There's really not a lot to this very easy-to-make dish.

1 lb 85% lean ground beef
1 tablespoon salt-free taco seasoning
1 teaspoon kosher salt
vegetable oil cooking spray
2 large eggs
1/2 cup milk
2 tablespoons all-purpose flour
1 (7 ounce) can diced mild green chilies
1 cup shredded Mexican blend cheese
1/2 teaspoon kosher salt

Steps:

  • 1. For the ground beef: In a large bowl, combine the beef, taco seasoning, and salt. Mix well.
  • 2. Grease an 7-inch round baking pan (see Note) with vegetable oil spray. Place the seasoned ground beef in the pan.
  • 3. For the topping: In a large bowl, whisk together the eggs, milk, and flour until no lumps remain. Fold in the chiles and cheese until well combined. Pour the topping over the ground beef mixture.
  • 4. Place the pan in the air-fryer basket. Set the air fryer to 350°F for 15 minutes. Use a meat thermometer to ensure the meat has reached an internal temperature of 160°F.
  • 5. Drain the fat and liquid from the pan. Let stand for 5 minutes before slicing.
  • NOTE: This recipe was written to be made in an air fryer with a capacity of 5.3 quarts or more. If your fryer is smaller than that, cut the ingredient quantities in half and cook the casserole in a 6-inch round cake pan with 4-inch sides. You could also make this in a springform pan so that you can unmold the sides and serve the casserole on a plate for a more dramatic presentation.

I always think I'll have a few left over, but I never, ever do. They are dangerously easy to put together and absolutely lovely to eat.

1/2 cup unsalted butter
1/2 cup chocolate chips
3 large eggs
1/2 cup sugar
1 teaspoon pure vanilla extract

Steps:

  • 1. Generously grease a 7-inch square baking pan with vegetable oil.
  • 2. In a microwave-safe bowl, combine the butter and chocolate chips. Microwave on high for 1 minute. Stir very well. (You want the heat from the butter and chocolate to melt the remaining clumps. If you microwave until everything melts, the chocolate will be overcooked. If necessary, microwave for an additional 10 seconds-but stir well before you try that.).
  • 3. In a medium bowl, combine the eggs, sugar, and vanilla. Whisk until light and frothy. While whisking continuously, slowly pour in the melted chocolate in a thin stream and whisk until everything is incorporated.
  • 4. Pour the batter into the prepared pan. Set the pan in the air-fryer basket. Set the air fryer to 350°F for 25 minutes, or until a toothpick inserted into the center comes out clean.
  • 5. Let cool in the pan on a wire rack for 30 minutes before cutting into squares.

This is a super speedy dinner I like to make when it is getting late and I haven't cooked yet. Chili, corn chips and cheese are topped with lettuce and tomato. Spice it up with your favorite salsa. Vegetarian chili can be found with the regular chili - it is often labeled as 'fat free'. This recipe can easily be doubled, and cooked in a 9x13 inch baking dish.

6 cups corn tortilla chips
2 cups vegetarian chili with beans
1 cup shredded Cheddar cheese
2 cups shredded lettuce
2 roma (plum) tomatoes, chopped
½ cup salsa
¼ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chips in the bottom of a 9 inch square baking dish. Pour chili straight from the can over the chips. Sprinkle shredded cheese over the top.
  • Bake for 20 to 25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving (if people are picky).

1 1/2 lbs chicken thighs (boneless, skinless, diced)
1/2 cup diced bell pepper
1 -4 jalapeno, minced

4 slices bacon
1/4 cup chopped scallion, for garnish

Steps:

  • 1. Grease a 7 1/2-inch barrel cake pan (see Note) with oil.
  • 2. In a large bowl, stir together the chicken, bell pepper, jalapeños, cream cheese, Mexican cheese blend, chili powder, garlic salt, and salt until thoroughly combined. Transfer the mixture to the prepared pan.
  • 3. Cut each bacon slice into three or four pieces. Arrange the bacon in a circle on top of the chicken mixture. Place the pan in the air-fryer basket. Set the air fryer to 400°F for 15 minutes, or until the cheese has melted and the chicken is cooked through.
  • 4. Sprinkle with the scallions and serve with vegetables and/or tortilla chips for dipping.
  • NOTE: This recipe was written to be made in an extra-deep 7 1/2-inch round pan called a barrel pan or cake barrel, which is sold as an accessory for air fryers with a capacity of 5.3 quarts or more. If your fryer is smaller than that, use a 6-inch round cake pan with 4-inch sides and increase the cooking time by 5 to 8 minutes.
