Mediterranean Grilled Pork Chops with Tomato Salad image

Add dried oregano to your favorite pork dry rub, patting into the meat with a quick rest before grilling to infuse the flavor. Top the pork chops with the tomato salad and add feta cheese or kalamata olives if you'd like.

4 6-ounce boneless pork chops
1 tablespoon canola oil
1-2 tablespoons dry rub pork seasoning
1 teaspoon dried oregano
1 pound medium size tomatoes (cut in half and then quartered (about 3 cups))
1 cup fresh Italian flat leaf parsley leaves (roughly chopped)
1/3 cup sliced red onion
1/4 cup capers
1 clove garlic (pressed or minced)
2 tablespoons extra virgin olive oil
1/2 lemon
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup feta cheese

Steps:

  • Prepare the grill and clean grill grates for cooking over medium-high heat or about 350°F to 450°F.
  • Pat the pork chops dry with a paper towel and brush both sides evenly with olive oil. Generously season the pork chops with the dry rub and sprinkle the oregano evenly on each chop, patting into the meat on both sides. Rest for 5-10 minutes as the grill heats.
  • Meanwhile, prepare the tomato salad so the flavors can meld while the pork chops cook. Get the tomato salad recipe instructions here.
  • Grill the pork chops over direct heat, with the lid closed, until the pork chops are well-marked, for 8-12 minutes total, turning once. For juicy pork chops, the chops should still be barely pink in the middle and 140°F. Rest the chops for 5 minutes for the juices to set into the meat before cutting.
  • Serve the pork chops topped with the tomato salad and add chunks of feta cheese if desired.

3 medium tomatoes, seeded and chopped
1 tablespoon olive oil
1 tablespoon lemon juice
1 small garlic clove, minced
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
2 large egg whites
1 tablespoon Dijon mustard
1/2 teaspoon dried oregano
1/2 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
4 thin boneless pork loin chops (1/2 inch thick and 3 ounces each)
4 cups fresh baby spinach

Steps:

  • In a large bowl, combine tomatoes, oil, lemon juice, garlic, 1/4 teaspoon salt and 1/8 teaspoon pepper; toss to combine. , In a shallow bowl, whisk egg whites, mustard, oregano and the remaining salt and pepper until blended. 3 tablespoons capers, drained
8 anchovy fillets
1 garlic clove, minced
1/2 cup good olive oil
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon minced fresh thyme leaves
1 tablespoon chopped fresh parsley leaves
1 baguette, sliced and toasted

Steps:

  • Combine the olives, capers, anchovies and garlic in a food processor fitted with a steel blade, and pulse 3 times. Add the olive oil, lemon juice, mustard, thyme and parsley and process until chunky.

1 teaspoon Dijon mustard
2 teaspoons finely chopped fresh parsley
4 bone-in pork chops (3/4 inch thick; 6 to 8 ounces each)
Coarse salt and ground pepper
1 tablespoon fresh lemon juice
1/4 teaspoon honey
2 tablespoons extra-virgin olive oil
6 cups mixed greens
2 radishes, thinly sliced

Steps:

  • Heat broiler to high, with rack in top position. In a small bowl, combine tapenade, mustard, and parsley. Lightly season pork chops with salt and pepper and coat with tapenade mixture; place on a rimmed baking sheet. Broil pork chops until browned and cooked through, about 6 minutes, flipping once. Smothered Pork Chops with Collard Greens image

4 shoulder pork chops cut 1 1/2 inches thick
Salt and pepper to taste
1 tablespoon all purpose flour for chops, plus 2 tablespoons for sauteing vegetables
2 tablespoons reserved hock fat
1 green pepper seeded 1/4-inch sliced
2 medium onions 1/4-inch sliced
3 cups hock stock, hot
1/2 gallon ham hock stock
5 large bunches of collard greens chopped into 4-inch pieces
1 large onion peeled
1 jalapeno pepper, split in half lengthwise
Malt vinegar to taste
Salt and pepper to taste
10 pounds smoked ham hocks
10 pounds fresh ham hocks

Steps:

  • Season each chop with salt and pepper, then dust with flour. Heat a cast iron skillet just large enough to hold the pork over a medium heat. Add the reserved pork fat and brown the pork chop well-approximately 4 minutes per side. Remove the chops from the pan and set aside. If the pan is dry, add another tablespoon of fat. Add the onions and peppers. Increase the heat to medium high in order to brown the vegetables well. Sprinkle flour over the vegetables and cook, stirring constantly, for 5 minutes. Remove pan from the flame and stir in the hot hock stock until thickened and smooth. Bury the pork chops in the gravy. Cover the skillet and place in a 300 degree oven. Cook 2 hours, or until pork is very tender;
  • Collard Greens: Place hock stock in a large sauce pot over a medium high heat. Bring hock stock to a rapid simmer. Pack collards into the stock with the onion and jalapeno. Simmer 2 hours. Season to taste with salt, pepper and malt vinegar.;
  • Ham hock stock: Place ham hocks in a stock pot large enough to hold the hocks, leaving 6 inches of free space at the top of the pot. Pour enough cold water over the hocks to cover by 3 inches. Bring to a rapid simmer over a medium high heat. A thick foam will build on the top of the stock. Carefully remove all of the foam. Reduce heat to low and simmer 6 hours. Constantly skim the clear fat that builds at the top of the stock. Reserve the fat for cooking.

Seared Pork Cutlets With Green Garlic Salsa Verde image

This recipe amplifies the green in the garlic by stirring it into an herb-filled salsa verde. You can also use regular garlic, though you might want to reduce the amount by half. I also added garlic chives to the mix just because I saw them at the farmers' market and figured a little more garlic flavor could only help. (Regular chives are perfectly fine.) The sauce, with plenty of chopped parsley and mint, is intense, bright and herbal. It makes a bright counterpoint to rich slices of seared pork. I used butterflied slices of loin that cook very quickly, but you can use bone-in chops if you give them a few more minutes on the fire (or pound them first).

Flip and cook until meat is just cooked through, about 3 minutes more. Let rest 5 minutes before serving, topped with salsa verde.
