A simple, straightforward, quick recipe for pan-fried salmon. Besides salmon fillets, all you need is butter and fresh lemon juice.

2 tablespoons butter
2 tablespoons lemon juice
4 salmon fillets
salt and freshly ground black pepper to taste

Steps:

  • Melt butter in a large, heavy skillet over medium heat. Pour in lemon juice and swirl the skillet to mix melted butter and lemon juice.
  • Place salmon fillets, flesh side down, in the pan and cook until browned, about 3 minutes. Spoon lemon butter over the top of the fillets as they cook. Turn fillets over with a spatula and cook for an additional 1 or 2 minutes, depending on the thickness of the fillets. Season with salt and pepper.

1 1/2 lbs sole fillets or 1 1/2 lbs tilapia fillets
1 egg
2 tablespoons mayonnaise
1 tablespoon cream
1/2 cup flour
2 tablespoons breadcrumbs
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1 medium onion, grated (juice too)
1/8 cup parmesan cheese

Steps:

  • Wash and dry fillets.
  • Mix together egg, mayonnaise, and cream.
  • Dip fillets in this mixture, and then coat them with a mixture of flour, bread crumbs, garlic powder, salt and pepper.
  • Heat frying pan over medium heat. Add butter and melt. Saute onion and juice for a minute. Add fillets and cook until lightly brown, 2-3 minutes a side.
  • Sprinkle w/ grated parmesan cheese.
  • You may want to adjust salt, pepper, and parmesan cheese to your taste.

4 (5 ounce) mild white fish fillets
1 lemon, juiced
salt to taste
4 tablespoons all-purpose flour
1 teaspoon Chinese five-spice powder
4 tablespoons canola oil
1 tablespoon sesame oil

Steps:

  • Wash fish fillets under running cold water and dry with a paper towel. Drizzle with lemon juice and season with salt on both sides.
  • Combine flour and Chinese five-spice powder in a shallow bowl. Dip fish fillets into the flour mixture so they are covered on both sides.
  • Heat canola and sesame oils in a large skillet over medium heat. Add fish to hot oil and pan-fry for 2 to 3 minutes. Carefully turn and continue cooking until fish flakes easily with a fork, 2 to 3 minutes more.

5 large mullet fillets
1 lemon
5 teaspoons salt
pepper
dill
olive oil

Steps:

  • Slice the lemon into quarters.
  • With half the lemon, marinate the fillets with the juice.
  • Rub 1tsp salt on each fillet.
  • Sprinkle a dash of pepper and dill for each fillet.
  • Leave fillets for 1/2hour.
  • Heat oil in frying pan on medium heat.
  • Place fillets skin side down first on the pan and fry for 2mins on each side. Drizzle more oil on the fish if necessary.
  • When cooked, use the other half of the lemon and drizzle juice over.
  • Serve hot.

1/2 cup flour
1/2 cup cornmeal
1 tablespoon salt
1/2 teaspoon white pepper
1/4 teaspoon cayenne
1/4 teaspoon lemon pepper
1 pinch mustard powder
1/2 teaspoon celery salt
1 teaspoon onion powder
1 dash mace
1 cup milk or 1 cup buttermilk

Steps:
