EASY TACO CHILI

Easy and satisfying. You can cook on the stove or crock pot if you have more time. Similar to normal chili with a mexican kick. I like to eat mine like a frito pie with fritoes, mexican cheese blend, and sour cream on top.

Number Of Ingredients 10

2 lbs ground beef
1 medium onion
2 (1 ounce) packets ranch dressing mix (dry)
2 (1 1/2 ounce) packets taco seasoning
1 (15 ounce) can pinto beans
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
1 (14 ounce) can diced tomatoes
1 (10 ounce) can rotel
2 (15 1/4 ounce) cans white corn

Steps:

  • Brown beef with onions in skillet
  • Drain excess fat.
  • Dump everything (including all juices from cans) in a crock pot.
  • Add seasonings.
  • Cook 2-4 hours on high.

TACO RANCH CHILI

I saw a taco chili on a blog and decided to try it with some changes to make it more flavorful. The ranch dressing adds another note of flavor that really sets off the taco seasoning.

Number Of Ingredients 12

1 lb lean ground beef
1 pkg taco seasoning mix
1 can(s) 16 oz. black beans
1 can(s) 16 oz. kidney beans
10 oz frozen corn
1 can(s) 15 oz. tomato sauce
3 clove minced garlic
1 medium minced onion
1 chopped green bell pepper
1 jalapeno pepper (optional)
1 can(s) 28 oz. diced tomatoes
1 pkg hidden valley ranch dressing

Steps:

  • 1. Brown beef in dutch oven over medium heat. I don't drain the beef because it is lean and I use what fat there is to cook the onion and garlic.
  • 2. When ground beef is almost cooked, add onion. When onion is almost translucent, add garlic.
  • 3. Combine the remaining ingredients in the pot and stir.
  • 4. Bring to a boil then reduce to a simmer. The longer it simmers the better it is, so if you can take smelling all that wonderful chili goodness, let it simmer for at least an hour or so.
  • 5. Serve with tortilla chips, sour cream, shredded cheese, avocado. chopped green onions or tomatoes...you get the idea.
  • 6. Last but not least, consider doubling the recipe because it won't last long. Enjoy!

I saw this on Paula's Home Cooking and it is wonderful! It makes enough to feed my family at least two dinners. I serve with tortilla chips, cheese, sour cream and green onions on top!

1 (16 ounce) can kidney beans
1/2 cup pinto beans
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) package ranch dressing mix
3 tablespoons onions, minced
1 teaspoon chili powder
1/4 teaspoon cumin
2 -4 cups water
1 (11 3/4 ounce) can diced tomatoes, & green chiles (such as Rotel)
1 (16 ounce) can tomato sauce
1 lb ground beef, cooked, drained
tortilla chips
cheese
sour cream
green onion

Steps:

  • Brown ground beef with onion, drain off grease.
  • In a large pot combine all other ingredients and let simmer on low heat 2-4 hours or until beans are tender.
  • Serve with tortilla chips, cheese, sour cream, and green onions.
