3/4 cup regular long grain rice
2/3 cup celery, chopped
2 tablespoons onions, chopped
2 tablespoons butter, melted
1 tablespoon orange rind, grated
1 teaspoon salt
3/4 cup minute maid orange juice
1 1/4 cups water
chopped parsley (optional)
slivered almonds (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Mix the rice, celery, onion, butter, orange peel and salt together and pour into a buttered 1-quart casserole dish.
  • In a saucepan, heat the orange juice and water together to boiling.
  • Add the orange juice mixture to the casserole dish and stir.
  • Cover and bake about 45 minutes or until the rice is fluffy and tender.
  • Toss with a fork and sprinkle with chopped parsley or slivered almonds.

From Simple Hawaiian Cookery. ETA I made this for company and everyone raved. It was simple to make, creamy, and had a delicate orange flavor. It's already been requested again. :)

3 Tbsp butter
1 c celery (with leaves), diced
2 Tbsp onions, chopped
2 Tbsp orange rind, slivered
2 c orange juice
2 c cooked rice
3/4 tsp salt
1/8 tsp thyme

Steps:

  • 1. Melt butter in deep saucepan.
  • 2. Add celery and onion; cook until onion is tender, but not brown.
  • 3. Stir in orange rind and juice; bring to a boil.
  • 4. Add cooked rice, salt and thyme; mix just enough to moisten all the rice.
  • 5. Remove from heat; cover and let stand several minutes.
  • 6. Fluff with fork before spooning into center of crown roast of pork, or serve with baked ham or Hawaiian-style chicken.

2 tablespoons butter
1 1/3 cups uncooked rice
1 teaspoon salt
3/4 cup raisins
1/8-1/4 teaspoon red pepper flakes
1 inch piece gingerroot (grated or finely minced)
2 cups chicken broth
1 cup orange juice
1 tablespoon fresh parsley (chopped ~ OPTIONAL)
1 tablespoon grated orange zest (zest navel oranges before juicing)
1/4 cup almonds (slivered and toasted)

Steps:

  • Melt butter in a small dutch oven, or medium sized sauce pan, over medium heat.
  • Add rice, stirring constantly until rice is lightly browned.
  • Add salt, raisins, red pepper flakes, grated ginger-root, chicken broth, and orange juice.
  • Bring to boil; reduce heat, cover, and simmer for 20 minutes.
  • Remove from heat and let stand for 5 minutes.
  • Add fresh parsley (optional), grated orange zest, and toasted almonds.
