- Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat., Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. Sprinkle with brown sugar. Place on a parchment-lined 15x10x1-in. baking pan., Bake until bacon is crisp and sweet potato is tender, 40-45 minutes. Serve with maple syrup.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
- Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.
- Combine the olive oil, melted butter, cinnamon and pepper, stirring until well mixed. Drizzle the mixture over the sweet potato bites. Sprinkle with sea salt. Loosely tent the toothpicks with damp paper towels and wrap the baking sheet with Reynolds Wrap® Aluminum Foil, being careful not to pierce the foil. Bake until the potatoes are just tender, about 20 minutes.
- Remove the foil and paper towels and return to the oven; bake until the bacon is crispy and the fat starts to render, 15-20 more minutes. Blot the excess fat with the paper towels, then serve.

- 1. Wash potatoes. Cut onion piece to wrap around each potato.
- 2. Wrap bacon to cover onion. Pierce with tooth piece to seal.
- 3. Roll in brown sugar. Bake 20-25 minutes.
- 4. Drizzle sweet chili sauce and fresh cilantro on top. Serve!
SWEET POTATO CHEESECAKE BITES WITH BACON CRUMBLE

- To cook sweet potato: Wash, peel and cut off woody portions and ends. Cut into quarters for microwave or cube to boil. To cook in microwave, place in casserole with 1/2 C. water. Microwave, covered, on 100% power (high) for 10-13 min. or until tender, stirring once. To boil, cook, covered in enough boiling salted water to cover for 25-30 min. or until tender. Preheat oven to 350 F. Grease 24 1 3/4-inch muffin cups; set aside. For bacon crumble, in a small bowl combine bacon, 1 T. of granulated sugar and ground red pepper; set aside. In medium bowl stir together flour, remaining 2 T. granulated sugar and ground pecans. Using a pastry blender, cut in 1/2 C. butter until pieces are pea size. Stir in egg yolk until combined. Shape dough into 24 balls. Press each ball evenly into bottoms and up sides of prepared muffin cups. Bake for 10 min. Meanwhile, for filling, in small bowl, mash sweet potato and milk with a potato masher or forks until smooth. Measure 1/4 c. sweet potato mixture, reserving any remaining sweet potato mixture for another use. In medium mixing bowl, beat 1/4 C. sweet potato mixture, 1/4 C. butter, cream cheese and brown sugar with an electric mixer on medium speed until light and fluffy. Beat in egg and pumpkin pie spice just until combined, scraping sides of bowl occasionally. Spoon filling evenly into partially-baked crusts. sprinkle with bacon-crumble mixture. Bake about 15 min. more or until filling is set. Cool in pan on wire rack for 5 min. Run a thin knife or thin metal spatula around edge of each cheesecake bite. Carefully transfer to wire rack and let cool. Cover and chill before serving. If desired, sprinkle with fresh chives. To store: Place cooled cheesecake bites in a single layer in an airtight container; cover. Refrigerate for up to 2 days or freeze for up to 1 month. Thaw, if frozen.
SWEET POTATO BACON BITES
I thought I had a great idea, apparently I did, others have done this before me! I love sweet and savory flavors with my sweet potatoes, so that's the path I took. You could also add some heat to kick it up. These would be even more delicious cooked on the grill or smoker.

- 1. I used potatoes that were about 2" in diameter. Peel potatoes, cut very end off. Slice the same width as the bacon. Place in a mixing bowl and drizzle with enough olive oil to completely coat potatoes. In a small bowl add dry ingredients. Give a little taste and adjust seasonings to your taste. Mix together well. Pour into bowl with oiled potatoes and toss. Using your hands be sure potatoes are well seasoned.
- 2. Use 1/2 slice of bacon for each potato. Wrap around the potato and secure with a toothpick. Once all are wrapped, roll the bacon in the leftover rub to coat.
- 3. Place on a non stick surfaced pan, these will caramelize on the bottom and tend to stick. Bake at 350 for 35-45 min. until potatoes are tender and bacon is browned. Remove immediately. Sprinkle coarse sea salt on them as soon as you remove them from pan.

Pre heat oven to 400° Wrap each sweet potato with half a slice of bacon and secure with tooth pick Place on lined cookie sheet (rimmed) drizzle with olive oil and season to your taste with Chili powder. Bake for 10 minutes and turn over and sprinkle other side with chili powder if you chose (optional) Bake other side for another 10 minutes.. Drain on Paper towels. ENJOY!!!!!!!!
