Marinated Lamb Chops with Garlic and Herbs image

Super flavorful, herb and garlic marinated lamb chops are easy, fast, and elegant, making them perfect for guests or for every day dining.

2 tablespoons olive oil
3 tablespoons fresh lemon juice (from 1 lemon)
1 teaspoon grated lemon zest (from 1 lemon)
2 tablespoons minced fresh oregano
1 tablespoon minced fresh mint
¼ cup minced fresh parsley
4 cloves garlic, minced (about 2 teaspoons)
3/4 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
Eight 4-ounce lamb loin chops, fat trimmed, or rib chops

Steps:

  • In small bowl, mix olive oil, lemon juice and zest, herbs, garlic, salt and pepper.
  • Place lamb chops in large zip top bag. Pour marinade over and close bag. Massage marinade into chops and marinate at room temperature at least 20 minutes and up to one hour.
  • Heat grill pan over medium heat and grill 2-3 minutes per side for medium rare.
  • Rest one or two minutes before serving.
  • If desired, chops can be broiled. Preheat broiler to high, broil chops 2-3 minutes per side.

This ia great marinade! You will be happy you tried this recipe. I came up with it while messing around in the kitchen. The steaks were so juicy and tangy, I cannot wait to make these again! My husband ABSOLUTELY loved them! Preparation includes marinating time. I would double the recipe for every two steaks or four chops added, to be sure there is plenty of marinade.

2 steaks or 4 lamb chops
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon garlic (minced)
1 teaspoon capers (with just a little juice)
1 teaspoon dried thyme
1 1/2 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • Pierce beef with fork.
  • Combine all spice ingredients in a container. Generousley sprinkle with McCormick's Montreal Steak Seasoning.
  • Add meat and marinate steak or lamb chops for at least one hour.
  • Grill or Broil them.
  • Grill - Grill on both sides until desired doneness.
  • Broil - Place meat in a baking dish. Broil 6 inches from oven element for appr. 8 minutes on each side (or until desired doneness). Pour remaining marinade over beef when turning.

We love the sweet and tangy taste of this sauce ! It goes great on ribs and chicken. You can always add more crushed red pepper if you want more heat.

2 1/2 c ketchup
3/4 c apple cider vinegar
1 c brown sugar, firmly packed
1/4 c pure maple syrup
3 Tbsp worcestershire sauce
3 Tbsp liquid smoke flavoring, hickory or mesquite
1 Tbsp yellow mustard
1/2 tsp smoked paprika
1 tsp onion powder
1/2 tsp crushed red pepper
1/4 tsp ground white pepper

Steps:

  • 1. In a medium pot whisk together all the ingredients. Bring to a boil stirring constantly. Reduce heat and simmer 30 minutes. Stir often as it can scorch easily. Cool before use. Refridgerate left overs.

TANGY BEEF OR PORK MARINADE



Tangy Beef or Pork Marinade image

I created this recipe by fooling around with some ingredients. The result is a wonderful tangy marinade with a bit of a kick that I use on steaks, pork chops, roast pork and even deer meat. This is especially good for a tough cut of meat. I frequently use this for london broil and marinate overnight. If I use for a pork roast, I add more maple syrup to make it sweeter and then baste the pork roast with it when it is cooking in the oven. ETA: You can also use Agave nectar in place of honey or maple syrup as a low glycemic option.

1/4 cup red wine vinegar
1/8 cup soy sauce
1/4 cup honey or 1/4 cup agave nectar
1 teaspoon ground ginger
1/2 teaspoon ground mustard
2 tablespoons sesame oil or 2 tablespoons olive oil
1 1/2 tablespoons minced garlic
1/2 teaspoon red pepper flakes (optional)

Steps:

  • Mix red wine vinegar, soy sauce, maple syrup, ginger, mustard.
  • Stir well.
  • Taste for your own taste preferences.
  • It should have a sweet tangy taste.
  • Add garlic, sesame oil and optional red pepper flakes.
  • Mix well.
  • Pour into ziploc bag, add meat and press out all air.
  • Marinate in fridge for several hours shaking the contents often as the oil will separate.
  • I usually marinate overnight, but a couple hours is fine too.
  • Marinating overnight makes the meat extremely tender and flavorful.
  • The soy sauce measurement is low for our taste preference as we don't like it's salty taste.
  • You can adjust however you wish to your liking.
  • I don't measure any of the ingredients and I add alot of ginger and red pepper flakes because we like the additional kick.
