CORNISH GAME HENS WITH SWEET-POTATO RISOTTO AND CRANBERRY SAUCE

1 cup sugar
1 cup water
1 cup cranberries
1/4 cup ruby Port
2 Cornish game hens, halved lengthwise
2 tablespoons (1/4 stick) butter
1 pound yams (red-skinned sweet potatoes), peeled, cut into 1/2-inch pieces
1 onion, chopped
1/4 teaspoon minced peeled fresh ginger
2/3 cup arborio rice or medium-grain rice
1/4 cup dry Riesling wine
2/3 cup mascarpone cheese*
1/4 cup walnuts, toasted, chopped
1/4 cup chopped fresh parsley
1 teaspoon grated orange peel

Steps:

  • Bring first 4 ingredients to simmer in heavy medium saucepan over medium-high heat, stirring until sugar dissolves. Boil until reduced to 1 cup, stirring frequently, about 20 minutes. Puree sauce in processor. Strain into small bowl. (Sauce can be made 1 day ahead. Cool, cover and chill.)
  • Preheat oven to 400°F. Place game hens, cut side down, on small baking sheet. Sprinkle with salt and pepper. Bake 30 minutes. Increase oven temperature to 450°F. Continue baking until juices run clear when thickest part of thigh is pierced, about 20 minutes longer.
  • Meanwhile, melt butter in heavy large skillet over medium-high heat. Add yams, onion and ginger; sauté until yams are tender, about 15 minutes. Remove from heat. Cook rice in small saucepan of boiling salted water until just tender but still firm to bite, stirring frequently, about 15 minutes. Drain rice. Add rice to yam mixture in skillet. Add Riesling and stir over low heat to blend. Add mascarpone and stir to melt. Season with salt and pepper.
  • Rewarm sauce. Spoon risotto onto plates. Top with hen. Sprinkle with nuts, parsley and orange peel. Drizzle sauce around risotto.
  • *Italian cream cheese, available at Italian markets and many supermarkets. If unavailable, blend 8 ounces cream cheese with 1/4 cup whipping cream and 2 1/2 tablespoons sour cream. Use 2/3 cup mixture for the recipe.

4 shallots, brunoise
1 tablespoon butter
4 large sweet potatoes, brunoise (needs to be the size of risotto)
3 to 4 cups hot chicken broth
2 pounds large scallops, U-10's or bigger (10 scallops/pound)
1 tablespoon minced garlic
1/2 tablespoon minced ginger
1 pound chanterelles, cleaned
Salt and black pepper to taste
Canola oil to cook
Juice of 1 lemon
1 tablespoon truffle oil
1/2 cup virgin olive oil
1 pound haricot verts, blanched and shocked
1 bunch chives cut into batons (1-inch)
Truffle oil to garnish
Salt and Black pepper to taste
1 large sweet potato, spaghetti cut using turning slicer
1 Peruvian purple potato, peeled and sliced
Salt to taste
Canola oil for frying

Steps:

  • It is important that the sweet potato 'risotto' dice are all the same size. Traditional risotto cooking technique is used. In a 2 quart casserole, first saute the shallots in butter and season. Add the sweet potato and saute. Slowly add the hot chicken stock, one ladle at a time. Only add more stock after the previous ladle is fully absorbed. Continue adding stock until the 'risotto' gets creamy, but not mushy. The individual grains of 'risotto' should remain distinct.
  • Season the scallops with salt and pepper. In very hot saute pan, coat with oil and sear the scallops until brown. Flip scallops and brown other side. Total cooking time should be about 8 minutes. Wipe pan out, return to high heat, coat with canola oil, add garlic and ginger and saute until soft. Add chanterelles and season. Cook for about 6 to 8 minutes.
  • HARICOTS VERTS SALAD: In a stainless steel bowl, mix lemon juice, truffle oil and olive oil. Season with salt and pepper. Toss vinaigrette with the haricots verts. Check for seasoning. Garnish with chives.
  • FUNKY SWEET POTATO GARNISH: Wrap the sweet potato hair around a slice of purple potato. In a 300-degree fryer, fry until golden brown, about 4 to 5 minutes. Salt to taste and drain well.
  • PLATING: Using a ring mold or pvc pipe, fill bottom third with the hot chanterelles, then cover with 'risotto.' Place in the center of a plate. Surround with scallops and top with haricot verts salad. Garnish with truffle oil, chive batons and funky garnish.

1 1/2 cups chopped sweet onions (3 medium)
3 medium cloves garlic, finely chopped
12 oz dark-orange sweet potatoes (about 2 medium), peeled, finely chopped (about 3 1/2 cups)
1 1/4 cups uncooked pearl barley
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1 carton (32 oz) Progresso™ chicken broth (4 cups) or vegetable broth
1 cup frozen shelled edamame (green) soybeans (from 12-oz bag), thawed
2 tablespoons shredded Parmesan cheese

Steps:

  • In 10-inch nonstick skillet, heat oil over medium heat. Add onion; cook about 5 minutes, stirring occasionally, until translucent. Add garlic; cook, stirring frequently, until softened.
  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix sweet potatoes, barley, thyme, salt and 3 cups of the broth. Add onion-garlic mixture.
  • Cover; cook on Low heat setting 4 to 5 hours.
  • In 2-cup microwavable measuring cup, microwave remaining 1 cup broth on High 2 to 3 minutes or until boiling. Stir thawed edamame and boiling broth into barley mixture in cooker. Increase heat setting to High; cover and cook 25 to 30 minutes longer or until edamame are tender. Serve in shallow bowls; sprinkle with cheese.

3 tablespoons olive oil
1 large onion, coarsely chopped

2 cups dry red wine
4 to 6 cups homemade chicken stock
2 serrano peppers, finely diced
1/2 cup dark brown sugar
1 cup red wine vinegar

8 to 10 cups water
2 tablespoons unsalted butter
1 tablespoon olive oil
1 large onion, finely chopped
Salt and freshly ground pepper
2 cups arborio rice
1 cup dry white wine
1 large sweet potato, baked, peeled and pureed
2 tablespoons cold unsalted butter
1/2 cup grated Parmesan
2 tablespoons pine nuts, lightly toasted
2 cups balsamic vinegar, reduced to 1/4 cup
Roasted Chanterelles, recipe follows
2 teaspoons truffle oil
1/2 pound chanterelles
2 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season shanks on both sides with salt and pepper, to taste. Heat oil in a large rondeau until almost smoking. Add shanks and sear on both sides until golden brown. Remove shanks to a plate.
  • Add onion, carrots, celery, and thyme to the pan, season with salt and pepper and cook until the vegetables are golden brown. Return the lamb to the pan, add the wine, and cook until completely reduced. Add stock to cover and bring to a boil. Cover and place in the oven. Cook for approximately 2 1/2 hours or until the meat is very tender.
  • Strain sauce through a fine strainer into a medium saucepan. Add the serrano, sugar, and vinegar and cook until reduced by 1/2. Season with salt and pepper, to taste.
  • Serve with Sweet Potato Risotto with Roasted Chanterelles.
  • Place water in a medium saucepan and bring to a boil. Heat oil and butter in a medium high-sided saute pan. Add onion, season with salt and pepper, and cook until soft. Add rice and toss to coat in the mixture. Add wine and cook until completely reduced. Add 2 cups of the boiling water and cook until absorbed. Continue adding 1 cup of water at a time and cook, stirring often, until all liquid is absorbed. Repeat until rice is al dente.
  • Stir in the sweet potato and mix until combined. Add the butter and Parmesan, and season with salt and pepper, to taste. Fold in the pine nuts and reserved chanterelles, and scrape the mixture into a bowl. Drizzle with the balsamic glaze and the white truffle oil.
  • Preheat oven to 425 degrees F.
  • Place mushrooms in a medium baking pan, toss with oil and season with salt and pepper, to taste. Roast until golden brown, about 15 to 20 minutes.

4 Rock Cornish game hen breasts with bone (8 halves)

Cinnamon
3 sweet potatoes, plus 1, sliced thinly and fried

1/4 cup Port wine
12 ounces Arborio rice, cooked

  • Rub hen breasts with salt, pepper, and cinnamon. Let sit for 10 minutes.
  • Preheat oven to 350 degrees F. Dice 3 sweet potatoes. Heat skillet, add sweet potato with butter and ginger. Toss until lightly brown. Place in the oven and roast until slightly al dente. Reserve.
  • Combine sugar, water, and cranberry, and Port wine in same pot. Reduce slowly until thick. Puree and put through chinois. Put back on the stove and reduce until syrupy. Reserve.
  • Add risotto to pan. Add Riesling. Scrape 1/2 vanilla bean, stirring until incorporated. Add mascarpone. Fold in roasted sweet potato.
  • Sear off game hen breasts and finish in oven, keeping tender and juicy. Blanch orange zest in hot water for approximately 2 minutes.
  • Put risotto in the bottom of a bowl or plate, with game hen breasts crossed on the top. Garnish with crispy sweet potato, toasted walnuts, chervil, and drizzle with cranberry syrup. Top with orange zest.

For Christmas 2005 my sweet husband got me a bunch of low fat cookbooks. So for my favorite has been a Canadian one called "125 Best Vegetarian Slow Cooker Recipes" by Judith Finlayson. This is an adaptation of a recipe from that cookbook that we enjoyed. If you desire some cheese can be sprinkled on the finished product, but we didn't think it needed it. For the record, I used an olive oil infused with garlic. Olive or vegetable would be good here.

1/2 tablespoon olive oil
2 -2 1/2 onions
1 teaspoon minced garlic
1/2 teaspoon dried rosemary
1 1/2 cups pearl barley
3 cups vegetable stock
2 sweet potatoes

Steps:

  • Chop your onions finely.
  • Peel the sweet potato and chop into small pieces. I like to keep my chopped sweet potato in a bowl of water until I need it because I think it keeps it from changing color.
  • Heat a large skillet over medium heat with the oil in it. When the oil gets hot add the onions and cook until softened, stirring frequently.
  • Then add the garlic and rosemary and stir for about a minute.
  • Stir in the barley and stir until the barley is combined well.
  • Add the stock and bring to a boil.
  • Drain the sweet potatoes (if they were in water) and place into a large crockpot.
  • Pour the boiling stock mixture over top and stir well.
  • Cook on low for 8 hours until the barley and sweet potato are cooked through. If possible open the crockpot about halfway through and stir well.

Tasty risotto recipe with chicken, sweet potato, leeks and tarragon for cold winter evenings.

Steps:

  • Preheat the oven to 200C/fan 180C. Put the sweet potato in a mixing bowl, coat in the olive oil, add the garlic and mix until the sweet potato is coated in garlicy oil. Put on a baking tray and in the oven for 20 mins. When this is done, leave on the side until needed.
  • Meanwhile, put some oil in a frying pan on a medium/high heat and quick fry the chicken till a crust appears. Take off the heat and put on a plate to one side. Put the chicken stock in a saucepan and bring to a simmer.
  • Put the frying pan back over a low heat and add the butter till bubbling. Fry the leeks and tarragon over the low heat until soft. Don't allow to colour. This should take about 10 mins. Then add the rice and stir to coat the grains in the butter. Fry for a minute or two more then add the White Wine. Bring the flame up to a medium heat and stir until the wine has nearly evaporated.
  • Add the chicken to the rice. Now ladle a small of amount (about 2 ladles worth) of the simmering stock into the pan. Stir occasionally until the fluid has nearly evaporated. Repeat for around 20-25 mins until the rice is translucent, cooked but has a bite.
  • Turn off the heat. Season, grate the Parmesan onto the Risotto and add the cooked sweet potato. Stir until the cheese has melted and serve in bowls.

OVEN BAKED SWEET POTATO & CHICKEN RISOTTO

I adapted this from a recipe I found in a Marie Claire cookbook. It is dead simple, but does need a little careful watching towards the end to prevent it from getting too dry.

2 cups arborio rice
700 g diced sweet potatoes
5 cups chicken stock
2 tablespoons butter
2 cups diced cooked chicken
1/2 cup grated parmesan cheese
2 teaspoons chopped fresh thyme
salt and pepper

Steps:

  • Preheat oven 190°C.
  • Put rice, sweet potato, stock and butter in oven proof dish. Seal with foil or place on a well fitting lid.
  • Cook for 30 minutes, then check and stir. Cook further 5 minutes.
  • Remove, add chicken, cheese, thyme, salt and pepper and stir until creamy.
  • Serve immediately.

4 Shallots; brunoise
1 tb Butter
4 lg Sweet potatoes, brunoise
3 c Hot chicken broth
1 tb Minced garlic
1/2 tb Minced ginger
1 lb Chanterelles; cleaned
Salt, to taste
Freshly-ground black pepper;
Canola oil; for cooking
HARICOTS VERTS SALAD
Salt; to taste
Juice of 1 lemon
1 tb Truffle oil
1/2 c Virgin olive oil
1 lb Haricot verts; blanched, (needs to be the size of 1 bn Chives; cut into 1" batons
Truffle oil; for garnish
Salt; to taste
Freshly-ground black pepper;
FUNKY SWEET POTATO
1 lg Sweet potato; spaghetti cut using a turning slicer
1 Peruvian purple potato
Salt, to taste
Canola oil; for frying

Steps:

  • It is important that the sweet potato risotto dice are all the same size. Traditional risotto cooking technique is used. In a 2-quart casserole, first saute the shallots in butter and season. Add the sweet potato and saute. Slowly add the hot chicken stock, one ladle at a time. Only add more stock after the previous ladle is fully absorbed. Continue adding stock until the risotto gets creamy, but not mushy. The individual grains of risotto should remain distinct. Season the scallops with salt and pepper. In very hot saute pan, coat with oil and sear the scallops until brown. Flip scallops and brown other side. Total cooking time should be about 8 minutes. Wipe pan out, return to high heat, coat with canola oil, add garlic and ginger and saute until soft. Add chanterelles and season. Cook for about 6 to 8 minutes. For the Haricorts Verts Salad: In a stainless steel bowl, mix lemon juice, truffle oil and olive oil. Season with salt and pepper. Toss vinaigrette with the haricots verts. Check for seasoning. Garnish with chives. For the Funky Sweet Potato Garnish: Wrap the sweet potato hair around a slice of purple potato. In a 300-degree fryer, fry until golden brown, about 4 to 5 minutes. Salt to taste and drain well. For Plating: Using a ring mold or pvc pipe, fill bottom third with the hot chanterelles, then cover with risotto. Place in the center of a plate. Surround with scallops and top with haricot verts salad. Garnish with truffle oil, chive batons and funky garnish.

1 teaspoon olive or vegetable oil
1 1/2 cups chopped sweet onions (3 medium)
3 medium cloves garlic, finely chopped
12 oz dark-orange sweet potatoes (about 2 medium), peeled, finely chopped (about 3 1/2 cups)
1 1/4 cups uncooked pearl barley
1 teaspoon dried thyme leaves
1/2 teaspoon salt
1 carton (32 oz) Progresso™ chicken broth (4 cups) or vegetable broth
1 cup frozen shelled edamame (green) soybeans (from 12-oz bag), thawed
2 tablespoons shredded Parmesan cheese

Steps:

  • In 10-inch nonstick skillet, heat oil over medium heat. Add onion; cook about 5 minutes, stirring occasionally, until translucent. Add garlic; cook, stirring frequently, until softened.
  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix sweet potatoes, barley, thyme, salt and 3 cups of the broth. Add onion-garlic mixture.
  • Cover; cook on Low heat setting 4 to 5 hours.
  • In 2-cup microwavable measuring cup, microwave remaining 1 cup broth on High 2 to 3 minutes or until boiling. Stir thawed edamame and boiling broth into barley mixture in cooker. Increase heat setting to High; cover and cook 25 to 30 minutes longer or until edamame are tender. Serve in shallow bowls; sprinkle with cheese.

2 tablespoons minced shallots
1 medium sweet potato, cut into small cubes (about 8 ounces or 2 cups)
1/3 cup chopped pecans
2 -3 cups vegetable broth
1 cup arborio rice (about 6 to 7 ounces)
salt & freshly ground black pepper, to taste
1/2 cup fresh grated parmesan cheese
1 tablespoon finely chopped green onion tops or 1 tablespoon fresh parsley

Steps:

  • Heat vegetable broth to the boiling point; reduce heat to the lowest setting to keep hot.
  • In a medium saucepan, melt butter; add minced shallot and pecans; cook until shallot is tender.
  • Add rice and cook, stirring, until well blended.
  • Stir in sweet potato and about 3/4 cup of the hot broth into the rice mixture.
  • Cook over medium-low heat, stirring constantly, until liquid is absorbed.
  • Continue adding liquid, 1/3 cup at a time, stirring frequently, until the rice and sweet potato are tender; do not over cook, the texture should be creamy a little loose, approximately 25 minutes (amount of broth added will be between 2 1/2 and 3 cups).
  • Stir in Parmesan cheese and green onion or parsley.

2 tablespoons grapeseed oil
1 large sweet onion (such as Vidalia), diced small
1/2-ounce peeled fresh ginger root (1-inch piece), minced
3 garlic cloves, lightly crushed with the side of a knife blade and minced
4 to 6 sweet potatoes or 3 yams, peeled and cut in thin julienne then cut crosswise into 1/2-inch pieces)
1 firm mango, peeled and cut away from the seed
1 quart coconut milk
4 to 5 scallions, white and tender green parts only, sliced on the diagonal into 1/2-inch pieces
1 fresh lime
1 tablespoon grapeseed oil
8 (6-ounce) marlin steaks, soaked in cold water if it is cured
Salt and freshly ground black pepper
1 fresh lime, sliced for garnish

Steps:

  • Heat grapeseed oil over medium-high heat in a large pot. When it begins to shimmer, add sweet onion, ginger root and garlic and cook until the onion becomes translucent, being careful not to burn the garlic. Add the diced sweet potatoes and mango, stir to coat with the oil, and cook for about 5 minutes to allow the flavors to integrate. (Begin heating the grill for the marlin.) While stirring often with a wooden spoon, gradually add the coconut milk in increments, allowing the potatoes to absorb each addition of coconut milk before adding more. When the potato is cooked through but before it becomes mushy, remove from heat and let rest for 10 minutes. Microwave the lime in a small bowl to release the essential oils, and set aside until just cool enough to handle.
  • Brush oil on the marlin and season with salt and pepper and grill over medium-high heat, leaving each side undisturbed for the first few minutes to allow the seasonings to integrate into the surface of the fish and to allow the caramelization process to begin which will prevent tearing. Cook each side for about 4 to 6 minutes, remove from heat, and cover. If it is not cooked enough to your liking, you can finish in a preheated 375 degree F oven.
  • Squeeze lime juice over the risotto and stir in the scallions. (Note: If you keep the sliced side against your palm when you squeeze, the seeds are likely to stay in the rind.) Place some yam risotto in center of serving dish, and top with a piece of marlin. Garnish with a slice of lime.
