Your slow cooker can be a lifesaver during holiday meals when sweet potatoes are a must and the oven is stuffed with turkey or ham and other fixings.

6 medium (2 pounds) sweet potatoes or yams, peeled and cut into 1/2-inch cubes
1 1/2 cups applesauce
2/3 cup packed brown sugar
3 tablespoons butter or margarine, melted
1 teaspoon ground cinnamon
1/2 cup chopped nuts, toasted

Steps:

  • Place sweet potatoes in 2- to 3 1/2-quart slow cooker. Mix remaining ingredients except nuts; spoon over potatoes.
  • Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.
  • Sprinkle with nuts. This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

I wanted to make a luscious sweet potato dish without all the fat, and this delicious little critter is what I came up with, it smells like the holidays in here, even though it's 100° outside!

3 medium sweet potatoes (5-6 cups sliced)
1 1/2 c plain applesauce
1/4 c brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/4-1/2 c finely chopped walnuts
salt and pepper to taste

Steps:

  • 1. Generously spray a pie plate or spring form pan with non stick spray oil, sides and bottom.
  • 2. Peel and slice sweet potatoes into rounds.
  • 3. In a large bowl mixed together 1 1/2 c. of plain applesauce, 1/4 c. brown sugar, 1 tsp. cinnamon, and 1/4 tsp. nutmeg.
  • 4. Pour sliced potatoes into bowl and make sure each potato is coated on both sides with applesauce mixture. Layer in pan and pour any leftover sauce on top and spread out. Top with walnuts.
  • 5. Bake 375° for 1-1.5 hrs. or until fork can be easily inserted. NOTE: I placed my pan on a baking sheet to prevent spills in the oven, that can increase baking time.

SWEET POTATO PANCAKES WITH APPLESAUCE AND DILL SOUR CREAM



Sweet Potato Pancakes with Applesauce and Dill Sour Cream image

1 1/4 pounds sweet potatoes, peeled
1 small onion
1/2 cup all-purpose flour
2 teaspoons fresh thyme leaves
1 teaspoon sweet paprika
2 large eggs, beaten
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
3/4 cup sour cream
2 tablespoons chopped fresh dill
Applesauce, for serving

Steps:

  • Grate the sweet potatoes and onion on the coarse holes of a box grater directly into a large bowl. Add the flour, thyme, paprika, eggs, 1 teaspoon salt and a generous grinding of pepper. Mix well to combine.
  • Heat about 1/2 inch of vegetable oil in a large nonstick or cast-iron skillet over medium heat. The oil is ready when you stick a shred of sweet potato in and it sizzles immediately. Scoop out the batter with a 1/3-cup measure and press firmly into thin patties, about 4 inches in diameter and about 1/4 inch thick. Set the patties on a parchment-lined baking sheet. You should have 8 to 10 patties.
  • Slide as many patties as will fit comfortably into the oil. Fry the patties until cooked through and golden brown on both sides (flip carefully with a spatula and fork or spoon to help guide them without splashing the oil), 3 to 4 minutes per side. Drain on a paper towel-lined baking sheet. Repeat with the remaining patties. (You can keep the first batch warm in the oven at 250 degrees F, if you like, while you cook the rest.) Season with salt while still warm.
  • To serve, combine the sour cream and dill in a small serving bowl. Serve the warm pancakes with the dill sour cream and a dish of applesauce.

5 medium sweet potatoes
5 medium tart apples, peeled and thinly sliced
1/2 cup sugar
1 tablespoon cornstarch
1 cup cold water
1 teaspoon lemon juice
1/4 cup butter, cubed
1/4 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 20 minutes or just until tender. , Drain sweet potatoes and cool slightly. Peel and cut into 1/4-in. slices. In a greased 13-in. x 9-in. baking dish, layer half of the apples and sweet potatoes. Repeat layers., In a small saucepan, combine the sugar, cornstarch, water and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in the butter, cinnamon and salt. Pour over sweet potatoes and apples., Cover and bake at 350° for 30 minutes. Uncover; bake 10 minutes longer or until apples are tender.

4 large sweet potatoes, pierced with the tines of a fork
1/4 cup (1/2 stick) unsalted butter, softened
2 tablespoons heavy cream
1/2 cup applesauce, preferably homemade
2 teaspoons grated fresh peeled ginger
1 teaspoon coarse salt
Freshly ground pepper
2 apples (1 pound), peeled, cored, and cut into 1-inch pieces
3 tablespoons sugar

Steps:

  • Preheat oven to 375 degrees. Arrange potatoes on a baking sheet lined with parchment. Bake until tender, 1 hour 10 minutes to 1 hour 20 minutes. Remove from oven; let stand until cool enough to handle.
  • Cut each potato lengthwise. Scoop flesh into the bowl of an electric mixer fitted with the paddle attachment; discard skins. Add 2 tablespoons butter and the cream; mix on medium speed until smooth. Mix in applesauce and ginger; season with salt and pepper.
  • Transfer potato mixture to an ovenproof dish. Bake until heated through, about 10 minutes.
  • Meanwhile, toss apples with sugar in a bowl. Melt remaining 2 tablespoons butter in a large skillet over medium-high heat. Add apple mixture; cook, stirring occasionally, until apples are golden and caramelized, about 10 minutes.
  • Remove potato mixture from oven; top with caramelized apples, and serve.
