Porcupine Meatballs in Sauce image

These little meatballs are the start of a delicous meatball sandwich. The combination of the meat and the sauce over a hoagie bun with some cheese and lettuce is fantastic. Leftover, these meatballs were awesome over rice.

1 lb ground beef
1/2 c long grain rice, cooked
1/2 tsp garlic powder
1/4 tsp parsley flakes
1 Tbsp worcestershire sauce
1 large egg
salt and pepper
1 can(s) tomato soup
1 c v8 juice
8 oz tomato sauce
1/2 tsp italian seasoning

Steps:

  • 1. Combine beef, rice, garlic powder, parsley, worcestershire sauce, egg, and salt and pepper. in a large bowl.
  • 2. Shape meat mixture into balls, this recipe should make about 20 small meat balls. Place rounded meat balls onto a greased baking dish.
  • 3. Combine tomato soup, V8 juice, tomato sauce, Italian seasoning, and a little more salt and pepper then pour over the meatballs in the baking dish.
  • 4. Bake 1 hour in 350 Oven. Can be served over rice, potatoes, or as a sandwich.
