This incredibly easy-to-make Alabama white barbecue sauce was invented in 1925 by Robert 'Big Bob' Gibson at Big Bob Gibson's Bar-B-Q restaurant, in Decatur. Don't let this mixture's appearance stop you from trying what is a devastatingly delicious marinade, basting sauce, and serving sauce.

2 cups mayonnaise
½ cup apple cider vinegar
¼ cup prepared extra-hot horseradish
2 tablespoons fresh lemon juice
1 ½ teaspoons freshly ground black pepper
2 teaspoons prepared yellow mustard
1 teaspoon kosher salt
½ teaspoon cayenne pepper
¼ teaspoon garlic powder

Steps:

  • Mix mayonnaise, vinegar, horseradish, lemon juice, black pepper, mustard, salt, cayenne pepper, and garlic powder together in a bowl. Whisk together thoroughly until creamy and smooth. Cover and refrigerate until ready to use.

½ cup apple cider vinegar
2 Tablespoons lemon juice
1 Tablespoon Worcestershire sauce
2 teaspoons ground black pepper
1 teaspoon salt
1 teaspoon cayenne pepper
1 to 2 teaspoons horseradish

Steps:

  • Combine in a bowl, cover and chill before serving. You can add additional apple cider vinegar for a thinner sauce with a bit more bite.

1 clove garlic, minced
1 tablespoon coarse-ground black pepper
1 tablespoon spicy brown mustard
1 teaspoon white sugar

  • Mix mayonnaise, cider vinegar, garlic, black pepper, brown mustard, sugar, salt, and horseradish together in a bowl. Refrigerate 24 to 36 hours.

1 cup(s) mayonnaise
1 teaspoon(s) each fresh lemon juice, minced garlic, dijon mustard, worcestershire sauce and black pepper
1/2 teaspoon(s) kosher salt
1/8 teaspoon(s) cayenne pepper
1/4 cup(s) giadiniera plus juice (giadiniera is an italian condiment of pickled vegetables)

Steps:

  • Whisk together mayonnaise, lemon juice, garlic, Dijon, Worcestershire, black pepper, salt and cayenne. Puree giadiniera with juice from the jar, then whisk into mayonnaise mixture. Makes 1 1/3 cups. Great with poultry, shrimp or vegetables.
