SWEET CREAMY BAKED RICE PUDDING



Sweet Creamy Baked Rice Pudding image

This is a fabulous baked rice pudding, it can be doubled and use all full-fat milk if desired. To achieve the best results only use aborio or any short grain white rice, and bake a low temperature oven.

1/2 cup aborio short-grain rice
3 cups half-and-half cream (or use full-fat milk)
1/2 cup sugar (or to taste)
1/4 cup butter
1 pinch salt
1/2 teaspoon pure vanilla extract
1/2-1 teaspoon cinnamon
1 pinch nutmeg (optional)
1/2 cup raisins (optional)

Steps:

  • Set oven to 300 degrees.
  • Butter a baking dish with a lid, large enough to hold the mixture (I use my White Corning ware oval baking dish for this).
  • Place all the ingredients (except raisins) in a baking dish; mix to combine.
  • To speed the oven cooking time up, you can bring to a simmer on top of the stove if desired over medium heat.
  • Cover with a lid and place in the oven to bake for about 2 hours (could take more or less time) stirring a couple of times while cooking.
  • Add in raisins the last 30 minutes of cooking.
  • *NOTE* the mixture will thicken even more after cooking.

4 c sweet rice also known as glutinous rice, soaked overnight in 8 cups of water (available in asian markets)
3 can(s) (14 ounces each) coconut cream or coconut milk
2 c brown sugar, lightly packed
1 c (8 ounces) coconut milk

Steps:

  • 1. Soak rice overnight. The next day, drain and set aside.
  • 2. Pour coconut milk and about a cup of water into a pot and let it come to a simmer over medium heat. When simmering, add soaked rice and stir constantly to prevent burning. Lower the heat if necessary. Preheat oven to 350F.
  • 3. When rice is fully cooked, sticky and almost dry (it will look like sticky risotto), about 10-15 minutes, add 1 cup brown sugar. (Note: If rice is already sticky but not yet fully cooked, add small amounts of water, stir and continue cooking. Rice must be fully cooked before it goes into the oven.) Stir well and take off heat. Pour into a lightly buttered 9×13 pan and smooth the top. Mix the remaining 1 cup brown sugar and coconut cream until smooth and pour it over the rice.
  • 4. Bake for about 1 hour or up to 1 1/2 hours, until topping is dark brown and has thickened. Cool slightly before serving.
  • 5. RICE COOKER METHOD: For an alternate (easier) method, you will need 4 cups rice (soaked overnight and drained), 2 cups coconut cream, and 2 cups brown sugar. Prepare rice in a rice cooker on the "sweet rice" setting, using as much water as needed for 4 cups rice. When done, mix in 1 cup sugar and 1 cup coconut cream. Pour into greased 9×13 pan and smooth the top. Mix remaining 1 cup brown sugar and 1 cup coconut cream until smooth, and pour over rice. Bake at 350ºF for about 1 hour or up to 1 1/2 hours, until topping is dark brown and has thickened.

This is a traditional recipe from India and it has to be one of the best things ever. In India this dish is known as Kheer.

1/2 cup basmati rice
5 cups whole milk
1 cup granulated sugar
1 teaspoon freshly ground cardamom
2 tablespoons unsalted shelled pistachios
3 tablespoons dark raisins
1/4 cup blanched slivered almond (optional)

Steps:

  • Place the rice in a medium-sized bowl. Fill the bowl with cold water and swirl the rice around to help remove the starch.
  • Carefully pour off the water, making sure not to pour out the rice that has settled to the bottom. Repeat this step 7-8 times, or until the water is clear.
  • Fill the bowl with enough cold water to cover the rice by 2 inches. Let the rice soak for 30 minutes.
  • Drain the rice and set aside.
  • Place the milk in a 6-8- quart pan over medium heat, uncovered, and bring to a boil. This will take about 10-12 minutes. Watch it carefully so it does not boil over, and stir frequently to prevent scorching.
  • Add the drained rice. Return it to a boil. This will take 1-2 minutes.
  • Reduce to a simmer and cook, uncovered, for 30-35 minutes. The rice will absorb the milk as it cooks and thickens. Stir frequently, occasionally mashing the rice with a whisk.
  • If the rice sticks, lower the heat.
  • After almost all the milk has been absorbed and the rice is very tender, add the sugar and ground cardamom. Stir well to combine all the ingredients.
  • Pour the rice into a heat-proof bowl. Let it cool for 10-15 minutes. Cover and chill completely.
  • When ready to serve, spoon the chilled dessert into individual serving dishes and garnish with the pistachios, raisins, and sliced almonds.

SWEET CORN AND RICE PUDDING

2 cups basmati or jasmine rice
6 cups skim milk
1/4 cup sugar
1 vanilla bean, split in half
8 large ears sweet corn, shucked
2 tablespoons finely chopped candied ginger
Salt to taste
1/4 cup warm late harvest riesling
1/2 cup golden raisins
2 tablespoons clover honey
1/4 cup slivered toasted almonds

Steps:

  • Combine rice, skim milk, sugar and vanilla in a medium saucepan over medium-low heat. Bring to a gentle simmer, cover, and cook until milk is nearly absorbed by rice (about 30 to 40 minutes). Remove from heat, and cool.
  • Scrape kernels off corncobs, and run through a vegetable juicer. Run pulp through vegetable juicer again. Skim foam from top. You will need 2 cups of juice.
  • Combine cooled rice and corn juice in a large saucepan. Heat over low flame, stirring occasionally until rice reaches the consistency of pudding (about 5 to 6 minutes). Be careful to keep rice moving, especially once the mixture becomes hot. Stir in ginger. Season with salt, and refrigerate 2 hours or overnight if desired.
  • Meanwhile, heat riesling over low heat until it is too hot to touch, but not simmering. Pour over raisins, and let bloom for two hours. Drain, and combine with honey.
  • To serve, spoon rice pudding into six chilled bowls, and top with raisins and toasted almonds.

Vegetable oil for greasing pan
1/2 cup sugar
1/2 cup pistachios
1/2 large loaf of challah bread, cut into 1-inch dice (about 5 cups)
6 tablespoons unsalted butter, plus more for greasing
2 tablespoons toasted pine nuts
1/2 stick cinnamon
Several threads of saffron
1 teaspoon ground nutmeg
1 teaspoon mastic crystals (optional)
1 teaspoon grains of paradise
1/4 teaspoon sea salt
6 cups half-and-half, plus more for serving
1/4 cup candied citron peel
1 bay leaf
Kosher salt
1 cup carnaroli rice
3 tablespoons sugar
1/2 vanilla bean, seeds scraped
2 tablespoons dried currants, soaked in warm water
8 sun-dried tomatoes, soaked in warm water
1 cup fresh ricotta

Steps:

  • For the pistachio praline: Oil a baking sheet. In a small saucepan over medium-high heat, cook the sugar; swirl the pan as it begins to brown. When dark caramel, remove from the heat and stir in the pistachios. Spread on the baking sheet. Cool completely, then chop finely.
  • For the pudding: Grind the challah in a food processor. Add 3 tablespoons butter and pulse until mixed. In a mini processor, grind the pine nuts, then blend with 3 tablespoons butter. Using a spice grinder, grind the cinnamon, saffron, nutmeg, mastic, grains of paradise and sea salt. In a small pan, heat 1 cup half-and-half with finely chopped citron peel and bay leaf until steaming.
  • In a large pot, bring 2 quarts water and 1 tablespoon salt to a boil and add the rice. Blanch for 1 minute, then drain. Pour 5 cups half-and-half in a saucepan over medium heat until just steaming. Stir in 3 tablespoons sugar, the vanilla bean and seeds and the ground spices. Add the rice and simmer uncovered on low heat until the rice is al dente, 45 to 60 minutes. Drain well and discard the vanilla bean.
  • Butter a 3-inch-deep, 4-quart casserole. Drain the currants. Drain and coarsely chop the tomatoes. Spread half the rice in the casserole, then spread the ricotta and sprinkle with the currants, tomatoes and pine nuts. Spread with the remaining rice. Discard the bay leaf from the citron-peel infusion and pour over the rice. Cover with bread crumbs, then the praline. Bake until the topping is crisp, 15 to 20 minutes. If desired, gently fold in half-and-half when serving.

This Portuguese sweet rice pudding recipe (receita de arroz doce) is very popular and makes an amazing dessert.

2 cups of water
1 cup of short grain (arborio) rice
2 cups of hot milk (whole works best)
1 cup of sugar
1 fresh lemon rind (use a vegetable peeler for big pieces for easier removal)
Cinnamon
2 egg yolks (optional)

Steps:

  • Bring water to a boil in medium saucepan. Add rice and cover, simmering for 20 minutes. Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes. It will also thicken some while cooling. Add 2 egg yolks slowly while mixing (optional). Pour into one large serving plate and remove lemon rind. Spread flat and allow to cool on wire rack. You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon. 1 c arborio rice
1 Tbsp transfat-free vegetable oil spread, melted
1 c cooked sweet potato cubes
1/3 c sweetened flaked coconut
1/2 c coconut milk
1 c brown sugar
1 tsp cinnamon
1/2 tsp allspice
1/2 c dried apricots, coarsely chopped
1 carton (32 oz.) vanilla flavored almond milk
1/2 c light cream

Steps:

  • 1. Stir rice and vegetable oil spread into a slow cooker coated with cooking spray.
  • 2. Puree the sweet potatoes, coconut, coconut milk, brown sugar, cinnamon, and allspice in a blender.
  • 3. Transfer to cooker and add apricots, almond milk, and cream. Stir.
  • 4. Cover. Cook on HIGH setting, stirring halfway through, for 2 to 2-1/2 hours, or until creamy. Serve with a dollop of whipped cream sprinkled with cinnamon.

1/3 cup sugar
1/2 cup light cream
2 eggs
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg

1/8 teaspoon clove
1/8 teaspoon salt
1 cup water
1 cup apple cider

Steps:

  • Purée sweet potatoes in a food processor or blender.
  • Add remaining ingredients, except water, and process until smooth.
  • Spray 4 custard cups (about 6 ounces capacity each) with nonstick cooking spray.
  • Fill about 3/4 full with sweet potato mixture.
  • Cover each cup with foil, crimping closed.
  • Place steamer plate in rice cooker and pour in water.
  • Arrange baking cups on steamer plate.
  • Bring water and cider to a boil, cover rice cooker and cook about 20 minutes.
  • Remove cups from cooker using tongs and allow to stand, covered, 5 minutes more.

2 medium sweet potatoes
1 cup water
½ cup uncooked brown rice
1 cup soy milk
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick sweet potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are easily pierced with a fork, 50 minutes to 1 hour.
  • At the same time, bring water and brown rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
  • Remove sweet potatoes from the oven and remove skin when cool enough to handle.
  • Place sweet potato flesh and cooked rice in a food processor. Add soy milk, maple syrup, cinnamon, nutmeg, and vanilla; process until smooth. Serve hot, warm, or chilled.
