8 ounces crab claws
1 tablespoon ketchup (tomato sauce)
1 tablespoon chili sauce
1/2 beaten egg
1/2 teaspoon oyster sauce
1/2 teaspoon sugar
1/2 cup water teaspoon cornstarch
1/2 teaspoon cornstarch
1 1/2 tablespoons oil
1 few slices ginger (finely chopped)
1 garlic (finely chopped)
some chopped cilantro (coriander leaves)

Steps:

  • Rinse the crab claws with cold water and pat dry with paper towels.
  • Heat up a wok and add the cooking oil. When the oil is heated, add the chopped garlic and ginger and stir-fry until aromatic, then follow by the crab claws. Quickly stir the crab claws a few times before adding the ketchup, chili sauce, oyster sauce, and sugar. Toss the crab claws around with the spatula before adding water. Bring the sauce to boil and then add the beaten egg. Let it cook for about 1 minute or until the egg is set. Stir the egg around, dish out and garnish with chopped cilantro. Serve immediately with steamed white rice.

For dressing:
1/2 cup rice-wine vinegar (not seasoned)
2 tablespoon sugar
1 garlic clove, minced
1/4 teaspoon hot red-pepper flakes
For salad:
1/2 seedless cucumber
1 pound king crab legs, thawed if frozen
1/2 pound Napa cabbage, cored and thinly sliced (4 cups)
1/3 cup torn basil leaves
1/3 cup torn mint leaves
1/3 cup torn cilantro leaves
Equipment:
an adjustable-blade slicer fitted with 1/4-inch julienne blade

Steps:

  • Make dressing:
  • Bring vinegar and sugar to a boil in a small nonreactive saucepan, stirring until sugar has dissolved. Remove from heat and stir in garlic, red-pepper flakes, and 1/4 teaspoon salt. Cool to room temperature
  • Make salad while dressing cools:
  • Using slicer, cut cucumber lengthwise into long julienne strips, slicing until you reach core, then rotate cucumber a quarter turn and continue slicing and rotating until left with nothing but core. Discard core and pat cucumber strips dry.
  • Cut through crab shells with kitchen shears. Remove and coarsely shred meat.
  • Toss crabmeat with cucumber, remaining ingredients, dressing, and salt to taste.

3/4 teaspoon black pepper
3/4 teaspoon sugar

My husband handed me this recipe, found in Men's Health magazine. Looks really good! Several online websites will deliver stone crab claws, so I am posting this for safekeeping. Yet to try. Note that preparation time does not include one hour chilling time.

18 -24 stone crab claws
1 tablespoon Coleman's dry mustard
2 tablespoons Dijon mustard
1 cup mayonnaise
2 teaspoons Worcestershire sauce
1 teaspoon Old Bay Seasoning
1/2 cup sour cream
salt and pepper

Steps:

  • Whip together all ingredients except crab claws and refrigerate for one hour. Serve with the stone crab claws, cooked, chilled and precracked.
