SIMMERED STOVETOP PORK CHOPS
These pork chops are slow-simmered for 1 to 1 1/2 hrs in a covered skillet on the stovetop... they melt in your mouth. No knife necessary!

- Heat oil in a large skillet over medium heat. Brown pork chops in the hot oil on both sides, 5 to 7 minutes total.
- Mix water, wine, soy sauce, ginger, paprika, turmeric, salt, and pepper together in a container. Pour mixture over pork chops; it's okay if chops are not completely covered with the liquid.
- Cover the skillet with a lid or aluminum foil, leaving a gap for steam to escape, and simmer, without flipping, just until there is no liquid remaining and chops are no longer pink in the centers, 1 to 1 1/2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

- In a large skillet, heat oil over medium heat. In batches, brown pork chops 2-3 minutes on each side. Return all to pan., In a small bowl, mix remaining ingredients; pour over chops. Bring to a boil. Reduce heat; simmer, covered, 4-5 minutes or until a thermometer reads 145°. Let stand 5 minutes before serving. Freeze option: Place pork chops in freezer containers; top with sauce. Cool and freeze. To use, partially thaw in refrigerator overnight. Heat through in a covered saucepan, gently stirring sauce and adding a little water if necessary.

- Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. This was my Mother's Simmered Pork Chop recipe which I believe is the absolute best pork chop recipe I have ever tried. Easy too! Try it - you'll love it!

Steps:
- Season meat with salt& pepper.
- Brown in skillet.
- Combine applesauce, onion, catsup, water, soy sauce and sage.
- Pour over meat.
- Cover and simmer 45 minutes or until meat is tender.
- I've cooked it longer and it is still tender, moist and the sauce it has simmered in is mouth-watering!
- Use yellow or red onion-- I prefer red onion.
- I've even used cinnamon applesauce I had on hand and the chops were just as tasty and delicious.
- Often served with spanish rice and a green vegetable.

Steps:
- Preheat oven to 200°F.
- In a large skillet mix together all sauce ingredients.
- Bring to a boil over medium-high heat.
- Turn heat to medium-low and simmer, uncovered, for about 5 minutes.
- Add pork, cover, and simmer.
- Turn occasionally and continue simmering until the meat is firm and just about cooked through (about 15 minutes). Longer for thicker chops.
- Place the chops on oven safe plate or pan and place in oven.
- Turn heat to high and reduce sauce to one cup or little less - about half. Remove the ginger slices (optional).
- Plate chops.
- Spoon cause over chops and garnish with scallion or chives.
