Sweet Potato Turnovers with Sweet Kraut & Vegan Orange Sour Cream image

Makes 6 servings

Number Of Ingredients 29

2 cups (250 grams) all-purpose flour
2 tablespoons (28 grams) cold vegan butter
2 tablespoons (28 grams) cold all-vegetable shortening
¼ cup (50 grams) granulated sugar
2 tablespoons (28 grams) olive oil
1 teaspoon (3 grams) kosher salt
1 teaspoon (2 grams) ground cinnamon
½ teaspoon ground allspice
4 to 6 tablespoons (60 to 90 grams) cold water
Sweet Potato Filling (recipe below)
Sweet Kraut (recipe below)
Vegan Orange Sour Cream (recipe below)
1 sweet potato (200 grams), peeled and chopped into 1-inch pieces
½ cup (110 grams) firmly packed light brown sugar
3 tablespoons (42 grams) vegan butter
1½ teaspoons (6 grams) pure vanilla extract
½ teaspoon (1.5 grams) kosher salt
1 tablespoon (14 grams) olive oil
2 cups (200 grams) thinly sliced red cabbage (about ¼ head, outer leaves and stem removed)
¼ cup (55 grams) firmly packed light brown sugar
½ teaspoon (1 gram) ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon ground cloves
1 cup (240 grams) sweet Riesling
½ cup (120 grams) vegan sour cream
½ teaspoon orange zest
½ tablespoon (7.5 grams) fresh orange juice
¼ teaspoon (1 gram) vanilla extract
⅛ teaspoon kosher salt

Steps:

  • In the work bowl of a food processor, place flour, cold vegan butter, and cold shortening; pulse until mixture is crumbly. Add sugar, oil, salt, cinnamon, and allspice; pulse until combined. With processor running, add cold water, 1 tablespoon (15 grams) at time, just until a loose dough ball forms. Wrap dough in plastic wrap, and refrigerate for at least 10 minutes or up to 2 days.
  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll dough to ¼-inch thickness. Using a 4½-inch round cutter, cut dough into 6 rounds. Place 1 tablespoon Sweet Potato Filling in center of each round. Fold dough over filling, and pinch seams to seal. Use a fork to crimp edges. Place on prepared pan.
  • Bake until golden brown, 10 to 12 minutes. Let cool slightly. Serve with Sweet Kraut and Vegan Orange Sour Cream.
  • Bring a medium stockpot of salted water to a boil over high heat. Add sweet potatoes, and boil until just tender, about 10 minutes.
  • In the work bowl of a food processor, place sweet potatoes, brown sugar, vegan butter, vanilla, and salt; pulse until combined. Let cool completely.
  • In a medium skillet, heat oil over medium heat. Add cabbage; cook for 3 minutes. Stir in brown sugar, cinnamon, allspice, and cloves; cook until sugar is dissolved, about 3 minutes. Add wine, and cook, stirring occasionally, until cabbage begins to wilt and turns a dark pink color, 8 to 10 minutes. Remove from heat, and let cool completely.
  • In a small bowl, combine all ingredients. Refrigerate until ready to use.

4 (1 inch thick) boneless pork chops
2 medium sweet potatoes, peeled and sliced 1/2 inch thick
1 medium onion, sliced
2 apples - peeled, cored and sliced
1 tablespoon brown sugar
½ teaspoon ground nutmeg
¼ teaspoon salt
freshly ground black pepper to taste
1 (16 ounce) can sauerkraut, drained

Steps:

  • Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
  • Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
  • Serve pork and vegetables with juice from the slow cooker spooned over them.

2 pounds sweet potatoes, whole and unpeeled
1/4 cup granulated sugar
1/4 cup brown sugar
1 lemon, zested
2/3 cup whole blanched almonds, ground in food processor
1 teaspoon ground cinnamon
1/2 teaspoon anise extract
1 tablespoon honey
4 sheets frozen puff pastry, thawed
1 egg, beaten
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the potatoes in a medium pot and cover with water. Bring water to a boil over medium heat and cook until soft, approximately 20 minutes. Use a fork to pierce the potato to see if it is tender. Drain the potatoes and let to cool.
  • When the potatoes are cool enough to handle, peel off the skin. Cut the potatoes into large chunks and add to a mixing bowl. Mash with a potato masher or fork. Add the sugars and mix thoroughly. Stir in the lemon zest, ground almonds, cinnamon, anise extract and honey.
  • Roll out 1 of the pastry sheets on a floured cutting board. Using a 3 to 3 1/2-inch biscuit cutter, cut out as many circles of the dough as possible. Put a dollop of sweet potato filling on each circle, then fold the circles in half to form a half moon. Press the edges together with a fork to seal and arrange on sheet tray lined with parchment. Repeat with the remaining pastry sheets and filling. Brush the top of each turnover with beaten egg.
  • Bake until golden brown, approximately 15 minutes. Remove and allow to cool for 5 minutes. Arrange on a serving platter, dust with powdered sugar and serve.

FILLING:
2 cups mashed sweet potatoes (without added milk and butter)
1 can (20 ounces) crushed pineapple, drained
1-1/4 cups sugar
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1/4 teaspoon each ground ginger, allspice and cinnamon
PASTRY:
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup butter-flavored shortening
5 to 6 tablespoons cold water
Milk and additional sugar

Steps:

  • In a large saucepan, combine filling ingredients. Cook over medium-low heat for 12 minutes or until thickened, stirring occasionally. Cool. , For pastry, combine the flour, baking powder and salt in a bowl. Cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. , Divide into 12 portions. On a floured surface, roll each portion into a 6-in. circle. Spoon 1/4 to 1/3 cup filling on half of each circle. Moisten edges with water; fold dough over filling and press edges with a fork to seal. , Place on greased baking sheets. Brush with milk and sprinkle with sugar. Cut slits in top. Bake at 425° for 15-20 minutes or until golden brown.
