I belonged to a swim team when I was young and couldn't resist the name of this cocktail. At the time of posting it is the highest rated cocktail on 1001 cocktails.

1 scoop crushed ice
1/4 ounce sweet cream
3/4 ounce cream of coconut
2 ounces apple juice
3/4 ounce vodka
1 1/2 ounces rum
1/4 ounce blue curacao

Steps:

  • Mix ingredients well, pour into a hurricane glass and float the blue curacao on top.
  • (To float the blue curacao- Place the bowl of a spoon very close to the liquid in the glass and close to the inside wall of the glass. Pour Blue Curacao very slowly).

Steps:

  • 3 parts Pineapple Juice 2 parts White Rum 1 part Vodka 1 part Coconut Milk 1 part Fresh Cream 1 part Blue Curacao Wedge of Pineapple Mix the Pineapple Juice, White Rum, Vodka, Coconut Milk and Fresh Cream in a shaker with ice. Half fill a highball glass with crushed ice and pour in the mixed cocktail Add the Blue Curacao to the top and add the Pineapple wedge to the edge of the glass

These Blue Curaçao cocktails are reminiscent of sunniest and warmest summer days. Blue Curaçao, known for its color, is authentically made from the laraha orange, an inedible bitter orange that only grows on the Dutch Caribbean island of Curaçao. ????????

½ cup coconut shavings, unsweetened
5 oz coconut cream
5 oz granulated sugar
4 oz medium pineapple chunks
½ oz pineapple juice
2 oz toasted coconut syrup
¾ cup coconut rum
¾ oz white rum
8 oz crushed ice
¾ oz blue curaçao
1 pineapple leaf, for garnish
½ teaspoon coconut shavings, for garnish
½ teaspoon brown sugar, for garnish

Steps:

  • Make the toasted coconut syrup: Toast the coconut shavings in a small pot over low heat until light brown and fragrant, about 5 minutes.
  • Add the coconut cream and granulated sugar to the pot. Increase the heat to medium and stir until the sugar is dissolved, about 2 minutes. The mixture will look opaque. Strain the syrup into a glass jar, discarding the coconut shavings. Let cool to room temperature, then cover with the lid and chill the syrup in the refrigerator overnight. The syrup will keep in the refrigerator for up to 1 week.
  • Make the cocktail: Add the pineapple chunks, pineapple juice, toasted coconut syrup, the coconut rum, white rum, and ice to a blender and blend until creamy.
  • Fill a chilled hurricane glass with the blue curaçao. Carefully pour the frozen mixture into the glass so it sits on top of the blue curaçao .
  • Garnish with the pineapple leaf, coconut shavings, and brown sugar.
  • Enjoy!

lime slice, optional

Steps:

  • Pour curacao, lime juice and vodka over large handful of ice in cocktail strainer.
  • Shake and strain into chilled cocktail glass.
  • Perch lime slice on glass rim, if desired.

Take a trip to the pool even in the dead of winter with this great swimming pool cake recipe! This JELL-O® Swimming Pool Cake is a tidal wave of fun - complete with a shimmery gelatin pool and bear-shape graham snacks floating on chewy fruit rings.

1 pkg. (2-layer size) yellow cake mix
2 cups boiling water
2 pkg. (3 oz. each) JELL-O Berry Blue Flavor Gelatin
1 cup cold water
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
56 mini vanilla creme-filled chocolate sandwich cookies
6 bear-shaped graham snacks
5 ring-shaped chewy fruit snacks
4 bite-size fish-shaped chewy fruit snacks

Steps:

  • Prepare cake batter and bake in 13x9-inch pan as directed on package. Cool completely. Invert cake onto platter; remove pan. Use serrated knife to cut and scoop out shallow rectangle from center of cake, leaving 2-inch border of cake on all sides and thin layer on bottom. Reserve removed cake for snacking or other use.
  • Add boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/4 hours or until slightly thickened. (Or, see Shortcut Tip for quicker set method.) Pour into center of cake. Refrigerate 3 hours or until gelatin is firm.
  • Frost borders of cake with COOL WHIP. Decorate with remaining ingredients as desired to resemble a swimming pool. Keep cake refrigerated.
