6 medium potatoes (about 3 pounds)
1/4 cup olive oil
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon Greek seasoning
1/4 teaspoon garlic salt
1/4 teaspoon smoked paprika
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
SAUCE:
1 cup Miracle Whip
1/2 cup barbecue sauce
1/4 cup honey
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
1/8 teaspoon cayenne pepper

Steps:

  • Preheat oven to 425°. Cut each potato lengthwise into six wedges; place in a large bowl. Add oil and seasonings; toss to coat. Transfer to two foil-lined 15x10x1-in. baking pans. Bake 45-50 minutes or until tender, turning once., In a small bowl, mix sauce ingredients. Serve with potato wedges.

Sweet potato & chestnut roast with tangy tomato sauce image

Serve this nut loaf with fresh green veggies as a Sunday lunch. Go for something seasonal like sprouts, broccoli, spinach or any of the leafy cabbage family

Number Of Ingredients 13

1 tbsp rapeseed oil , plus a dash for greasing
2 onions , finely chopped
1 large sweet potato , about 325g, coarsely grated
3 garlic cloves , crushed
180g pack cooked chestnuts
2 tbsp fresh thyme leaves , plus extra for sprinkling
1 tbsp tamari
1 large egg
2 tsp wholemeal flour
300ml vegetable bouillon made with 1 tsp powder
2 tbsp tomato purée
1 tbsp apple cider vinegar
pinch mild chilli powder

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line the base and sides of a 1lb (500g) loaf tin with baking parchment. Heat the oil in a large non-stick sauté pan and fry the onions for 10 mins until golden, stirring every now and then. Add the grated potato and garlic and cook for 5 mins more until the potatoes have softened.
  • Tip into a bowl, (reserve the pan) and add two-thirds of the chestnuts crushing them up as you go, then stir in the thyme, tamari and egg. Press into the loaf tin, roughly break the remaining nuts and arrange them on top then bake for 45 mins.
  • For the sauce mix the flour with a little of the bouillon to make a very wet paste. Return the pan to the heat and add all the ingredients, including the flour mix and stir over a high heat until well mixed and thickened. Keep simmering for a good 10 mins then taste as it should now be tangy rather than vinegary. If it is too sharp return to the heat and boil a little longer.
  • Carefully take the loaf from the tin and remove the paper. Scatter with thyme. If you're doing the Healthy Diet Plan, serve half in 2 thick slices with half the tomato sauce and chill the rest for another day, otherwise serve the whole recipe as a meal for four people.

Roasted Goose with Chestnut-Sweet Potato Stuffing and Gingered Plum Sauce image

1 whole goose around 15 pounds, soaked overnight in a lightly salted brine liquid
Canola oil
Black pepper
1 teaspoon sesame oil
12 cloves garlic
1 tablespoon minced ginger
1 onion, 1/4-inch dice
1 large, peeled carrot, 1/4-inch dice
2 ribs celery, 1/4-inch dice
Salt and black pepper, to taste
2 large sweet potatoes, oven roasted until al dente (80 percent), peeled and 1/2-inch dice
12 chestnuts, roasted and peeled and halved
1 cup sliced scallions, separated, save white part for the sauce
2 cups dehydrated plums (prunes), 1/4-inch dice
2 cups plum wine
2 cups Zinfandel
3 cups chicken stock
1 tablespoon naturally brewed soy sauce

Steps:

  • Pre-heat the oven to 550 degrees with a roasting pan large enough to hold the bird. Pull bird out of brine and rinse extremely well. Pat dry and rub canola oil all over and inside the bird and season with black pepper. Place goose in the hot roasting pan in the oven. Let brown on top, about 20 to 30 minutes. Meanwhile, in a hot saute pan coated lightly with canola oil, add the sesame oil and saute the garlic cloves, ginger and onions until lightly brown then add the carrots and celery, about 5 minutes. Season with salt and pepper. In a large bowl, gently mix with the sweet potatoes, chestnuts and green scallions and check for seasoning. Pull the browned bird out of the oven and stuff with stuffing. Reduce oven to 325 degrees and cover with foil to prevent burning. Cook an additional 11/2 to 2 hours (depending on size of bird) or until juices run clear after puncturing between leg and breast. Let bird rest 10 minutes before slicing. Drain off fat in the roasting pan but leave at least 2 tablespoons of fat. Place roasting pan on a high burner and sautee white scallions, ginger and plums. Deglaze with both wines. Reduce by 80 percent then add stock. Reduce stock by 20 percent then add soy. Check for seasoning.
  • PLATING: Take out the stuffing and mound it on a large oval platter. Slice bird and present on top of stuffing. Ladle sauce around the slices.

You can stir the sauce together several hours or even the day before, and leftovers will keep in the fridge for up to 3 days. Other herbs - rosemary, tarragon, sage - can fill in for thyme. (To make this recipe vegan, try substituting coconut yogurt or 1/4 cup olive oil for the sour cream.)

2 pounds sweet potatoes (2 large or 4 small potatoes)
1 small bunch of thyme sprigs
1/3 cup sour cream or Greek yogurt
1 tablespoon whole-grain mustard
1/2 teaspoon chopped thyme leaves
1/2 teaspoon minced garlic

Steps:

  • Heat oven to 425 degrees. Cut potatoes into 1-inch-thick slices. Reassemble slices so they look like intact potatoes. Insert a sprig of thyme between each of the slices. Wrap each potato in 2 layers of foil and place on a pie tin, roasting pan or directly on oven rack (seam side up).
  • Bake potatoes until very tender, 60 to 75 minutes. Meanwhile, combine sour cream, mustard, thyme and garlic in a small bowl. Serve potatoes dolloped with mustard sauce.

4 lbs sweet potatoes, peeled and cubed
2 tablespoons olive oil
salt & freshly ground black pepper
1 lb bacon (thick-cut)
1 cup french chestnuts, with
cognac, halved
1/2 cup green onion, chopped

Steps:

  • Preheat oven to 375°F.
  • In a large mixing bowl, toss sweet potatoes with olive oil, salt and pepper.
  • Spread potatoes out on a baking sheet in a single layer.
  • Roast, stirring occasionally and rotating the pan after about 25 minutes, until the potatoes are tender and golden around the edges, 45-50 minutes.
  • Meanwhile, in a large frying pan over medium heat, fry bacon until crisp then drain all but 2 TBS of the fat out of the pan.
  • Transfer the bacon to a plate and blot with paper towels.
  • In the remaining bacon grease add chestnuts and saute, stirring, until heated through, 2-3 minutes.
  • Return bacon to the pan along with the roasted sweet potatoes and green onions. Stir to mix, adjust seasonings and serve immediately.
