EASY SWEET AND SOUR CHICKEN
This a really easy recipe that the whole family will enjoy! Serve over rice.

Steps:
- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.
- Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.
- Cook and stir chicken in hot oil until not longer pink in the center and juices run clear, 8 to 10 minutes; remove and set aside.
- Heat 1 tablespoon vegetable oil in the same skillet over medium heat.
- Cook and stir celery, green peppers, and onion in heated oil until slightly tender, about 5 minutes.
- Return chicken to the skillet.
- Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl; pour into the skillet; bring to a boil.
- Cook and stir chicken and vegetables in sauce until heated through, 2 to 3 minutes.

SWEET & SOUR CHICKEN (OR PORK) OAMC
This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

Steps:
- Cut chicken into bite sized pieces. Place in a large zipper baggie.
- Add garlic, reserved pineapple juice and ginger root. Seat bag and squish it around to coat the chicken with the marinade.
- Place the bag in the fridge and allow chicken to marinate for 45 minutes. (this can be done in the morning).
- While chicken is marinating, chop bell pepper and onion.
- Heat oil in a large skillet or wok.
- Add green pepper and onion and saute for 3-4 minutes.
- Add chicken and marinade and cook and stir for about 10 minutes or until chicken is cooked through.
- In a small bowl, mix together cornstarch, brown sugar, vinegar, and soy sauce. STir to make sure there are no lumps. Add this mixture to the skillet. Stir.
- Add the pineapple chunks to the skillet.
- Stir until the mixture has thickened slightly.
- Serve over cooked rice.
- To freeze: Allow to cool. Package in a rigid container or in a large freezer bag.
- To serve: Thaw overnight in fridge and reheat on stovetop over medium low heat OR heat in microwave until bubbly.

NO FRY SWEET AND SOUR
A sweet and sour recipe with no batter! Can be used for chicken or pork. It's very colorful and generally has to be made in a double batch as plates get cleaned quickly.

- Dice meat- chicken or pork.
- In a large pan, brown meat over a medium heat.
- Add carrots and cook to soften.
- Add garlic, onions and pepper
- Once all vegetables are softened to desire, add pineapple and reduce heat to keep warm.
- In a sauce pan, add enough water to pineapple juice to equal 1 1/2 cup liquid, add cornstarch and mix.
- Add in sugar, vinegar, and soy sauce. Bring to boil to thicken.
- Pour over meat and vegetables.
- Serve over hot rice.

- In a large resealable plastic bag, combine 1 tablespoon soy sauce, sherry or broth, salt, garlic powder and ginger; add the chicken. Seal bag and turn to coat; refrigerate 30 minutes. , Drain pineapple, reserving juice; set pineapple aside. Add enough water to juice to measure 1 cup. In a small bowl, combine 2 tablespoons cornstarch, sugar and pineapple juice mixture until smooth; stir in vinegar, ketchup and remaining soy sauce. Set aside., Drain chicken and discard marinade. Place remaining cornstarch in a large resealable plastic bag. Add chicken, a few pieces at a time, and shake to coat. In a large nonstick skillet or wok coated with cooking spray, stir-fry chicken in oil until no longer pink. Remove and keep warm., Stir pineapple juice mixture and add to pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken and reserved pineapple; heat through. Serve with rice.,

Steps:
- Melt shortening in large skillet over medium heat.
- Add chicken or pork; sprinkle with paprika.
- Brown well.
- Cover and simmer for 20 to 25 minutes or until tender, stirring occasionally.
- Combine brown sugar, cornstarch and salt in medium bowl.
- Gradually add 2/3 cup reserved pineapple juice, vinegar, water, soy sauce, and Worcestershire sauce to dry ingredients; mix well.
- Stir into meat and cook over medium-low heat, stirring constantly until thickened.
- Add green pepper, red pepper, onion, and pineapple chunks.

SWEET AND SOUR CHICKEN (OR PORK)
I learned this recipe from my mom and I still love it! While it does take some time to make, the outcome is just as good as take-out! You will need a Fry Daddy or a frying pan with oil in order to fry the meat. Put enough oil in the frying pan so that the meat can float to the top.

- Frying the chicken (or pork): Cut up chicken (or pork) into small pieces.
- Mix breading ingredients (it will be runny).
- Dip each piece of meat into the breading then place into the oil until it turns brown.
- Make sure the meat has enough time to cook before removing it.
- Drain the fried chicken (or pork) and set aside, or place a cover over them to keep them warm.
- Sauce: Melt the margarine in a frying pan, and add the onion, green pepper and sliced carrots.
- I often add other peppers or snow peas as well.
- Once the veggies are cooked stir in the rest of the ingredients EXCEPT the pineapple.
- Cook until it boils and add cornstarch if it is too runny.
- Finally add the Pineapple for the last 5 min.

- Finally: Serve over rice if desired.
EASY SWEET AND SOUR SAUCE FOR CHICKEN OR PORK

- Mix the vinegar, brown sugar, ketchup, and soy sauce together and bring to a boil in a small pot. Mix together the cornstarch and water, add to the other ingredients and stir to thicken.

This is one of my all time favorites, in any of it's incarnations. It's from the little booklet that came with my first wok. I found it in a box of stuff I hadn't been into in years. It got me started on a stir fry binge. It's been fun to relive some of the fun I've had learning to stir fry. Like most stir fries this one's quick, easy, and delicious. Yield, prep, and cooking times are a guess.

Steps:
- Combine the sauce ingredients, set aside.
- Heat the wok over high heat.
- Add oil swirl to coat.
- Add garlic and green onions, Stir fry 1/2 minute.
- Add pork or chicken, stir fry 3 minutes or 'til is opaque.
- If doing shrimp, stir fry 2 minutes, 'til pink.
- Remove and set aside.
- Keep warm.
- Quickly wipe the wok, Reheat.
- Add oil, swirl to coat.
- Add peppers and carrots, stir fry 2 minutes.
- Add onion and tomato, (omit tomato with shrimp) stir fry 1 minute.
- Push the vegetables up the sides of the wok.
- Stir the sauce, pour into the center of the wok.
- Stir 'til bubbly.
- Return the meat to the wok.
- Add pineapple, combine with vegetables.
- For shrimp or chicken, heat and serve.
- For pork, add chicken stock, cover, cook over medium heat for 4-5 minutes 'til pork is opaque throughout.
- Serve with jasmine or basmati rice.
