1/2 cup all-purpose flour
2 teaspoons salt, divided
1/2 teaspoon pepper
2 pounds beef top round steak, cut into 1/2-inch pieces
2 to 3 tablespoons canola oil
6 medium onions, thinly sliced
7 to 9 small red potatoes (about 1-1/4 pounds), halved
1 bay leaf
1 can (10-3/4 ounces) condensed tomato soup, undiluted
2 cups frozen cut green beans, thawed

Steps:

  • In a large resealable plastic bag, combine the flour, 1-1/2 teaspoons salt and pepper. Add beef, a few pieces at a time, and shake to coat. , In a large skillet over medium heat, brown beef in oil on all sides. Transfer to a greased 3-qt. baking dish. Top with onions and potatoes. Sprinkle with remaining salt; gently toss to coat. Add the bay leaf. Spoon tomato soup over top. , Cover and bake at 350° for 1-1/2 hours. Place beans around edge of dish. Bake 15-20 minutes longer or until meat and vegetables are tender. Discard bay leaf.

Number Of Ingredients 12

2 lbs beef chuck steaks, 1-inch thick, trimmed
1 medium onion, sliced
1 bell pepper, sliced
1 (10 ounce) can cream of mushroom soup
1 (14 ounce) can stewed tomatoes
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
8 small new potatoes, unpeeled and quartered
1 (9 ounce) package green beans, frozen, fresh

Steps:

  • Heat oven to 425. Line 9 x 13 baking pan with heavy-duty aluminum foil, leaving 1 1/2 inch overhang all around.
  • Cut steaks into equal portions and place in prepared pan. Top with sliced onions and bell peppers. (I always use more onion and bell peppers, personal preference).
  • Whisk together soup, tomatoes with juice, Worcestershire sauce, thyme, salt, garlic powder, and pepper in a bowl until well blended. Pour over steaks, onions and bell peppers.
  • Cover pan with large sheet of heavy duty foil; roll edges tightly with overhang to seal.
  • Bake at 425 for 45 minutes.
  • Add potatoes; reseal with foil. Bake additional 45 minutes.
  • Uncover pan; add green beans. Reseal.
  • Bake an additional 15 minutes or until beans are tender and steak is cooked through.
  • Stir well before serving.

CROCKPOT SWISS STEAK DINNER

My mother would make this when I was growing up but not in a crockpot. She has all her recipes in her head pretty much so I tried to duplicate it. I tweeked it a little, so don't tell her, and this is what I came up with. It was so darn good and all ready by the time I got home from work! Love my crockpot!

1 1/2 lb boneless sirloin beef cut in cubes
1/2 c flour
1/2 tsp salt
2 Tbsp olive oil, extra virgin
3 medium potatoes, cut in wedges
1 1/2 c baby carrots
1 medium onion cut in slices
1 can(s) italian diced tomatoes with oregano and garlic
1 can(s) cream of mushroom soup
1 tsp parsley

Steps:

  • 1. Cut your steak into cubes and flatten them a little, place in the flour, salt and pepper in a ziplock bag. Shake and coat the steak. Brown in the olive oil on both sides.
  • 2. In your crockpot layer your potatoes, carrots, beef and onions. In a small bowl combine your mushroom soup with the tomatoes then pour over the top.
  • 3. Cover and cook on low for 6 to 7 hours or until the meat and veggies are tender. Sprinkle with parsley before serving. Enjoy.
  • 4. Note: If you do not use a liner, remember to spray your crockpot with cooking spray to prevent any sticking and to make clean up easier.

3 tablespoons flour
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon dry mustard
1/4 teaspoon pepper
3 lbs chuck steaks or 3 lbs round steaks, cut in 8 pieces
2 tablespoons oil
2 cups beef broth
2 onions, sliced
1 large cabbage, cut in 6-8 wedges

Steps:

  • Combine flour, salt, paprika, mustard and pepper.
  • Coat steak well on all sides with flour mixture.
  • Heat oil in large skillet.
  • Brown steak well on both sides.
  • Pour off excess drippings if necessary.
  • Add broth and onions to meat.
  • Cover and simmer slowly about 2 hours or until meat is tender.
  • Add enough water if necessary to bring liquid level up to 1/2 inch.
  • Arrange cabbage wedges around meat.
  • Cover and let simmer 10-15 mins or til cabbage is just tender.
