Yummy and very spicy grilled asparagus, sure to kick up your menu. This is probably the best asparagus I've ever had and I would love to eat it all the time!

1 lb asparagus
2 tablespoons balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon unsalted butter
1 tablespoon chulula chipoltle dry chili lime seasoning (use less if you're sensitive to heat)
1/8 teaspoon lime juice
salt

Steps:

  • Prepare asparagus by trimming ends to remove tough ends.
  • Place in a glass baking dish.
  • Melt the butter in a microwave proof bowl.
  • Add the vinegar, Worcestershire, chulula and lime juice and mix well to break up any dry ingredients.
  • Pour over the asparagus and toss.
  • Marinade for 15 minutes, tossing occasionally.
  • Place on the grill and cook until al dente, approximately 5 - 7 minutes (depends on the size of your asparagus, more for thicker, less for thinner).

1/2 cup slivered almonds, toast them, if desired
1 tablespoon olive oil
1/8 cup cider vinegar
1/8 cup teriyaki sauce
1 tablespoon sugar
1/4 teaspoon ground ginger
1/8-1/4 teaspoon pepper
salt, if needed to taste

Steps:

  • Steam/cook asparagus until tender-crisp.

1 bunch medium asparagus (about 3/4 pound)
Juice of 1 lemon (about 1/4 cup)
2 tablespoons olive oil
1 clove garlic, finely grated
Kosher salt and freshly ground black pepper
2 tablespoons crumbled feta cheese (about 1 ounce)
1 tablespoon chopped fresh mint leaves

Steps:

  • Prepare a grill for medium heat. Chop the tough, woody ends off the asparagus (about 1 inch) and peel another inch of the stalks.
  • Whisk the lemon juice, olive oil, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Add the asparagus and toss until well coated.
  • Put the asparagus on the grill at an angle so the stalks don't fall through the grates. Grill, flipping halfway through cooking, until the asparagus begin to char, the pointy ends start to crisp and the stalks are just tender, 3 to 5 minutes. 1 tablespoon brown sugar or 1 tablespoon honey
1/8-1/3 cup sesame oil
1/3 cup soy sauce
1/3 cup rice wine vinegar
3 garlic cloves, crushed and minced finely
1/4 inch fresh ginger, grated
black pepper
chili pepper flakes

Steps:

  • Put all marinade ingredients into a zip-lock bag shake and add asparagus and marinate for 1 hour to overnight.
  • Remove from marinade, cook on a hot grill about 5 minutes just till lightly browned.

1/4 cup red wine vinegar
1 tablespoon honey
Large pinch of saffron threads
1 cup mayonnaise
2 garlic cloves, minced
Asparagus
2 pounds asparagus, trimmed
3 tablespoons olive oil
1 small red bell pepper, finely chopped

Steps:

  • For aioli:
  • Whisk vinegar, honey, and saffron threads in heavy small saucepan over medium-high heat. Bring to boil. Remove from heat. Cool completely. Mix mayonnaise and garlic in medium bowl to blend. Mix in cooled vinegar mixture. Season aioli to taste with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
  • For asparagus:
  • Prepare barbecue (medium-high heat). Toss asparagus with oil on rimmed baking sheet. Sprinkle with salt and pepper. Grill asparagus until crisp-tender, turning occasionally, about 5 minutes. Transfer to platter. Drizzle aioli over asparagus. Sprinkle with bell pepper.
