virgin olive oil
1 tbsp butter
4 shallots, peeled and sliced into thin rounds
1 head garlic, peeled and cloves left whole
Bouquet garni: several generous sprigs of fresh tarragon, parsley and rosemary and several bay leaves and celery leaves tied in a bundle with a piece of twine
6 tbsp best quality sherry vinegar
2 cup chicken stock
1 tablespoon tomato paste
1 tablespoon Dijon mustard
4 tablespoons fresh tarragon leaves, snipped with scissors
1/2 cup heavy cream

Steps:

  • 1. Liberally season chicken on all sides with salt and pepper. In a large skillet, combine oil and butter over high heat. When hot, add several pieces of chicken, skin side down (do not crowd the pan) and cook until an even golden color, about 5 minutes. Turn the pieces and brown on the other side 5 minutes or more. Carefully regulate the heat to avoid scorching the skin. When all the chicken is browned, transfer to a platter. 2. Pour off and discard all but 2 tablespoons of fat from skillet. Add the onions, shallots, garlic and bouquet garni and season lightly with salt. Sweat by cooking over low heat without coloring for about 5 minutes. Add the chicken pieces, pour about 3 tablespoons of sherry vinegar over chicken and cover. Cook very gently over low heat stirring to make sure the vegetables don't burn until chicken is cooked through, about 25 minutes. Remove and discard the bouquet garni. Transfer the chicken to a platter and cover with foil, keep warm in low oven. 3. There should be a thin film of sauce remaining in the skillet. Leave the vegetables in the pan. Over moderate heat slowly add the remaining 3 tablespoons of vinegar, scraping up any bits that stick to the bottom of the skillet. Add the chicken stock, tomato paste, mustard, and half the tarragon. Stir to blend. Increase heat to high and bring to boil, cook until sauce is thick and glossy, about 7 minutes. Off the heat stir in the cream and stir to blend. Return to low heat just to warm through. The resulting sauce should be thick, creamy, and fragrant. Taste for seasoning. 6. To serve transfer the chicken to a warm serving plate. Spoon sauce and vegetables over and alongside the chicken and sprinkle with the remaining tarragon. Serve with rice or fresh fettucine.

PAN-ROASTED CHICKEN BREAST WITH VINEGAR, MUSTARD, AND TARRAGON image

4 chicken breasts(5- to 6-ounce), with or without skin, as preferred
Salt, freshly ground pepper
2 tablespoons canola or olive oil
1 cup chicken stock
6 tablespoons apple cider or wine vinegar
2 tablespoons butter, softened
2 teaspoons Dijon mustard
2 teaspoons fresh tarragon leaves, coarsely chopped
2 teaspoons chives, snipped (optional)

Steps:

  • For the best results be sure to use a flavorful chicken stock. If yours tastes a little weak, start with two cups instead of one and let it reduce longer to concentrate the flavor. Season the chicken breasts with salt and pepper. Heat the oil over medium-high in a large skillet and when almost smoking add chicken breasts, skin-side down. Lower heat to medium and cook chicken for about 6-7 minutes, then flip (they should have an even, golden brown color) and continue cooking on the other side for about 5 more minutes. Rotate the skillet if the heat on your burner is uneven, so that you don't get any dark or burned spots, and reduce the heat if the chicken seems to be browning too quickly. When chicken is cooked, remove to a platter and cover to keep warm. Pour the excess grease from the pan and deglaze with stock and vinegar, whisking to scrape up the browned bits on the bottom of the pan. Let the liquid bubble briskly in the pan, whisking, until it's reduced to about 1/2 cup, then whisk in the butter, mustard, and tarragon. The sauce should have a lightly creamy consistency. If it's too acidic, whisk in a little more butter or stock. Remove from heat and spoon over warm chicken breasts, and sprinkle with chives, if desired
