Perfect picnic salad! From Moosewood's The Enchanted Broccoli Forest cookbook. The original recipe calls for adding the vinegar and lemon juice at the last minute to keep the beans nice and green and crisp! Or, you can refrigerate and serve it as more of a marinated green bean salad. Delicious both ways!

1 1/2 lbs fresh green beans, cleaned and trimmed
2 large garlic cloves, minced
1/4 cup extra virgin olive oil
1 teaspoon dried tarragon
1 teaspoon dried dill
black pepper, to taste
2 teaspoons Dijon mustard
3 -4 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
1/2 cup fresh parsley, minced
1/3 lb swiss cheese, cut in thin strips
1/2 cup chopped ripe olives
1 small green pepper, cut in thin strips
1 small red pepper, cut in thin strips
1/2 cup chopped toasted almonds or 1/2 cup slivered toasted almond

Steps:

  • Blanch the green beans until tender-crisp. Cool them under cold water.
  • Slice the cheese and veggies.
  • Prepare the dressing by whisking oil, vinegar, mustard, garlic, and herbs together.
  • Toss green beans, veggies and cheese with dressing.

Number Of Ingredients 16

1 1/2 pounds fresh, whole green beans
1/3 pound premium Swiss cheese, cut into thin strips
1/2 cup chopped ripe olives
1/2 cup thinly sliced red bell pepper
1/2 - 3/4 cup chopped, toasted almonds
Dressing:
5 tablespoons fresh lemon juice
2 large cloves garlic, crushed
1/2 cup olive oil
1 tablespoon red wine vinegar
1/2 teaspoon crushed tarragon
1/2 teaspoon dried dill weed
1/2 teaspoon salt, or to taste
freshly ground black pepper to taste
2 teaspoons prepared dark or Dijon style mustard
1/2 cup packed minced fresh parsley

Steps:

  • Wash and string green beans. Steam beans until just tender. Remove from heat; immediately rinse in cold water. Drain well; set aside. For Dressing: In large bowl, whisk together all ingredients for Dressing. Add beans and cheese; toss until Dressing is well distributed. Cover tightly and marinate 2-3 hours, stirring once an hour, at room temperature. Add olives and sliced pepper. Mix well; re-cover and marinate another 5 hours or overnight in refrigerator. Serve topped with almonds. Fun Fact: The borough and the region of Indiana, Pennsylvania, as a whole promotes itself as the "Christmas Tree Capital of the World" because the national Christmas Tree Grower's Association was founded there. Actor Jimmy Stewart was born and raised in Indiana, so the town annually holds a Jimmy Stewart film festival as part of the town's "It's a Wonderful Life" holiday celebration.

2 large cloves garlic, minced 1/3 lb. Swiss cheese, in thin strips
¼ cup extra-virgin olive oil
½ cup chopped ripe olives
1 tsp. dried tarragon
1 small green bell pepper, sliced
1 Tbs. minced fresh dill
1 small red bell pepper, sliced
½ tsp. salt (more, to taste)
3 to 4 Tbs. fresh lemon juice
fresh black pepper to taste1 Tbs. red wine vinegar
2 tsp. Dijon mustard
½ cup chopped, toasted almonds
½ cup minced fresh parsley

Steps:

  • 1) Steam the green beans until just tender. Remove from heat, and immediately rinse under cold running water. Drain well. 2) Combine everything else except the lemon juice, vinegar, and almonds in a large bowl. 3) Add the drained beans to the bowl. Toss until everything is well distributed. Cover tightly and let marinate, at room temperature or refrigerated, for at least 2 to 3 hours (longer is fine). 4) Stir in the lemon juice and vinegar within about 10 minutes of serving. Serve cold or at room temperature, topped with almonds.
