SWISS GREEN BEANS
This is a family favorite of green beans, cheese, sour cream, and cereal crumbs.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a 3 quart saucepan combine 2 tablespoons melted butter, flour, onion, sugar, salt, pepper, sour cream and 4 ounces of the cheese. Cook over low heat and stir constantly until thickened. Fold in green beans. Pour into a 2 quart casserole dish and sprinkle the rest of the cheese on top.
- In a small bowl combine cereal crumbs and melted butter; sprinkle over beans.
- Bake in preheated oven for 20 minutes.

Steps:
- Cook beans according to package directions; drain.
- Heat 1 tablespoon butter in large skillet; add breadcrumbs, stirring until toasted. Remove from skillet and set aside.
- Melt 2 remaining tablespoons butter in skillet; stir in flour, salt and pepper. Heat until mixture bubbles; gradually add mustard and sour cream and blend well. Heat thoroughly but do not boil. Add beans, cheese, and onion; toss gently until well mixed.
- Spoon into a greased 1 1/2 quart casserole. Top with reserved bread crumbs. Bake at 350F for 10 minutes.

SWISS CHARD, GREEN BEANS & MUSHROOMS - STEAMED
Delicious way to serve Swiss Chard, Can also use fresh spinach and red onion with the mushrooms and cheese.

Steps:
- Wash Swiss chard and clip tough ends, wash and cut tips off green beans but leave whole.
- In the meantime, clean and slice mushrooms; Genourously pray frypan with veggie spray and saute mushrooms until browned on both sides about 5 minutes.
- Place whole green beans on the bottom of a large steamer; place Swiss chard on top of green beans, sprinkle with salt and pepper.
- Add the sauteed mushrooms on top of the Swiss chard; turn veggies over in the steamer a couple of times to mix them. Bring water to boil; reduce heat to medium and steam for approximately 10 minutes.
- Place cheese slices on top of veggies in steamer, replace lid and steam a further 2 minutes of until cheese melts. Remove from steamer, cut in half and serve immediately.

SWISS GREEN BEANS
These green beans are so tasty! I like them so much better than green bean casserole that I serve them at holiday dinners. They are really different!

Steps:
- 1. Heat the beans in a pan; set aside. In another pan, melt the butter and stir in flour, salt, pepper, onion and sugar. Gradually stir in sour cream.
- 2. Cook, stirring, over medium-low heat until thick. Drain beans and add to mixture.
- 3. Turn into a shallow baking dish. Top with grated cheese. Put under broiler for 5 minutes or until cheese melts.
GREEN BEANS WITH SWISS CHEESE

- Heat oven to 400°. Melt 1 tablespoon butter in saucepan and blend in flour and pepper; cook, stirring until bubbling. Blend in milk. Remove from heat and stir in onion and sour cream. Combine sauce with green beans and cheese. Turn into buttered 1 1/2-quart casserole. Combine cornflakes with melted butter and spread on top. Bake 20 minutes.
