1 cup chopped pecans, toasted
1/2 cup cold butter, cubed
1 package (8 ounces) cream cheese, softened
1/2 cup sugar
3 large eggs, room temperature
1 can (14 ounces) sweetened condensed milk, divided
3 cups cooked and mashed sweet potatoes (about 3 medium)
2 teaspoons pumpkin pie spice

Steps:

  • Preheat oven to 350°. Combine cake mix and pecans; cut in butter until crumbly. Press mixture onto bottom of a greased 13x9-in. baking dish., Beat cream cheese, sugar, 1 egg and 2 tablespoons milk until smooth; set aside. Stir together sweet potatoes, remaining eggs, remaining milk and pie spice; pour over pecan mixture. Dollop cream cheese mixture over sweet potato mixture. Cut through cream cheese mixture with a knife to swirl into sweet potato mixture., Bake until set and slightly golden on top, about 45 minutes. Allow to cool completely; chill before cutting into bars.

1 can (15 ounces) sweet potatoes, drained

1-1/2 teaspoons pumpkin pie spice
1 cup sour cream
1/4 teaspoon vanilla extract
TOPPING:
1-1/4 cups granola without raisins
1/2 cup white baking chips
1/4 teaspoon pumpkin pie spice

Steps:

  • In a large bowl, beat the cake mix, butter and egg until crumbly. Press onto the bottom of a greased 13x9-in. baking dish., Place the sweet potatoes, cream cheese, 1/2 cup sugar, egg and pie spice in a food processor; cover and process until blended. Spread over crust., Bake at 350° until center is almost set, 20-25 minutes. Meanwhile, in a small bowl, combine the sour cream, vanilla and remaining sugar. Spread over filling. 1/4 cup butter or margarine, melted
2 cans (15 oz each) sweet potatoes in syrup, drained, mashed
1/3 cup packed brown sugar
1 teaspoon grated gingerroot
1 1/2 teaspoons grated orange peel
1 egg
1/2 cup Gold Medal™ all-purpose flour
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/3 cup cold butter

Steps:

  • Heat oven to 350°F. Line 8-inch square pan with foil; spray foil with cooking spray.
  • In medium bowl, mix cookie crumbs and melted butter. Press mixture in bottom of pan. Bake 10 to 12 minutes or until set.
  • Meanwhile, in large bowl, mix sweet potatoes, 1/3 cup brown sugar, the gingerroot, orange peel and egg. In medium bowl, mix flour, 1/2 cup brown sugar and the pecans. Cut in 1/3 cup butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly.
  • Spoon and spread filling evenly over crust. Sprinkle topping over filling; pat gently.
  • Bake 35 to 40 minutes or until center is set and edges are golden brown. Cool completely in pan on cooling rack. Cut into 4 rows by 4 rows. Store in refrigerator.

½ teaspoon vanilla extract
2 ¼ cups rolled oats
½ teaspoon cinnamon

⅓ cup slivered almond
⅓ cup shredded coconut

Steps:

  • Preheat the oven to 350°F (180°C). Line a 9-inch (23 cm) square baking pan with parchment paper.
  • In a large bowl, stir together the mashed sweet potatoes, almond butter, maple syrup, and vanilla until well combined. Add the oats, cinnamon, and nutmeg and stir until well combined.
  • Transfer the mixture to the baking pan and spread in an even layer with a spatula.

1 c unsalted butter, room temperature
2 c dark brown sugar, packed
3 c all purpose flour
4 large eggs
1 1/2 c mashed sweet potatoes- from canned
1/4 tsp salt
2 tsp ground cinnamon
1/4 tsp each cloves and ginger
10 oz bag mini marshmallows

Steps:

  • 1. Drain sweet potatoes and mash well or puree in blender. Set aside. Preheat oven to 350^. Grease or spray well a jelly roll pan (15x10x2-inches) or two 8-inch square pans. (One can be frozen) Or one 9x13-inch pan.
  • 2. Cream butter and sugar until light and fluffy; add the eggs and mix as you add the salt and spices. Slowly add in flour. Mix just until batter is smooth.
  • 3. Fold potato puree into the batter. Pour batter into prepared pan or pans and bake 25-30 minutes; or until tested done with a cake tester inserted in center of bars comes out clean. Remove from oven.
  • 4. Turn oven to highest broiler setting. Sprinkle marshmallows on top of bars and place pan or pans on lowest rack so there is plenty of space between heat and marshmallows. Leave oven door ajar and rotate pan after they begin to brown. Marshmallows are done when they are dark golden brown on top. Remove pan or pans to cool on a wire rack. Place pan in freezer for 5-8 minutes for easier cutting. --- Note: These freeze well if marshmallows are left off the ones you want to freeze. After freezing -thaw at room temperature for 20 minutes then put the marshmallows on and place under the broiler as above.

I made these for Thanksgiving and they were gone before the meal was even served. We enjoyed them warm from the oven, topped with a dollop of whipped cream, heaven! 1 egg
2 1/2 cups peeled mashed sweet potato

1/2 cup finely chopped pecans
1 cup plus 2 Tbsp. sugar, divided
2 Tbsp. butter, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 can (15 oz.) sweet potatoes, well drained, mashed
1 tsp. vanilla
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1/8 tsp. crushed red pepper
4 eggs
2 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 325°F.
  • Line 13x9-inch pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Mix cracker crumbs, nuts, 2 Tbsp. sugar and butter; press onto bottom of prepared pan.
  • Beat cream cheese, remaining sugar, potatoes, vanilla, spices and crushed pepper with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

1 1/2 lbs medium sweet potatoes
1 tablespoon vegetable oil
3/4 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 pinch salt
1 teaspoon pure vanilla extract
3 large eggs
3 cups milk
2 1/2 cups graham cracker crumbs
2 cups pecan pieces
3/4 cup unsalted butter, melted
8 ounces semisweet chocolate morsels

Steps:

  • Preheat the oven to 375°F.
  • Rub the sweet potatoes with the vegetable oil and place on a baking sheet lined with parchment paper. Bake until fork-tender, 1 to 1 1/2 hours. Remove from the oven and let cool, then peel and mash in a large bowl.
  • Add to the mashed potatoes the brown sugar, cinnamon, nutmeg, salt, vanilla, eggs, and 2 1/2 cups of the milk and mix well. Set aside.
  • Lower the oven temperature to 350 degrees F.
  • Combine the graham cracker crumbs and pecan pieces in a food processor and process for about 1 minute, to make a fine meal. With the motor running, gradually pour the melted butter through the feed tube and process for 1 minute. Transfer the crumb mixture to a 13 X 18-inch baking pan and, using your fingers, firmly press the crumbs evenly onto the bottom and up the sides of the pan.
  • Pour the sweet potato mixture into the crust and spread evenly with a rubber spatula.
  • Put the chocolate morsels and the remaining 1/2 cup milk in a medium-size saucepan over medium heat and stir constantly until the chocolate melts and the mixture is smooth. Spoon the chocolate in three rows, about 2 inches apart, lengthwise over the sweet potato mixture. Then, with a knife, make a zigzag pattern to marbleize the chocolate and the sweet potato mixture.
  • Bake until the edges are browned and the filling is set, 20 to 25 minutes. Remove from the oven and let cool completely. To serve, cut into bars.

  • Heat oven to 350°. Grease bottom and sides of rectangular pan, 13 x 9 x 2 inches, with shortening; lightly flour. Beat 1/2 cup butter and 3/4 cup brown sugar in small bowl with electric mixer on medium speed until fluffy. Beat in 1 cup flour on low speed. Press in pan. 2 lb Okinawan or Molokai sweet potato, boiled and peeled
1/2 cup sugar
8 oz cream cheese, softened

1/4 cup milk
Haupia Topping
2 cans (13.5 oz size) coconut milk
1/3 cup cornstarch
Pinch of salt
1/2 cup sugar
1/4 cup chopped macadamia nuts or shredded coconut, for garnish

Steps:

  • Instructions Macadamia Nut Crust Preheat electric oven to 350ºF. Line a 13 x 9x 2-inch baking pan with parchmentchopping blade, process the flour and salt until well combined. Add the butter and sugar; pulse until mixture is well combined and crumbly. Add nuts and egg yolk and pulse again until mixture is moistened. Press the mixture lightly into prepared baking pan. Bake for 20 to 25 minutes or until golden brown; cool. Sweet Potato Filling Mash sweet potatoes while still hot. Add sugar, cream cheese, salt, and milk. Mix gently until well combined do not over-mix. Spread the sweet potato filling over macadamia nut crust. Place in the refrigerator while preparing the Haupia Topping. Haupia Topping Reserve 1/4 cup coconut milk; mix with cornstarch; set aside. In a 3 quart saucepan, combine the remaining coconut milk, salt, and sugar over medium heat; bring to boil. Stirring constantly, add the cornstarch mixture and cook until haupia starts to thicken; boil for one minute. Remove from heat; cover saucepan with lid to prevent skin from forming; cool to room temperature. Pour haupia onto sweet potato filling; sprinkle with macadamia nuts or shredded coconut to garnish. 1/4 cup shelled unsalted pistachios
1/4 cup pecans
1/2 teaspoon ground cinnamon
1/2 teaspoon grated orange zest
1/4 teaspoon sea salt
2 tablespoons Grade B maple syrup
2 tablespoons extra-virgin olive oil
Filling:
1 pound orange-fleshed sweet potatoes, such as garnet yams, baked until tender
2 organic eggs, beaten
1/3 cup organic plain yogurt
3 tablespoons Grade B maple syrup
1/2 teaspoon grated orange zest
1/2 teaspoon ground cardamom
1/2 teaspoon ground ginger
Freshly grated nutmeg, for dusting

Steps:

  • To make the crust, preheat the oven to 375°F. Lightly oil an 8-inch square baking pan. Put the oats, teff flour, pistachios, pecans, cinnamon, orange zest, and salt in a food processor and pulse until the texture resembles coarse cornmeal. Add the maple syrup and olive oil and pulse until the ingredients are evenly combined but the mixture is still crumbly looking. Transfer the mixture to the prepared pan and press it evenly and firmly into the bottom of the pan. No need to clean out the food processor. Bake for about 15 minutes, until set. Keep the oven on. Meanwhile, make the filling: Scoop the sweet potato flesh into a bowl and mash it. Put 1 1/2 cups of the mashed sweet potatoes in the food processor (reserve any leftovers for another use). Add the eggs, yogurt, maple syrup, orange zest, cardamom, and ginger and process until smooth. To assemble and bake the bars, pour the filling over the crust and smooth the top with a spatula. Sprinkle with nutmeg. Bake for about 25 minutes, until the filling is set and just beginning to pull from the sides of pan. Let cool completely on a wire rack, then cover and refriger- ate for at least two hours before cutting into 16 squares. Cook's Notes: You can bake the sweet potatoes in advance and store them in the refrigerator for up to 3 days. Prep Time: 15 minute Cook Time: 40 minutes, plus two hours for chilling Storagee: Store in an airtight container in the refrigerator for up to four days or tightly wrapped in the freezer for up to two months.

6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1-1/4 cups butter, softened, divided
2-1/2 cups flour, divided
2 lb. sweet potatoes (about 4), cooked, peeled
3/4 cup packed dark brown sugar
1 can (14 oz.) sweetened condensed milk
2 tsp. ground cinnamon
4 eggs
2 tsp. vanilla
4 cups JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 400ºF.
  • Cut cream cheese and 3/4 cup butter into 2-1/4 cups flour in large bowl with pastry blender or 2 knives until mixture resembles coarse crumbs; shape into ball. Flatten dough into disk; wrap tightly with plastic wrap. Refrigerate 1 hour.
  • Place dough between 2 lightly floured sheets of waxed paper; roll into 15-1/2x10-1/2-inch rectangle. Discard top sheet of waxed paper. Spray 15x10x1-inch pan with cooking spray; invert over dough. Holding pan and dough together, flip pan over. Discard second sheet of waxed paper. Gently press dough onto bottom and up sides of pan. Use fork to prick holes in dough on bottom of pan.
  • Bake 10 min. Meanwhile, melt remaining butter. Mash potatoes in large bowl. Add butter and all remaining ingredients except marshmallows; mix well.
  • Pour potato mixture over crust. (Pan will be full.) Bake 30 min. or until top is puffed and lightly browned. (Filling will be soft, but will firm up when cooled.) Immediately top dessert with marshmallows. Cool 1 hour.
  • Heat broiler when ready to serve dessert. Broil dessert, 4 inches from heat, 1 to 2 min. or until marshmallows are golden brown. Cool slightly.

SWEET POTATO SPICE BARS
2 cup(s) original bisquick mix
1 cup(s) dark brown sugar
1 cup(s) natural unsweetened applesauce
1 teaspoon(s) vanilla extract
2 teaspoon(s) cinnamon, ground
1 teaspoon(s) nutmeg, ground
1/2 teaspoon(s) ginger powder
3 - eggs
2 cup(s) sweet potato cooked and mashed
1/2 cup(s) raisins
CINNAMON CREAM CHEESE FROSTING
2 ounce(s) cream cheese, low-fat
2 tablespoon(s) butter, softened
1 teaspoon(s) vanilla, extract
2+ tablespoon(s) fat free evaporated milk
2 cup(s) powdered sugar
1 teaspoon(s) cinnamon, ground

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 15"x10"x1" pan with shortening or cooking spray.
  • In large bowl, beat all bar ingredients except raisins with electric mixer on low speed for 30 seconds, scraping bowl frequently. Beat on medium speed for about 2 minutes, scraping bowl occasionally. Stir in raisins. Pour and spread into prepared pan.
  • Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 2 hours.
  • In medium bowl, beat cream cheese, softened butter, vanilla, cinnamon and 2 tablespoons milk with electric mixer until smooth. Gradually mix in powdered sugar on low speed till smooth. If to thick add more milk 1 teaspoon at a time to desired spreadable consistency. Spread over bars. Cut into 8 rows by 4 rows for 32 bars. Store covered in refrigerator. Enjoy!

Sweet potato biscuits can either go savory or sweet, depending on your mood. These biscuits definitely fall into the latter category, especially with the added glaze. Richly studded with cranberries and dried pineapple, the flavors will remind you of fall holidays and family gatherings.

1 4 cups King Arthur Self-Rising Flour
1 1 teaspoon allspice
1 12 tablespoons cold unsalted butter
1 2 cups cooked sweet potato, packed
1 1/4 cup cold milk
1 1 cup dried cranberries
1 1/2 cup dried pineapple, diced
1 4 tablespoons butter, softened (1/2 stick)
1 1 cup confectioners' sugar
1 1 to 2 tablespoons pineapple juice powder, to taste
1 1 to 2 tablespoons pineapple juice, milk or water
1 4 cups King Arthur Self-Rising Flour
1 1 teaspoon allspice

Steps:

  • Preheat the oven to 425F. Line two baking sheets with parchment paper and set aside. 2) In a large mixing bowl, whisk together the self-rising flour,allspice and dried fruits. Dice the cold butter into small cubes and work into the flour mixture until it resembles chunky granola, with some larger bits of butter still remaining. 3) Mix in the sweet potato and milk until you have a moist, cohesive dough. If the dough is on the drier side, add more milk until it is moist and slightly sticky. 4) Turn the dough out onto a very lightly floured surface and pat out to a 10" x 14" rectangle. Transfer the rectangle to one of your parchment-lined baking sheets and brush the dough with half of the softened butter. 5) Place the butter-topped dough into the freezer for 10 minutes. Remove and fold the dough in thirds, like a business letter. The cold layer of butter will help give flakiness to the final biscuits. 6) Repeat steps 4 and 5 once more. After you remove the dough from the freeze and fold, roll or pat the dough out to a rectangle once more and cut the dough into 8 bars, approximately 2" x 4" . You can also cut traditional round or square biscuits if desired. 7) Place the cut biscuits onto the two baking sheets and bake in the preheated oven for 20 to 25 minutes, or until the edges begin to brown slightly. 8) While the biscuits cool slightly, mix the glaze ingredients to a spreadable consistency. Brush over the warm biscuits and serve immediately. For a less sticky treat, you can cool the biscuits to room temperature before serving. 9) Yield: 8 biscuit bars
