SALMON AND SWEET POTATO PATTIES



Salmon and Sweet Potato Patties image

This combines 2 of my favourite foods salmon and sweet potato and being diabetic friendly is a big bonus. From BH&G Australian Diabetic Living. They suggest serving it with a garden salad or you could stuff into pita bread with salad or put them in a wrap with salad or on bread or roll of choice.

600 g sweet potatoes (orange peeled chopped into even sized pieces)
80 ml water (1/3 cup)
210 g red salmon (canned no added salt drained bones and skin removed and flaked)
125 g corn kernels (casnned drained)
35 g breadcrumbs (1/2 cup fresh made from day old wholemeal grain bread)
2 spring onions (green part finely chopped)
1 egg (50 gram lightly whisked)
1/4 teaspoon ground black pepper (or to taste)
45 g breadcrumbs (dried 1/2 cup)
cooking spray

Steps:

  • Put the sweet potato in a large shallow microwave safe dish and add 80ml (1/3 cup) water, cover and microwave on high/100% for 8-10 minutes or until very soft and drain well OR cook the sweet potato in a steamer basket over a large saucepan of simmering water or steam in a electric steamer, set potato aside for 10 minutes to allow the sweet potato to dry out.
  • Preheat oven to 180C (fan forced).
  • Line 2 baking sheets with baking paper.
  • Put sweet potato in a large bowl and mash until smooth and then add the salmon, corn, fresh breadcrumbs, spring onion and egg and then season with pepper, mixing until well combined.
  • Divide the mix into 16 equal portions and shape into patties.
  • Put dried breadcrumbs on a large plate and coat each patty in the breadcrumbs.
  • Divide the patties between the baking trays and spray with cooking spray on each side and cook in the oven, turning once, for 20 minutes or until browned and cooked through.
  • TIP 1 - You can prepare these patties to the end of step 6, then keep them in the fridge for up to 2 days and when ready to serve continue from step 7 of the recipe or, prepare and cook the patties, keep them in the fridge for up to 2 days and then serve cold or at room temperature.
  • TIP 2 - To freeze the patties, make up to the end of step 6 and then wrap individual patties in freezer wrap and place in a resealable freezer bags, expel air, then label and date and freeze for up to 6 months - when ready to serve, defrost on a plate in the fridge and then continue from step 7 of the recipe.

Here is a quick and delicious side dish to enjoy with numerous main dishes. My kids love these as is, but for anyone who has to have a marshmallow topping, just add a few mini ones on top of the patties after you remove them from the pan. Enjoy.

Steps:

  • When patties start to sizzle turn them over and sprinkle other side.

2 sweet potatoes, peeled and shredded
1 small sweet onion, chopped
¼ cup flaked coconut
2 tablespoons flour
2 tablespoons semolina
3 tablespoons maple syrup
2 egg, beaten
1 (6 ounce) container plain yogurt
2 tablespoons half and half
¼ cup pineapple juice
¼ teaspoon cayenne pepper
¼ cup oil for frying

Steps:

  • Mix together the sweet potatoes, onion, coconut, flour, semolina, and syrup in a large bowl. Mix in the eggs. Form the mixture into 4 patties.
  • Mix together the yogurt, half and half, pineapple juice, and cayenne pepper in a separate bowl. Set aside until serving.
  • Heat the oil in a skillet over medium-high heat. Cook the patties in the hot oil until crisp, 3 to 5 minutes per side. Transfer to plate lined with paper towels.
  • Serve patties hot with yogurt mixture on the side.

1 medium about 300g orange sweet potato, peeled, coarsely chopped
1 (425 g) can tuna in water, drained
2 eggs, lightly whisked
25 g dried breadcrumbs (packaged)
1 -2 tablespoon fresh parsley, chopped
salt & freshly ground black pepper
1 tablespoon olive oil

Steps:

  • Steam the kumera in the microwave until tender.
  • Drain and refresh under cold running water. Transfer to a large bowl.
  • Use a potato masher or fork to mash the sweet potato until coarsely mashed. Add the tuna, egg, parsley and breadcrumbs, and stir until well combined. Season with salt and pepper.
  • Divide the tuna mixture into 8 equal portions.
  • Use wet hands to shape portions into 8cm patties.
  • Heat oil in a large non-stick frying pan over medium-high heat.
  • Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat.
  • Divide among serving plates and season with salt and pepper.
  • Serve with lemon wedges, fries and a garden salad.

This sweet potato patties recipe is one of my favorites. I use brown rice a lot in my healthy vegan recipes. It is a rich source of lots of nutrients, and makes for a much lighter patty than a bean-based veggie burger. This recipe is simple and delicious. It allows for a lot of variation in seasoning, and can easily be made with potato rather than sweet potato for a more neutral flavor. I've kept things really simple here to focus attention on the sweet potato.

1 cup water
1 pinch sea salt
1/2 cup short grain brown rice
1/2 cup sweet potato, grated
1/2 onion, diced
1/2 cup whole grain flour
1 teaspoon olive oil

Steps:

  • Be sure to have your rice cooked & cooled before you begin. This can happen at dinner the night before, at breakfast, or an hour before dinner. As long as the rice has cooled, it will be sticky enough to make into a patty.
  • Stir together the rice, sweet potato, onion and salt in a large bowl. Allow it to sit for a few minutes, so that the salt can draw the moisture out of the potato & onion. Stir in enough flour to make the batter sticky, adding a spoonful or two of water if necessary. Form the mixture into tight balls, and squish slightly into a patty form.
  • Heat a pan on medium, then add enough oil to coat the underside of each patty. Allow them to cook for 7-10 minutes, then flip. Cook another 5-7 minutes, and serve.
  • These sweet potato brown rice patties can be served on their own, garnished with salsa and lettuce, on a bun as a burger, or many other ways. In the photo, I served them alongside some steamed kale, dressed with tamari and sesame seeds.

1 cup grated zucchini (excess water squeezed out)
1 cup grated sweet potato (raw)
4 tablespoons flour
1/2 cup onion, diced
1 cup grated cheddar cheese
3 leaves fresh sage, chopped
1 egg
1 garlic clove, minced
salt and pepper (to season)
1/3 cup balsamic vinegar
1 tablespoon honey

Steps:

  • Preheat oven to 350 degrees.
  • line cookie sheet with parchment paper and spray with nonstick spray.
  • Mix first 9 ingredients together.
  • Mixture will be somewhat loose.
  • Scoop up in a 1/3 measuring cup mixture and gentle flip onto parchment paper flatten slightly.
  • You should have 5 patties.
  • Bake for 25 minutes.
  • Meanwhile cook balsamic vinegar with honey till reduced in half.
  • Remove patties gently from parchment paper and place on serving dish.
  • Pour sauce into a small bowl and dip patties into sauce.

1 cup basmati rice
500 g kumara (orange Sweet Potato)
3/4 cup frozen baby peas
3/4 cup zucchini
1/3 cup fresh breadcrumb
1 tablespoon ground cumin
1 garlic clove
1 egg
2 tablespoons fresh flat leaf parsley
salt & freshly ground black pepper
olive oil

Steps:

  • Cook the rice in a large saucepan of salted water until done.
  • Meanwhile chop & steam or boil the sweet potato until tender, drain well. Transfer to a large bowl and mash until almost smooth.
  • Cut the zucchini into small dice (about the size of the baby peas) add this and all other ingredients to kumara and mix well, season with salt & pepper.
  • Divide the mixture into equal portions and cook in non stick fry pan lightly oiled for 3 minutes each side, drain on paper towel.
  • Sprinkle with sea salt and serve on a bed of baby spinach and drizzle with sweet chili sauce.

1 ½ cups water
1 cup red lentils
2 cups peeled and cubed sweet potato
1 head broccoli, broken into small florets
1 tablespoon olive oil
½ yellow onion, chopped
5 ounces spinach
3 ounces shredded Colby-Monterey Jack cheese
5 cloves garlic, minced
2 eggs
⅓ cup all-purpose flour
1 ½ tablespoons vegetable seasoning (such as La Grille®)
1 teaspoon ground black pepper
½ cup oil for frying, divided

Steps:

  • Combine 1 1/2 cup water and lentils in a small saucepan; bring to a boil. Reduce heat, cover, and simmer until lentils are soft, about 20 minutes. Drain any excess water.
  • Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until soft, about 10 minutes. Drain.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add spinach; cook and stir until wilted, about 5 minutes more. Pour off any excess cooking liquid from the skillet.

2 cups baked sweet potato, skins removed & mashed (approximately 2 medium sweet potatoes)
2 cups cooked quinoa
Medium yellow onion, diced
3 cloves garlic, crushed
1 tablespoon fresh thyme, finely chopped (more to garnish)
1 tablespoon extra virgin olive oil
Sea salt
Fresh cracked pepper
Earth balance vegan butter or coconut oil for cooking

Steps:

  • Prepare quinoa according to package instructions (I cook 1 heaping cup with a scant 2 cups of water in my rice cooker). Preheat oven to 400 degrees, pierce sweet potatoes with fork and bake for 45 minutes or until soft. Remove skins, mash with a fork to remove all chunks and place in large mixing bowl. In a sauté pan combine onions, olive oil, a hearty pinch of sea salt and cook over medium-low heat until onions are translucent. Add garlic and cook an additional minute, stirring continually to prevent the garlic from burning. Add thyme at the very end and mix well. Add onions, quinoa, 1/4 teaspoon sea salt (more to taste), a bit of fresh cracked pepper to large mixing bowl with sweet potatoes and stir until well combined. Form mixture into golf ball size ball, flatten into a patty, and cook in earth balance vegan butter on a non stick pan for approximately 2 minutes on each side (you want them to brown up and crisp!). Repeat to make as many as you'd like. Enjoy with a generous sprinkling of fresh thyme leaves and some finishing salt! Save any leftovers in the refrigerator to make later.

420 g chickpeas, canned, drained, rinsed
1/3 cup couscous
1 teaspoon garam masala
2 garlic cloves, crushed
1 egg, lightly beaten
salt and pepper
3 teaspoons olive oil
1/2 cup Greek yogurt
2 tablespoons mango chutney
4 cups salad leaves, to serve

Steps:

  • Place sweet potato on a microwave-safe plate in a single layer, cover and microwave on high for about 4 minutes or until just tender.
  • Transfer to a bowl, add chickpeas and mash until almost smooth.
  • Add the couscous, garam masala, garlic, egg salt and pepper.

This yummy recipe is from the Australian Women's Weekly's 'fresh food fast: delicious no-fuss healthy recipes'. When making patties, I often use well-greased egg rings. I have some that can be used in non-stick pans and place the mixture directly into these, then remove them when flipping the patties - with the help of two spatulas - to cook the reverse side.

I made these sweet-potato salmon patties the other evening and they were really good. Really not much of a fuss to assemble... Pretty much easy/peasy. I tried them three ways: One by themselves with a good dipping sauce, on a bed of wild rice, and finally as a stuffing for some brown button mushrooms. Yummy stuff. So, you ready... Let's get into the kitchen.

1 medium sweet potato, about 6 ounces (170g)
1/2 medium red bell pepper, finely chopped, about 2 ounces (56g)
2 tablespoon(s) yellow onion, finely chopped, about 1 ounce (28g)
1 large egg, whisked
4 tablespoon(s) panko breadcrumbs
6 ounce(s) salmon, canned or freshly cooked
SEASONINGS

  • Gather your ingredients (mise en place).
  • Wash and place the sweet potato in a 400f (205c) oven and bake until softened, about 40 - 45 minutes.
  • When baking is complete lower the heat on the oven to 375f (190c).
  • While it is baking, chop the bell pepper, and onion, then whisk the egg.
  • After the sweet potato has cooled enough to handle, scoop out the flesh and mash in a mixing bowl.
  • It should have a smooth consistency with little to no lumps... a few are okay.
  • Add the bell pepper, onions, and egg, and combine.
  • Add the salt and pepper, to taste, and mix to combine.
  • Add the breadcrumbs 1 tablespoon at a time and combine until the mixture begins to firm up and resembles a thick peanut butter. Then add the salmon to the bowl and gently fold into the mixture.
  • Take about 3 - 4 ounces (85 - 113g) roll into a ball, flatten into a disk about 1/2 inch (1.3cm), and place on a parchment-lined baking sheet.
  • Place into the preheated oven and bake until patties are cooked and beginning to brown, about 25 - 30 minutes.
  • PLATE/PRESENT
  • Serve on their own with some dipping sauce, or as more of a meal, by laying them on a bed of white or wild rice. Enjoy.

SWEET POTATO PECAN PATTIES

I think they're too carb-rich for that but would make a nice starch side to have with greens and another protein like tofu or seitan. I guess that 3 or so sweet potatoes would be enough?

2 1/2 cups sweet potatoes (about 2 large or 3 medium)
2 1/2 cups chopped onions
3 garlic cloves (1 1/2 teaspoons minced)

1 1/2 teaspoons ground cumin

1/2 chopped pecans, preferably toasted
1 tablespoon olive oil, divided

  • Wash and peel the sweet potatoes and cut into 1/2-inch cubes.
  • Cover them with water in a large saucepan and bring to a boil. Reduce the heat and simmer for 15 minutes or until somewhat tender, then drain.
  • Coat a large nonstick skillet/frying pan with cooking spray and heat over medium-high heat.
  • Add chopped onion and garlic to the pan, sautee 5 minutes or until tender.
  • Place sweet potato, chopped onion mixture, oats, and spices in a food processor and pulse until smooth.
  • Place the mixture into a large bowl and stir in the pecans. Divide into 6 equal portions, shaping each inch a 1/2-inch thick patty.
  • Wipe the frying pan dry with a paper towel. Heat 1 1/2 teaspoons oil over medium-high heat.
  • Add 3 patties to the pan, cook 4 minutes or until browned. Carefully turn the patties over and cook the other side for 3 minutes or until browned.
  • Repeat with the remaining oil and uncooked patties.

4 cups mashed sweet potatoes
2 large eggs, lightly beaten
2 tablespoons brown sugar
2 tablespoons butter, melted
1 teaspoon salt
1-1/2 cups finely chopped walnuts
RELISH:
2/3 cup dried cranberries
1/2 cup orange juice
1/4 cup packed brown sugar
2 tablespoons honey
3 medium navel oranges, peeled and chopped
1/2 cup chopped walnuts, optional

Steps:

  • In a large bowl, combine the sweet potatoes, eggs, brown sugar, butter and salt. Refrigerate for 1 hour. Shape into 12 oval patties; flatten to 1/2-in. thickness. Place walnuts in a shallow bowl; coat patties in nuts., Place on greased baking sheets. Bake, uncovered, at 425° for 25-30 minutes or until golden brown., Meanwhile, in a small saucepan, combine the cranberries, orange juice, brown sugar and honey. Cook and stir over medium heat until thickened, about 5 minutes. Stir in oranges and, if desired, walnuts. Serve with patties.
