Wild Rice and Chicken or Turkey Salad with Tarragon image

1 14 1/2-ounce can chicken broth
1/2 cup wild rice (about 3 ounces)
2 cups diced cooked chicken or turkey (about 9 ounces)
1 large celery stalk, diced
1/2 large crisp red apple, diced
1 green onion, thinly sliced
2 tablespoons minced fresh tarragon or 2 teaspoons dried, crumbled
2 1/2 tablespoons olive oil
1 1/2 tablespoons tarragon vinegar
1 teaspoon Dijon mustard
Pinch of sugar

Steps:

  • Combine broth and wild rice in small saucepan. Bring to boil. Cover and simmer over medium-low heat until rice is tender and liquid is absorbed, about 50 minutes. Transfer to medium bowl. Cover and refrigerate until well chilled.
  • Add chicken or turkey, celery, apple, green onion and tarragon to wild rice. Whisk remaining ingredients to blend in small bowl. Pour over wild rice mixture and toss well. Season with salt and pepper.

4 cups uncooked bow tie pasta
2 cups cubed cooked turkey breast
3/4 cup sliced celery
1 can (11 ounces) mandarin oranges, drained
1/2 cup reduced-fat mayonnaise
1 tablespoon orange juice
1 tablespoon Dijon mustard
2 teaspoons minced fresh tarragon or 3/4 teaspoon dried tarragon
1 teaspoon grated orange zest
3/4 teaspoon salt
1/8 teaspoon white pepper
Lettuce leaves

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Place in a large bowl; add turkey, celery and oranges. In a small bowl, combine the mayonnaise, orange juice, mustard, tarragon, orange zest, salt and pepper. Pour over pasta mixture and toss to coat. Cover and refrigerate for 1 hour. Serve over lettuce.

1 cup green grapes
3/4 cup sour cream
3/4 cup mayonnaise

1/2 cup chopped walnuts, toasted
Leaf lettuce

Using leftover Thanksgiving turkey, this recipe uses neither Mayo nor Celery. The secret ingredient is the fresh tarragon. I also recommend Arnold/Orowheat Sandwich Thins for the bread.

3 c turkey breast, cooked & chopped to 1/2 inch
1 c creme fraiche (homemade)
1 Tbsp tarragon, fresh, chopped
1/2 c green grapes, halved
1/2 c cranberries, canned, halved
1 Tbsp horseradish, prepared
2 tsp kosher salt
1/2 tsp black pepper, fresh ground
1 tsp sage, dried
arnolds/)orowheat sandwich thins or whole wheat bread
romaine lettuce leaves
1 bunch green onions

Steps:

  • 1. Place the walnuts on a separate sheet pan and toast in the oven for 7 to 8 minutes until golden. Set aside to cool. For the dressing, mix together the creme fraiche, horseradish, sage, 2 teaspoons salt and 1/2 teaspoon pepper. Fold in the chopped tarragon leaves. Place the diced turkey in a bowl, add the cranberries, walnuts and grapes. Pour the dressing over the turkey and toss well. Make sandwiches by spreading bread with creme fraiche and adding turkey salad and lettuce. Serve with green onions. Should make 4-6 sandwiches.

2 tablespoons apple cider vinegar
1 tablespoon honey, or more to taste
1 tablespoon chopped tarragon

3 tablespoons mild olive oil
1/4 pound (about 3/4/cup) green seedless grapes, large ones cut in quarters, smaller ones cut in half
1/4 pound red seeedless grapes, large ones cut into quarters, samller ones cut in half
2 ounces sweet onion
1 large rib celery, cut into 1/4-inch dice
12 ounces cooked boneless, skinless turkey breast, cut into 1 inch strips

Steps:

  • Combine the vinegar, honey, tarragon and salt and pepper to taste in a large bowl. Slowly whisk in the oil to form an emulsified dressing. I use much less oil. Add the grapes, onion, celery and turkey. Toss to coat evenly. Taste, and adjust the seasoning as needed by adding salt, pepper and/or honey. Let sit for 20 minutes before serving, or cover and refrigerate for up to 3 days.
