These cookies are similar to Anzac biscuits, but are not as hard. They are very quick to make, and go down well with a cup of tea.

Number Of Ingredients 7

1 tablespoon golden syrup
⅞ cup butter
1 teaspoon baking soda
1 cup flaked coconut
1 cup all-purpose flour
1 cup white sugar
2 cups rolled oats

Steps:

  • Boil butter or margarine and syrup together. Add soda. You should end up with a frothy mixture after soda is added. Stir in coconut, flour, sugar, and oats, and stir well. Press mixture lightly into a large baking tray.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool, and cut into bars.

250g pack butter
½ x 397g can condensed milk
175g golden syrup
175g cornflakes , plus a few extra
175g porridge oat
250g plain flour
100g custard powder
2 tsp bicarbonate of soda

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a few baking trays with baking parchment. Melt the butter, condensed milk and syrup in a large saucepan.
  • Very roughly crush the cornflakes in a bowl with your hands, then stir in the oats, flour, custard powder and bicarb, and mix really well.
  • Once everything in the pan has melted, take it off the heat and stir in the dry ingredients. Roughly scoop heaped tablespoonfuls of the mixture onto the baking sheets. Crumble over a few more cornflakes, then squash to flatten a bit with your hands. Bake for 12-15 mins until golden. Cool on a wire rack.

I have been making these incredibly easy, sweet treats since I was a kid, and I still LOVE THEM! I don't do the add-ins 'cause I think they are great without them. One tip: try to work fairly quickly after removing from heat because the mixture gets harder to work with as it cools. Having all the ingreds. pre-measured before starting makes this a lot easier. This is a great treat

1 cup sugar
1 cup light corn syrup
1 1/3 cups creamy peanut butter or 1 1/3 cups crunchy peanut butter
1 teaspoon vanilla
4 cups corn flakes
raisins (Optional)
peanuts (Optional)
coconut (Optional)

Steps:

  • Heat sugar and corn syrup in large saucepan until mixture reaches a boil.
  • Remove from heat.
  • Mix in peanut butter and vanilla; combine well.
  • Stir in corn flakes and desired add-ins.
  • Shape into small mounds (about 1 inch) on waxed paper to cool.

2 cups Multi-Bran Chex
2 cups Corn Chex
2 cups Cheerios
2 cups miniature pretzels
1 cup salted mixed nuts
1/3 cup butter, cubed
1/3 cup packed brown sugar
1/4 cup light corn syrup
2 to 3 teaspoons butter flavoring
1-1/2 teaspoons salt
2 tablespoons vanilla extract
1/4 teaspoon baking soda

Steps:

  • In a large microwave-safe bowl, combine the cereals, pretzels and nuts; set aside. In a large saucepan, combine the butter, brown sugar, corn syrup, butter flavoring and salt. Bring to a boil. Boil, uncovered, for 5 minutes. , In a small bowl, combine vanilla and baking soda. Remove brown sugar syrup from the heat; stir in vanilla mixture (syrup will foam). Pour over cereal mixture and toss to coat., Microwave, uncovered, on high for 2 minutes; stir. Microwave 2-3 minutes longer; stir. Microwave at 50% power for 2-3 minutes, stirring after 2 minutes. Cool for 3 minutes, stirring well several times. Spread onto waxed paper to cool.
