These veggie-filled fiesta flats use riced cauliflower and fajita seasoning as shortcuts to flavor! Vegetarian take on taco night.

1 package Ortega® Fiesta Flats™
2 (12 ounce) packages Green Giant® Riced Veggies Cauliflower
1 (1.25 ounce) package Ortega® Fajita Seasoning Mix
1 large orange bell pepper, diced
1 cup shredded red cabbage
1 tablespoon Chopped green onions

Steps:

  • Cook riced cauliflower in a large skillet for 5 minutes. Add fajita seasoning and stir until combined.
  • Add diced bell pepper to skillet and cook until warmed.
  • Fill each Fiesta Flat with the cauliflower-bell pepper mixture.
  • Top each taco with cabbage and chopped green onions.

Today was make over Friday..I had leftover pork chops, fiesta rice with tomatoes and blacks olives as a side dish; added some refried beans, lettuce,salsa and sour cream and avocado on the side. These turned out very good and enjoyed by all.These will be great with any cooked chopped chicken, pork or ground beef or turkey.... I really like these new flat boats..

Number Of Ingredients 10

1 1/2 cup(s) cooked meat, diced small or other cooked meat
1/4 cup(s) water
a small amount of taco seasoning mix
16 ounce(s) can refried beans
1 package(s) 12 count ortega fiesta flats taco shells
16 ounce(s) jar favorite salsa
1 cup(s) dairy sour cream
2 cup(s) shredded lettuce or more
2 medium avocados, sliced
2 tablespoon(s) lime juice -more or less

Steps:

  • Cut up prepared meat in a bowl and add the water and 1 Tablespoon of taco seasoning mix. Stir to combine.Set aside.
  • Empty can of refried beans into small bowl and add 1 teaspoon taco seasoning mix.Stir to blend. Set aside.
  • Heat meat in microwave until hot, about 1 1/2 minutes. Heat beans for 40 seconds in microwave.
  • Assemble all ingredients as you would for a taco into the boat shells. Enjoy
  • rice as a side dish.
