4 large sweet potatoes(2 1/2 pounds), cut in half
cooking oil
2 tablespoons butter
1 cup finely diced yellow onion (about 1 medium onion)
1/2 cup finely diced celery, (about 2 celery stalks)
3 garlic cloves
1 teaspoon dried oregano
3/4 teaspoon ground ginger
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 cups chicken or vegetable stock
14 ounces canned coconut milk
Additional salt and black pepper to taste

Steps:

  • Begin by roasting the sweet potatoes. Preheat oven to 400-degrees F. Line a baking sheet with baking parchment. Coat sweet potato halves with oil. Place down on lined baking sheet. Roast for 30 minutes at 400-degrees F. Discard peels. Transfer to a bowl and thoroughly mash.
  • While sweet potatoes are roasting, heat a large saucepan over medium heat. Add butter and allow to melt. Add diced onion and celery; cook, stirring occasionally, for 5 minutes. Grate garlic cloves directly into pan. Sprinkle in dried oregano, ground ginger, ground cumin, salt and pepper. Cook, stirring constantly for 1 minute.
  • Stir in stock and coconut milk. Bring to a low simmer; continue to simmer on low heat until potatoes are ready.
  • Whisk in mashed sweet potatoes until combined. Salt and pepper to taste. For a smoother consistency, carefully transfer soup to a food processor or blender (work in batches if needed), and process until smooth. Be sure to vent the lid to avoid minor explosions. An immersion blender also works great!
  • Serve warm. If you so desire, garnish with chopped chives or green onion, greek yogurt or sour cream, toasted pecans or walnuts.

2 sweet potatoes
2 white potatoes
1 turnip
½ cup heavy whipping cream
6 cups chicken broth
1 tablespoon brown sugar
1 ½ teaspoons ground nutmeg
2 tablespoons margarine
salt to taste
ground black pepper to taste

Steps:

  • Peel and cut vegetables into small, uniform pieces. Place in a pot, and cover with the chicken stock; use only the amount of stock needed to cover. Bring to a boil, and cook until vegetables are tender.
  • Place vegetables and liquid into a food processor. Puree.
  • Return pureed vegetables to the saucepan. Slowly stir in the cream, brown sugar, nutmeg, and butter. Add salt and pepper to taste.

3 slices bacon, finely chopped
1 medium onion, chopped
2 tablespoons butter
3 cloves garlic, sliced
4 lbs sweet potatoes, peeled and cubed
8 cups chicken broth
1/4 cup pickled jalapeno pepper, coarsely chopped
2 tablespoons jalapeno juice
1 teaspoon comino (cumin)
1/4 teaspoon baking soda
1/2 cup cilantro leaf
1 1/2 cups milk
1 teaspoon salt
1 teaspoon black pepper, freshly ground

Steps:

  • In a large stock pot, saute bacon and onion in butter until just tender.
  • Add garlic and cook about 2 more minutes.
  • Add sweet potatoes, chicken broth, pickled jalapeños, jalapeño juice and comino.
  • Cover and cook until potatoes are tender (approx. 20 to 30 minutes).
  • When done, add soda, cilantro and milk.
  • Coarsely mash potatoes with a potato masher.
  • Stir well and re-adjust salt and pepper.
  • Simmer for 15 minutes, stirring frequently.
  • NOTE: You may garnish with sour cream and 3 or 4 fresh jalapeños, cut in thin lengthwise strips.

1 tablespoon peanut oil
1/2 cup chopped onions
2 teaspoons minced garlic
3 medium sweet potatoes (about 2 1/2 pounds total), peeled and cut into 1-inch cubes
4 cups vegetable or chicken stock
1 medium jalapeño, seeded and finely chopped
1 cup fresh or frozen corn kernels
2 tablespoons molasses
1/2 tablespoon kosher salt
1/4 teaspoon ground cayenne
1/4 teaspoon black pepper
Scant pinch ground cinnamon
Finely chopped scallions, green parts only

Steps:

  • In a large saucepan or soup pot, heat oil over medium heat. Add onions and garlic and sauté until just soft, 2 to 3 minutes. Add sweet potatoes and stock and bring to a boil.
  • Reduce heat and simmer until potatoes are soft, about 10 minutes. Remove from heat. Using an immersion blender or a food processor, purée contents of pot, in batches if necessary, until smooth.
  • Reheat soup, stirring in jalapeño, corn, molasses, salt, cayenne, black pepper and cinnamon. Taste, adjust seasonings and serve, topped with scallions.

4 slices bacon
1 small red onion, cut into 1/4 inch dice
1 red bell pepper, cored,seeded,and cut into 1/4 inch dice
salt & freshly ground black pepper
1 lime, juice of
5 cloves garlic, smashed
1/2 teaspoon finely chopped fresh ginger
2 small white onions or 2 small yellow onions, roughly chopped
2 tablespoons dark brown sugar
salt & freshly ground black pepper
1 teaspoon pureed chipotle chile in adobo
3/4 cup dry white wine
3 large sweet potatoes, peeled and cut into 1/2 inch dice
6 cups chicken stock
6 tablespoons butter, chilled and roughly chopped
1/2 lime, juice of

Steps:

  • To make the salsa, cook the bacon in a large, heavy skillet over medium heat, turning once, until crisp, about 10 minutes.
  • Crumble the bacon and reserve.
  • Pour most of the bacon fat into a heat-proof container, leaving only enough to coat the pan lightly, and reserve.
  • Add the onion and red pepper to the pan in which the bacon coked in and sauté over medium heat, stirring, until brown, about 6 minutes.
  • Season to taste with the salt and pepper.
  • Add the reserved bacon and the lime juice.
  • Correct the seasonings, transfer to a small bowl, and set aside at room temperature.
  • To make the soup, return the reserved bacon fat to the same pan and place over medium heat.
  • Add the garlic, ginger, onions, and brown sugar, season with the salt and pepper to taste, and sauté, stirring, until the vegetables are brown, about 6 minutes.
  • Stir in the chipotle puree and wine, and cook over medium heat until the mixture is reduced by about three-fourths, approximately 6 minutes.
  • Add the sweet potatoes and stock and simmer until the potatoes are very soft, 20 to 25 minutes.
  • Using a hand blender or food processor, puree the soup mixture.
  • Add the butter one piece at a time, blending again after each addition, to thicken the soup slightly.
  • Stir in the lime juice and correct the seasonings.
  • Immediately ladle into bowls, spoon a portion of the salsa onto each and serve.

3 lbs sweet potatoes
4 cups chicken broth, or 4 cups water with 4 cubes chicken bouillon
1 medium onion, chopped
3 garlic cloves, minced
5 slices bacon
6 tablespoons butter
1/4 cup jalapeno
2 teaspoons cumin
1/2 cup chopped cilantro
1/2 cup half-and-half
salt and pepper to taste

Steps:

  • First, preheat your oven to 400 degrees, rinse off your jalapenos, wrap in foil, and throw them in for 20 minutes. Then take them out and give them a rough chop. Scrub your sweet potatoes and cut them in half. Bring a large pot of water to boil and add in sweet potatoes. Boil until you can stick them and they are soft. Drain and let them cool until you can handle them. Peel off the skin, set aside. While potatoes are cooling, add butter to the soup pot over medium-high heat. Add onion, saute until onions are translucent, add garlic and saute about one more minute. Cook your bacon separately in the microwave, oven, or in a skillet. When cooked, break 3 of the slices into pieces and add to the onions and garlic. Add chicken broth to the pot, cover and bring to a boil. Slice the peeled sweet potatoes into bite sized pieces and add to the soup pot. Add jalapenos, cumin, cilantro, and half-and-half. Stir into soup. Sprinkle with a little salt and pepper. Use your immersion blender or regular blender, to blend all the ingredients until they are smooth with no lumps. Add salt and pepper to taste. Sprinkle remaining bacon and some cilantro on top.

1/4 tsp (1 mL) each salt and pepper
3 sweet_potatoes, peeled and cubed (2 lb/1 kg)
4 cups (1 L) chicken stock
Topping:
1 cup (250 mL) thawed corn kernels
1/4 cup (50 mL) minced red or green onion
2 tbsp (25 mL) minced fresh coriander
1 tbsp (15 mL) minced jalapeño pepper
1-1/2 tsp (7 mL) lime or lemon juice
1/4 tsp (1 mL) salt
1/2 cup (125 mL) light sour cream

Steps:

  • In large saucepan, heat oil over medium heat; fry onion, garlic, salt and pepper until softened, about 3 minutes. Add sweet potatoes and stock; bring to boil. Reduce heat, cover and simmer until potatoes are tender, about 20 minutes. In batches in blender, pur?soup until smooth. (Make-ahead: Let cool for 30 minutes.
