2/3 cup ketchup
1/3 cup water
3 tablespoons sugar
1/4 cup white vinegar
2 tablespoons olive oil
1/8 teaspoon paprika
1/4 teaspoon coarse black pepper
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon onion powder
1 pinch thyme
1 dash salt
2 -3 drops hot pepper sauce (optional)

Steps:

  • Combine all ingredients in a small non-reactive saucepan over medium heat, stirring, until boiling. Reduce heat to low and simmer for 5 minutes, stirring occasionally. Set aside to cool. Pour into a clean covered jar and refrigerate.
  • Makes 1 1/4 cups or 10 (2-tablespoon) servings.

Salami, Tomato and Mozzarella Salad with Tangy Vinaigrette image

1/4 cup red wine vinegar
2 tablespoons Dijon mustard
1 teaspoon dried oregano
1 small clove garlic, minced
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
6 ounces salami, cut into 1/4-inch-thick half-moons
7 ounces mozzarella pearls (bocconcini or ciliegine), drained
1 pint cherry tomatoes, cut in half
Handful torn fresh basil leaves

Steps:

  • Whisk together the red wine vinegar, mustard, oregano and garlic in a large mixing bowl. Slowly stream in the olive oil, continuing to whisk until emulsified. Season with salt and pepper. Add the salami, mozzarella, tomatoes and basil to the bowl and toss to coat with the dressing. Transfer to a serving bowl. If serving right away, toss with basil; otherwise refrigerate for up to 4 hours and toss with basil right before serving.

Iceberg Lettuce Salad with Tangy Tomato-Tarragon

1/2 large head iceberg lettuce, chopped
1 cup shredded carrots
1/2 pint cherry or grape tomatoes
2 tablespoons white wine vinegar
2 teaspoons sugar
1 tablespoon tomato paste
2 tablespoons chopped fresh tarragon leaves or 2 teaspoons dried
1/3 cup extra-virgin olive oil, eyeball it
Salt and pepper

Steps:

  • Place lettuce in salad bowl and top with carrots and cherry tomatoes. In a bowl, combine vinegar and sugar, then whisk in tomato paste. Add tarragon leaves and whisk in oil in a slow, thin stream. Season dressing with salt and pepper, to your taste. Pour dressing over salad and serve.

Very good way to use up those tomatoes! I made this salad one day trying to use up what I had on hand and it was delicious. I have made it several times since then!

2 pints cherry tomatoes (halved)
1/4 cup vegetable oil or 1/4 cup olive oil
1 tablespoon cider vinegar
1/4 cup chopped fresh parsley
2 teaspoons prepared mustard
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
3 green onions, sliced thinly

Steps:

  • Lay the halved tomatoes in the bottom of a bowl.
  • Whisk all the other ingredients together and pour over the top. Let it sit for about 1 hour in fridge.
  • Serve!
