SWISS CHARD, SAUSAGE, PASTA, AND BEAN CASSEROLE
Lots of chard this summer so decided to whip up a new dish...surprise, surprise, the kids ate it all up and asked for more!

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Bring 1 teaspoon salt and water to a boil. Stir in the fusilli, and return to a boil. Cook the pasta uncovered, stirring occasionally for about 6 minutes.
- Stir Swiss chard stems and chicken bouillon granules into pasta and water. Continue cooking until pasta has cooked through but is still slightly firm, about 6 more minutes. Reserve 1 cup of the cooking liquid. Drain pasta and chard stems.
- Heat a large skillet over medium-high heat. Cook sausage links until evenly browned and no longer pink in the center. Transfer sausage to a plate and slice.
- Heat butter and red pepper flakes over medium heat in the skillet used to cook sausage; cook and stir onion and garlic in butter until tender and onion is translucent, about 5 minutes.
- Stir sliced Swiss chard leaves and balsamic vinegar into onion mixture and cook, stirring occasionally, until chard leaves are tender, about 5 minutes.
- Mix kidney beans and tomato into chard leaf and onion mixture; continue to cook for 3 more minutes.
- Stir pasta, chard stems, and 1/2 of the reserved cooking liquid into the vegetables. Season with salt and black pepper. If the sauce becomes too dry, add remaining cooking liquid.
- Transfer pasta mixture to a large baking dish.
- Arrange sliced sausage and crumbled feta cheese atop pasta, pressing the mixture down.
- Bake in the preheated oven until feta cheese begins to melt, about 15 minutes. Turn on the oven's broiler and broil until cheese is browned, 3 to 5 more minutes.

GREEN BEAN CASSEROLE W/SWISS CHEESE
This is my friend Joe Comb's recipe -- he was a great friend and a great cook! He moved away from the Atlanta area several years ago, and I no longer know how to contact him. Wherever Joe is, I hope he is aware of Recipe Zaar -- The original recipe called for french cut green beans, but I prefer whole beans that I can actually chew! 2 1/2 - 2 3/4 pounds blanched fresh beans can be substituted!

Steps:
- Preheat oven to 350 degrees.
- Mix butter, flour, sugar, salt, onion, cheese, and sour cream.
- Add drained beans and mix gently. (Blanched fresh beans can be substituted for the canned beans.).
- Pour into 8 x 8 Pyrex casserole, sprayed with PAM, or other cooking spray.
- Top with 1 1/2 - 2 cups cornflakes (or crushed buttery crackers).
- Bake at 350 degrees for approximately 25-30 minutes, or until bubbly and the topping is golden, but not burned.
SWISS GREEN BEAN CASSEROLE
This is a nice change from the traditional green bean casserole. I like it much better. This is my sister-in-law's recipe. She knows she has to bring it to all family functions and that the leftovers (if there are any) are all mine! Prep time includes the time it takes to cook the frozen green beans before assembling the casserole.

- Melt 2 tbsp butter, stir in flour, salt, pepper, sugar, onion.
- Add sour cream gradually until smooth.
- Add beans.
- Mix together and heat thoroughly.
- Pour into greased casserole dish.
- Grate cheese over top.
- Crush cornflakes and mix with melted butter.
- Put on top of beans.
- Cover and bake 20 minutes at 400.
SWISS CHEESE GREEN BEAN CASSEROLE
When I make this special-occasion veggie dish, I am ALWAYS asked for the recipe. Fresh steamed green beans provide a contrast to decadent melted Swiss cheese and crunchy topping. A family holiday favorite throughout my extended family. You can prepare ahead of time, leaving 4 to 5 minutes to steam the green beans and add other ingredients. Put into oven right before serving dinner (we usually put it in while carving the turkey).

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until slightly tender, about 5 minutes.
- Stir 2 tablespoons butter, flour, onion, sugar, and salt together in a saucepan over medium heat; gradually stir in sour cream. Cook and stir mixture until hot, thickened, and smooth, about 10 minutes. Add steamed green beans to the cream mixture. - Melt 2 tablespoons butter in saucepan. Blend in flour, salt, sugar & pepper; add milk, blend well and cook 1 minute. Remove from heat, stir in onion, sour cream and blend mixture with green beans.
- Layer green bean mixture and Swiss cheese in a buttered 2 qt. casserole dish. Combine cornflakes crumbs with 2 tablespoons melted butter and spread on top of bean mixture.
- Bake in a 400°F preheated oven for 30 minutes.
