1 medium yellow onion, chopped
2 Tbsp canola oil
3 Tbsp fresh ginger, minced
3 clove garlic, minced
3 medium sweet potatoes, chopped in 1/2 inch dice
1 1/2 c lentils, dry
2 c tomato sauce
1 c water
1 1/2 tsp cinnamon
1/2 tsp cumin
1 tsp allspice, ground
2 tsp paprika
2 tsp ginger powder
kosher salt and freshly ground black pepper to taste

Steps:

  • 1. In a medium sauce pot, heat the oil and add the onions and sweet potato. Cook on medium high heat for about 12 minutes covered.
  • 2. Add the ginger and garlic and saute until fragrant, about a minute. Stir in the lentils, spices, tomato sauce, roasted pepper, and water.
  • 3. Cook on medium low for 35-40 minutes, or until the sweet potatoes and lentils are soft. Add more water if the mixture becomes too thick.

Red Lentil and Sweet Potato Curry with Warm Pita Bread
2 tbsp vegetable oil
1 medium onion, chopped
Coarse sea salt or kosher salt
1 medium sweet potato, peeled and cut into 1 inch chunks
1 (1 inch) piece fresh ginger, peeled and chopped
1 large or 2 small garlic cloves, chopped
1 tbsp curry powder
1 bay leaf
1 ½ cups red lentils

Steps:

  • 1. In a saucepan or kettle, bring 3 ½ cups of water to a boil. 2. In a large saucepan over high heat, warm the oil. Add the onion and a pinch of salt and sauté, stirring occasionally, until the onion softens, and 3 to 4 minutes. 3. Add the sweet potato, ginger, garlic, curry powder and bay leaf and sauté until fragrant, about 1 minute. Pour in the boiling water and stir in the lentils. Reduce the heat to medium-low, cover and simmer until the lentils break down and the sweet potatoes are tender, 18 to 20 minutes. Season with salt.
