This was an old friend's recipe. At first I thought the combination of guacamole and BBQ sounded funky; I now think it's a match made in heaven. If you're short on time just use one of the tubs of shredded BBQ from the store, any meat works, chicken, beef or pork. I've also made soft taquitos by softening the tortillas in a hot pan and then rolling around the meat. It's a lot healtier and my husband and I like them just as well.

2 large avocados
1 (4 ounce) can diced green chilies
8 ounces sour cream
8 ounces cream cheese
1/4 lemon, juice of
Tabasco sauce
2 lbs rump roast
8 ounces barbecue sauce
24 corn tortillas
corn oil, for frying

Steps:

  • For the guacamole:.
  • Put the avocados in a bowl and mash using a fork. Add the cream cheese and mix well. Add the sour cream and chilies, followed by the lemon juice and Tabasco. Refrigerate until ready to use.
  • For the taquitos:.
  • Boil the meat in water until it shreds easily, approximately 1-2 hours. Drain and shred the meat, once it is shredded, soak in the barbecue sauce for 30 minutes.
  • Place a small amount of meat into each tortilla and roll up using a toothpick to hold together.
  • Fry in the oil until crispy and lightly browned.
  • Serve taquitos with the guacamole.

Taquitos:
2 chicken breasts, cooked, shredded
12 corn tortillas
Butter-flavored cooking spray
toothpicks
leaf lettuce, thinly sliced
guacamole
diced tomatoes
Guacamole:
2 tomatillos, husked, rinsed, quartered
1 garlic clove
1/4 cup green chili, diced
3 sprigs cilantro or parsley
1 avocado, peeled, pitted, chunked
3 tablespoons nonfat sour cream
salt and pepper to taste
fresh lemon juice, optional
1/4 cup diced onion
1/3 cup diced tomato

Steps:

  • Taquitos Instructions:Moisten shredded, cooked chicken with chicken broth. Season with salt and pepper to taste. Soften the tortillas via microwave or warm skillet and place about 1-1/2 tablespoons shredded chicken in center. Roll up tightly into a cigar shape and secure with two toothpicks.Spray tortilla rolls with cooking spray. Sprinkle with salt, to taste, and place seam side down on a baking dish. Bake at 375° for about 20 minutes, or until crisp. To serve, place taquitos on a bed of thinly sliced lettuce. Garnish with guacamole and diced tomatoes.Guacamole Instructions:Puree tomatillos, garlic, chiles, and cilantro in a blender or food processor. Add the avocado and sour cream, processing just until combined. Pour into container. Season to taste with salt, pepper, and lemon juice. Rinse onion with cold water pat dry. Stir diced onions and tomatoes gently into avocado mixture.
