1 cup plain yogurt
1 bunch cilantro, stems removed
6 garlic cloves, peeled
1 3-inch piece fresh ginger, peeled and cut into chunks
1/2 medium onion, peeled and cut into chunks
3 tablespoons garam masala
Juice of 3 large limes
Salt and pepper to taste
2 pounds lamb chops, chicken breasts (cut into 1-inch pieces), or shrimp (peeled and deveined)

Steps:

  • 1 In a blender, puree the first 8 ingredients until they form a paste.
  • 2 In a large bowl, toss your protein with the marinade. Chill for at least 4 hours or overnight.
  • 3 When ready to cook, heat the grill and shake any excess marinade from the protein. Grill 9 minutes for chops, 6 to 8 minutes a side on a covered grill for chicken, or 4 minutes a side for shrimp. Serve.

2 pounds jumbo or large shrimp
1 tablespoon minced garlic
1 tablespoon grated or crushed fresh ginger
3 to 6 fresh hot green chilies, minced
3 tablespoons lemon juice
2 teaspoons horseradish
1 teaspoon mustard powder
1/2 teaspoon carom (ajwain) seeds, crushed, or substitute 1 teaspoon dried thyme
2 teaspoons yellow food coloring (optional)
Olive oil for basting
2 medium-sized onions, peeled and cut into 1-inch pieces
Lemon slices and fresh coriander sprigs for garnish

Steps:

  • Shell and devein the shrimp, leaving the tail part on. Rinse the shrimp and pat them dry on towels.
  • Combine all the ingredients of the marinade in a large ceramic bowl. Add the shrimp and toss well. Marinate at room temperature for 30 minutes or refrigerate overnight.
  • Light and prepare a covered charcoal grill until white ash covers the coals and the heat subdues to a moderately hot level. Scatter presoaked grapevine cuttings over the coals. Lightly brush the racks with oil.
  • Thread the shrimp alternating with the onions on long thin metal skewers. Brush the shrimp with oil. Place the skewers on the rack. Barbecue, turning them two or three times, until the shrimp are opaque (about six minutes). Slide the shrimp along with the onions off the skewers onto a heated platter. Garnish with lemon slices and coriander sprigs.

Steps:

  • In a food processor fitted with a metal blade, or a blender, combine the garlic, turmeric, salt, red pepper flakes, and yogurt.
  • Blend well and place in a glass bowl until ready to use.
  • One hour before grilling, place the shrimp into the yogurt marinade.
  • Soak wooden skewers in warm water to prevent burning.
  • Place the shrimp on the skewers.
  • Grill, 4 to 6 inches from source of heat, on a rack that you have lightly coated with cooking spray for one minute.
  • Carefully turn and grill until shrimp are cooked through, another 2 to 3 minutes.
  • Place shrimp on platter and serve immediately.

2/3 cup fresh lime juice
1/2 cup vegetable oil
1 teaspoon cayenne
For tandoori marinade
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons ground coriander seeds
4 garlic cloves, crushed
a 1-inch piece fresh gingerroot, peeled and chopped
2 fresh serrano or jalapeño chilies, seeded and chopped (wear rubber gloves)
3/4 cup plain yogurt
1 teaspoon freshly grated lime zest (about 1 lime)
2 pounds medium shrimp (about 50), shelled and deveined
1/4 cup vegetable oil for frying
6 cups packed tender watercress sprigs, washed well and spun dry
1 cup fresh coriander sprigs, washed well and spun dry
3 red bell peppers, cut into julienne strips
2 firm-ripe mangoes, peeled and cut into julienne strips

Steps:

  • Make dressing:
  • Force chutney through a sieve into a bowl and whisk in lime juice, oil, cayenne, and salt to taste. Dressing may be made 1 day ahead and chilled, covered. Bring dressing to room temperature before using.
  • Make marinade:
  • In a large non-stick skillet dry-roast paprika, cumin, and coriander seeds over moderate heat, stirring occasionally, until fragrant and several shades darker, about 2 minutes, being careful not to burn them, and transfer to a bowl. 4 tablespoons plain yogurt
1 piece ginger, peeled and finely grated (2 1/2 cm cube)
1 large garlic clove, peeled and mashed to a pulp
5 teaspoons lemon juice
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 teaspoons ground roasted cumin seeds
1/4 teaspoon garam masala
2 teaspoons yellow food coloring
1 teaspoon red food coloring
3/4 lb frozen peeled shrimp, defrosted and patted dry
4 tablespoons unsalted butter

Steps:

  • Put the yogurt in a bowl.
  • Beat lightly with a fork until it is smooth and creamy.
  • Add ginger, garlic, lemon juice, salt, black pepper, ground roasted cumin seeds, garam masala, and liquid yellow and red food colouring.
  • Stir to mix and set aside for 15 minutes.
  • Add the shrimp to the marinade and mix well.
  • Marinate for 30 minutes.
  • Remove the shrimp with a slotted spoon to a bowl, keeping the marinade.
  • Melt the butter in a frying pan over medium heat.
  • When the butter has melted completely, turn heat to medium high and immediately pour in the marinade.
  • Stir and fry for a few minutes or until the butter separates and you have a thick bubbly sauce clinging to the bottom of the pan.
  • Add the shrimp and fold in; cook for a few minutes, stirring gently.
  • Do not overcook the shrimp.
  • Serve immediately.

6 tablespoons fresh lemon juice

Steps:

  • Thread shrimp on 8 10-inch skewers (if using wooden, they might not be as long so you may have to make more; soak wooden skewers in cold water for 30 minutes before threading shrimp onto them) and lay on a jelly roll sheet or any pan that will hold them in one layer.

1 large Vidalia cut into 16 pieces
16 pieces green pepper

Cooking spray
Chutney:
1/2 c. loosely packed fresh mint leaves
1/2 c. loosely packed fresh cilantro leaves
1/2 c. chopped onion
2 tbsp fresh lemon juice
1 tsp. ground cumin

1 serrano chile, seeded and chopped

Steps:

  • To prepare shrimp, combine the first 3 ingredients in a small skillet over medium heat; cook 2 min or until fragrant, stirring constantly. Cool. Place the spice mixture in a spice or coffee grinder; process until finely ground. Combine spice mixture, yogurt, and next 6 ingredients (through ground red pepper) in a large zip-top plastic bag. Add shrimp to bag; seal. Toss to coat. Marinate in refrigerator 1 hour, turning bag occasionally. Prepare grill. Combine onion wedges, bell pepper, and tomatoes in a large bowl. Drizzle with oil; toss to coat. Remove shrimp from bag; discard marinade. Thread 4 shrimp, 2 tomatoes, 2 onion wedges, and 2 bell pepper pieces alternately onto each of 8(10-in)skewers (hint - if you have enough double your skewers and "ladder" on the pieces so they don't turn around the skewer when cooking).   • Marinade: In a bowl, combine all the ingredients. Season with salt. Set aside.
  • Thread the shrimp onto the skewers and place in the marinade. Coat thoroughly.
  • Preheat the grill, setting the burners on high or preheat a ridged nonstick skillet.

  • Serve the shrimp with basmati rice and raita.
  • Tips: Garam masala is a spice mixture from the northern region of India that enhances most vegetable, fish, and meat dishes. Steps:

  • Heat ungreased 6-inch skillet over medium-high heat. Place all garam masaala ingredients in skillet; roast 2 to 3 minutes, stirring constantly, until seeds crackle, spices turn one shade darker and the mixture has a nutty, sweet aroma. Transfer to a bowl; cool 3 to 5 minutes.
  • Place roasted spice blend in spice grinder. Grind until mixture looks like the texture of finely ground pepper. Store in airtight jar at room temperature for up to 1 month; beyond that, it will start to lose its full flavor. Makes 1/4 cup spice blend; use 1 teaspoon for this recipe.
  • In medium bowl, mix 1 teaspoon of the garam masaala and all remaining shrimp ingredients in medium bowl. Cover and refrigerate 30 to 60 minutes to blend flavors but no longer than 24 hours.

4 ounces basmati rice
4 tablespoons plain yogurt
2 tablespoons tandoori curry paste
1 lb shrimp, large, raw and peeled
1/2 cucumber
3 1/2 ounces plain yogurt
2 ounces mint leaves, finely chopped
mint sprig, to serve
lime wedge, to serve (optional)

Steps:

  • Cook the basmati rice in simmering water for 12 minutes or until tender. Drain well.
  • Meanwhile, preheat the broiler to medium-high. In a bowl, mix together 4 tablespoons plain yogurt with 2 tablespoons tandoori curry paste. Add the shrimp and toss to coat. Tip onto a foil-lined baking tray, along with the marinade, and broil for 4-5 minutes or until just cooked through.
  • For the raita, peel long, thin strips from the cucumber with a vegetable peeler, then pat dry on kitchen paper.
  • Put into a bowl, add the yogurt, mint leaves and some seasoning and mix together.
  • Divide the rice between plates and spoon the shrimp and raita alongside.
  • Garnish with extra fresh mint sprigs. Serve with lime wedges, to squeeze over, if you like.

TANDOORI SHRIMP

1 RawSpiceBar's Tandoori Spice
1/2 cup lemon juice
1 tablespoon finely chopped garlic
2 teaspoons finely chopped ginger
16 jumbo prawns, shelled and deveined
1/2 cup plain yogurt
1/4 cup heavy cream
1/4 cup finely chopped red onion
1 tablespoon crushed garlic
1 teaspoon finely chopped ginger
1 tablespoon lemon juice
1/4 teaspoon ground turmeric
1 teaspoon ancho chile powder
1/2 teaspoon garam masala
1 teaspoon white pepper
4 metal or wooden skewers that have been soaked

Steps:

  • 1. Whisk together the lemon juice, garlic and ginger. Place prawns in a shallow baking dish and cover with the marinade. Let sit 15 minutes. Drain and pat the prawns dry. 2. Mix together all ingredients. Place prawns back in the baking dish and cover with the marinade. Cover with plastic wrap and refrigerate for 1 hour. Thread 4 shrimp on a skewer and grill for 3 to 4 minutes on each side.
