- Chop the stems and leaves of 1 large bunch rainbow chard. Cook 3 smashed garlic cloves in 1/4 cup olive oil in a skillet, 1 minute. Add the chard stems; cook until tender, 5 minutes. Add one 15-ounce can black-eyed peas (drained; 1/4 cup liquid reserved). Cook 5 minutes, then add the reserved liquid. Add the chard leaves and let wilt, 4 minutes. Season with hot sauce.

- Heat a wok over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. Season steak with salt and add to wok. Cook, stirring, until beef is golden brown on both sides, about 2 minutes. Transfer to a medium bowl and set aside.
- Add another tablespoon vegetable oil to the wok and swirl to coat. Add garlic, ginger, scallions, chile sauce, sugar snap peas, and 1 pound thinly sliced Swiss chard stems (remove and tear leaves into 2-inch pieces and reserve). Cook, stirring constantly, until snap peas are bright green and crisp, about 2 to 3 minutes. Transfer to bowl with beef.
- Add another tablespoon oil to wok and swirl to coat. Add half of the Swiss chard leaves and cook, stirring, until wilted, about 1 minute. Transfer to bowl with beef and snap peas. Repeat with remaining tablespoon oil and chard.
- Return everything to wok, heat briefly, and season with salt. Squeeze with lime juice, toss to coat, and serve immediately.

- 1. Cook linguine according to package directions; drain.
- 2. In a large pot, melt the butter. Add the flour and whisk until smooth.
- 3. Cook over low heat for 2 minutes.
- 4. Add milk, salt, pepper, and nutmeg. Continue to cook, stirring, until thickened.
- 5. Add cheese and stir until cheese is melted.
- 6. Add ham and peas; then add hot cooked pasta and toss.
- 7. If the pasta has just come from the pan, serve immediately. If not, then heat over very low heat until hot throughout.

- Lightly season patty with salt and pepper. Heat olive oil in a large skillet over medium-high heat; add patty and cook until golden brown on the first side, about 3 to 4 minutes. Flip patty, move to one side of skillet. Add onions, mushrooms, salt and pepper to cleared side of skillet and cook until softened and golden brown, about 5 minutes. Add peas and cook for 1 minute more, checking to ensure patty is cooked through. Sprinkle patty with cheese and transfer to a plate. Spoon hot mushroom mixture on top and serve. BLACK EYED PEAS WITH SWISS CHARD INSTANT POT
I just got my Instant Pot and wanted to make black eyed peas. This is a Frankenstein recipe from several I found, but didn't really take a shine to. So, I made my own! It is DELICIOUS. My picky vegetarian daughter had 2 servings! Try it! Soooo easy!

- Add all ingredients to minimum 6 quart instant pot. Mix well.
- Put lid on.
- Set to manual for 40 minutes. Use quick release. 60 minute cook time includes pot warm up time.
- Serve with crusty hot bread and bask in the compliments!
SWISS PEAS
This was a recipe that they used to serve at Wednesday night suppers sometimes at the church where I grew up. Of course they made huge batches, but this is the closest I could get. They were so sweet....they knew as my mom grew older she couldn't tolerate onions or any kind, and always made her a portion without the green onions instead of just giving her plain peas.

- Cook the peas according to the package directions; drain well and set peas aside.
- Saute the green onions in butter in a medium saucepan over medium heat until tender. Reduce heat to low, and add the flour and salt, stirring well.
- Cook for 1 minute, stirring constantly. Gradually add the whipping cream and lemon rind; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
- Add the Swiss cheese; cook, stirring constantly, until the Swiss cheese melts. Stir in the reserved peas and cook until the mixture is thoroughly heated.
